  • 100 g plain yogurt (full-fat preferred)
  • 1 tbsp (15 ml) vegetable oil
  • 1 tbsp (14 g) unsalted butter
  • 80 g yellow onion, finely chopped (about 1 small)
  • 3 cloves garlic, minced (about 9 g)
  • 10 g fresh ginger, minced (about 1 inch)
  • 200 g canned crushed tomatoes (passata)
  • 30 g raw cashews
  • 60 ml water (for cashew paste)
  • 1 tsp (2 g) ground coriander

Instructions

Add chicken pieces and toss to coat. Let sit 10 minutes while you start other items; this is a short marinade only.
  2. Meanwhile, (as marinade rests) place 30 g cashews and 60 ml water in blender; blend to a smooth paste. Set aside.
  3. After 10 minutes (approx 4:40 PM): heat 1 tbsp vegetable oil in the 12" skillet over medium-high (stovetop setting 6–7 of 9). When oil shimmers, add marinated chicken in a single layer (work in two batches if crowded) and sear 2–3 minutes per side until browned but not fully cooked. Transfer seared pieces to a plate. (Searing total time 6–8 minutes depending on batches.)
  4. Reduce heat to medium (5/9). Add 1 tbsp butter to the skillet; when melted add 80 g chopped onion and sauté 4–5 minutes until softened and beginning to color. Add 3 cloves minced garlic and 10 g minced ginger; sauté 45 seconds until aromatic.
  5. Stir in 200 g crushed tomatoes, remaining 1/2 tsp salt, remaining 1/2 tsp ground coriander, 1 tsp garam masala, and 1/2 tsp ground cumin. Cook, stirring, 3 minutes.
  6. Stir in cashew paste and 15 ml lemon juice; add 60 ml water if needed to reach a loose sauce. Return chicken pieces and any accumulated juices to the pan. Bring to a gentle simmer, cover, and cook 8–10 minutes until chicken registers 74°C / 165°F and sauce is glossy. Uncover and simmer 1 minute to adjust thickness if necessary.
  7. Taste (base is mild). Garnish with 2 tbsp chopped cilantro. Keep the pan covered and warm; finish plate assembly so that last step lands at or within minutes of 5:00 PM.

Masoor Dal with Mild Tadka

Equipment

Ingredients

  • 150 g masoor dal (red split lentils)
  • 700 ml cold water
  • 1/2 tsp (1 g) turmeric
  • 1 tsp (5 g) fine salt
  • 1 tbsp (15 ml) neutral oil or ghee
  • 1 tsp (3 g) cumin seeds
  • 2 cloves garlic, thinly sliced (6 g)
  • 1 small dried red chile (optional — omit for mild) — omitted in base
  • 1 tbsp (8 g) cilantro, chopped for finish

Practical substitutions

  • Masoor dal → 150 g moong dal (split mung) cooked similarly; adjust water by −50 ml.

Cooking / Baking

Instructions

  1. (4:15 PM) Rinse 150 g dal under cold water in a strainer until water runs clear. Drain.
  2. In the saucepan combine rinsed dal, 700 ml cold water, 1/2 tsp turmeric, and 1/2 tsp salt. Bring to a boil over high heat, skim any foam, then reduce heat to low and simmer uncovered 25–28 minutes, stirring every 5 minutes, until lentils are soft and breaking down but not gluey. Add small splashes of water if needed to maintain a loose, spoonable consistency.
  3. Taste and add remaining 1/2 tsp salt if needed.
  4. In the small frying pan, heat 1 tbsp oil or ghee over medium heat. Add 1 tsp cumin seeds; when they sputter (10–15 seconds) add sliced garlic and sauté 30–45 seconds until golden (watch carefully to avoid burning). Remove from heat.
  5. Pour tadka (oil + spices + garlic) over the cooked dal and stir. Add 1 tbsp chopped cilantro. Keep covered and warm. Dal may sit briefly but should not be left more than ~15 minutes before serving.

Jeera (Cumin) Basmati Rice

Equipment

Ingredients

  • 200 g basmati rice (1 cup)
  • 360 ml cold water (1.8 cups)
  • 1 tbsp (12 ml) ghee or neutral oil

Practical substitutions

  • Basmati → long-grain jasmine if basmati unavailable; aroma changes but method identical.

Cooking / Baking

Instructions

  1. (4:30 PM) Place rice in a fine-mesh strainer and rinse under cold water until water runs clear. Drain 1–2 minutes.
  2. In the saucepan heat 1 tbsp ghee/oil over medium. Add 1 tsp cumin seeds and toast 20–30 seconds until fragrant.
  3. Add rinsed rice, 360 ml cold water, and 1/2 tsp salt. Bring to a rapid simmer uncovered over medium-high. Once boiling, reduce heat to low, cover tightly, and cook 12 minutes undisturbed.
  4. Remove from heat; keep covered and let rest 5 minutes. Fluff with fork just before serving. Aim to have rice hot and fluffed at 5:00 PM.

Besan Chilla (Savory Chickpea-Flour Pancakes) — gluten-free flatbread

Instructions

  2. Heat the 8" nonstick skillet over medium (5/9) and add 1 tsp oil to coat. For each chilla pour ~80–90 ml batter and spread gently with the back of a spoon into a 15–18 cm pancake. Cook 2–3 minutes until edges set and underside golden; drizzle 1/2 tsp oil round the pancake and flip. Cook 1–2 minutes more until cooked through. Cook 3–4 pancakes total (two per person) depending on batter yield; total cooking time about 10–12 minutes.

Mango Lassi (kid-friendly drink) — makes 2 servings

3. LINEAR TIMELINE (4:15 PM–5:00 PM)

  • 4:15 PM: Masoor Dal — rinse 150 g dal; combine with 700 ml cold water, 1/2 tsp turmeric, and 1/2 tsp salt in saucepan and bring to a boil.
  • 4:20 PM: Masoor Dal — reduce to low and simmer uncovered; set a timer for 25–28 minutes; stir now and then.
  • 4:25 PM: Chicken Tikka — mix 100 g yogurt, 1/2 tsp salt, 1/2 tsp ground coriander, 1/4 tsp smoked paprika, and 1/4 tsp black pepper in bowl; add 500 g chicken pieces and coat; let marinade rest (10 minutes).
  • 4:30 PM: Jeera Rice — rinse 200 g basmati rice until water runs clear; drain.
  • 4:32 PM: Jeera Rice — heat 1 tbsp ghee in saucepan, toast 1 tsp cumin 20–30 sec, add rice, 360 ml water and 1/2 tsp salt; bring to a simmer, then cover and cook 12 minutes undisturbed.
  • 4:34 PM: Chicken Tikka — place cashews 30 g + 60 ml water into blender and purée to a smooth paste; set aside.
  • 4:40 PM: Chicken Tikka — heat 1 tbsp vegetable oil in 12" skillet over medium-high; sear marinated chicken in a single layer 2–3 min per side until browned (work in two quick batches if necessary). Transfer seared chicken to plate.
  • 4:45 PM: Besan Chilla — whisk 100 g besan with 240 ml water, 1/2 tsp salt, 1/2 tsp turmeric; stir in 40 g thin onion slices and 1 tbsp cilantro.
  • 4:45 PM: Masoor Dal — check simmer; add remaining 1/2 tsp salt if needed.

  • 4:52 PM: Masoor Dal — prepare tadka: heat 1 tbsp oil in small pan, add 1 tsp cumin seeds then sliced garlic and brown 30–45 sec; pour hot tadka over dal, stir in 1 tbsp cilantro; keep covered and warm.
  • 4:52 PM: Chicken Tikka — stir in cashew paste and 15 ml lemon juice, return seared chicken and juices to pan, bring to gentle simmer, cover and cook 8–10 minutes.
  • 4:53 PM: Besan Chilla — heat 8" nonstick skillet over medium, add 1 tsp oil; pour first pancake and cook first side 2–3 minutes.
  • 4:55 PM: Jeera Rice — fluff rice with fork, keep covered and warm.
  • 4:55 PM: Besan Chilla — flip pancakes as they brown; cook remaining pancakes (total ~10–12 minutes cooking time across pancakes).
  • 4:58 PM: Chicken Tikka — uncover, simmer 1 minute to adjust thickness; check internal temp of pieces 74°C / 165°F with instant-read thermometer. Keep pan covered and hot.
  • 4:58 PM: Final plating — spoon dal into small bowl, spoon rice into serving dish, place chillas on a warmed plate, ladle chicken curry into a shallow serving bowl, garnish chicken with 2 tbsp chopped cilantro.
  • 5:00 PM: Serve — place Mango Lassis and chilled Riesling on table and serve all hot dishes promptly.

  • Timeline risks: the tightest window is 4:45–5:00 PM when finishing the chicken sauce, cooking the chillas, and finishing rice occur concurrently. This is risky because searing/sauce adjustments, rice fluffing, and pancakes all demand attention in the last 15 minutes.
  • Mitigation mindset: prioritize stovetop order — when sauce is simmering, use pockets of low-simmer time (cover on) to run quick chilla flips; preheat and assemble all batter and tools before 4:45 so pancakes cook without setup delay. Keep a clean towel and an empty plate nearby to hold cooked chillas while you flip; monitor chicken internal temp early so you can pull it as soon as it reaches 74°C.
