Instructions

  1. Chill & slice beef: If not already cold, refrigerate steak 20–30 minutes to firm. Slice thinly across the grain into 3–4 mm strips. Pat strips dry with paper towels and place in mixing bowl.

3. LINEAR TIMELINE (15:40–17:00)

  • 15:40: Start — clear workspace, gather all equipment and ingredients for all dishes; position wok, saucepan, skillet, bowls and measuring tools.
  • 15:42: (Rice) Rinse 300 g jasmine rice in fine-mesh sieve until water runs clear; leave drained in sieve near saucepan.
  • 15:44: (Produce prep) Wash and trim 600 g gai lan; peel thick stem skin if needed.
