Instructions

3. LINEAR TIMELINE (15:25–17:00)

  • 15:25: Pimentos Assados — Preheat broiler to high; place 3 whole red bell peppers on a foil-lined baking tray and put under the broiler.
  • 15:30: Pimentos Assados — Rotate peppers with tongs every 4–5 minutes so skins blacken evenly (continue broiling until fully blackened, ~15–20 min total).
  • 15:35: Cataplana — Put a large bowl of cold water on bench; inspect clams and mussels, discard any broken shells; start scrubbing mussels and remove beards; place shellfish in bowl of cold water to purge grit. (work while peppers broil)
