Instructions

  2. 16:42 — Heat the 24 cm sauté pan over medium-high heat; add 30 ml oil.
  3. When oil shimmers, add sliced onion and sauté 5–6 minutes until soft and beginning to brown, stirring occasionally.
  4. Add minced garlic and grated ginger, sauté 1 minute until fragrant (do not burn).
  5. Add ground coriander, ground cumin, turmeric and Kashmiri chili powder; stir 30 seconds to bloom spices in the oil.
  6. Add chopped tomatoes and curry leaves; cook 3–4 minutes until tomatoes break down.

Tadka Masoor Dal (Red Lentil Dal)

  • Water: 900 ml (for cooking lentils)

  6. When lentils are soft (around 16:50 according to timeline), keep covered at very low heat. At 16:55 (close to serve), do final tempering: heat small frying pan over medium heat, add ghee 15 g; when hot, add mustard seeds 1/2 tsp and cumin seeds 1 tsp and let them sputter (~20 seconds), then immediately pour the sizzling tadka over the dal, stir, and finish with 5 g chopped cilantro. Final tadka step takes ~1–2 minutes; serve hot at 16:58–17:00.

Jeera (Cumin) Basmati Rice

3. LINEAR TIMELINE (16:00–17:00)

  • 16:00: ALL — Bring all equipment forward, set three empty bowls, fill sink with warm water; put prawn package briefly in cold water to keep chilled while you prep.
  • 16:00: PREP — Rinse basmati rice in a sieve until water runs clear and set to drain (300 g). Rinse and drain 300 g masoor dal and set aside.
  • 16:00: PREP — Chop and weigh ingredients: slice 200 g onion (for curry), chop 150 g onion (for dal), mince garlic (7 cloves total ≈21 g), grate 20 g ginger, chop 250 g cucumber, 300 g tomatoes (leave kachumber pieces refrigerated), chop 100 g tomato (for dal) separately; measure spices and coconut milk.

  • 16:35: CURRY PREP — Make tamarind solution (5 g tamarind paste + 1 tbsp warm water) in small bowl; measure coconut milk 400 ml and spices in one small bowl; keep prawns chilled until 16:42.
  • 16:40: DAL — Check dal texture; if it looks thick and lentils are soft, reduce heat to lowest and keep covered; leave to simmer gently (you will do final tadka at 16:55).
  • 16:42: GOAN PRAWN CURRY — Start finish-to-order cook: heat 24 cm pan over medium-high, add 30 ml oil.
  • 16:43: GOAN PRAWN CURRY — Add 200 g sliced onion; sauté 5–6 minutes until soft and starting to brown.
  • 16:49: GOAN PRAWN CURRY — Add 4 cloves minced garlic and 20 g grated ginger; cook 1 minute; add ground spices (4 g coriander, 2 g cumin, 1.5 g turmeric, 2.5 g chili) and stir 30 seconds.
  • 16:50: RICE — Turn off rice, keep covered and allow to steam 2 minutes; fluff at 16:48–16:49 and tent to keep warm (rice finishes at 16:48; will be 12 minutes before serve — within allowed hold time).
  • 16:51: GOAN PRAWN CURRY — Add 250 g chopped tomato and curry leaves; cook 3–4 minutes until tomatoes soften.
  • 16:54: KAChumber ASSEMBLY (final prep) — Take pre-chopped cucumber, tomatoes and onion; keep chilled and ready to dress at 16:54–16:58 (do not dress earlier).
  • 16:55: DAL — Final tempering (tadka): heat small frying pan; add 15 g ghee, 1 g mustard seeds and 2 g cumin seeds; when they sputter (20–30 sec) pour over dal, stir, finish with 5 g cilantro. Dal finalizes at 16:56–16:58.
  • 16:56: NAAN — Preheat heavy skillet to medium-high for warming naan; begin warming naan one at a time 16:56–17:00, each naan ~1.5–2 minutes per side; brush with 15 g butter/ghee and keep covered on warm plate.
  • 16:57: GOAN PRAWN CURRY — Stir in coconut milk 400 ml, tamarind solution 5 g, sugar 2 g, and 7.5 g salt; bring to gentle simmer.
