Levant Family Supper

Grilled Lamb Kofta with Pomegranate Glaze & Tahini Drizzle

Equipment

  • Large mixing bowl
  • Box grater (or fine grater) for onion
  • Measuring spoons and cups
  • 12" cast-iron or heavy nonstick grill pan (or outdoor grill)
  • Instant-read thermometer
  • 12 metal skewers or 12 wooden skewers (if wooden, soak 20 minutes)
  • Small saucepan (1‑qt)
  • Small bowl and whisk
  • Tray for shaped kofta

Ingredients

  • Ground lamb: 2 lb
  • Yellow onion, grated and liquid squeezed out: 1 small (about 4 oz)
  • Large egg: 1
  • Baharat spice blend: 2 tsp
  • Ground cumin: 1½ tsp
  • Ground coriander: 1 tsp
  • Kosher salt: 2 tsp (for meat mixture) + ½ tsp (for tahini drizzle) — total 2½ tsp
  • Freshly ground black pepper: ½ tsp
  • Pomegranate molasses: 3 tbsp (1 tbsp folded into meat, 2 tbsp for glaze)
  • Olive oil: 1 tbsp (for oiling grill pan)
  • Tahini: ½ cup
  • Cold water: 3 tbsp (to thin tahini)
  • Garlic, minced: 1 clove (for tahini drizzle)
  • Lemon juice: 1 tbsp (optional; use if you like a touch of brightness)

Practical substitutions:

  • Baharat unavailable → 2 tsp ground allspice + 1 tsp ground cinnamon + ¼ tsp ground cardamom (use as 1:1).
  • Pomegranate molasses unavailable → simmer 2 tbsp pomegranate juice + 2 tbsp balsamic vinegar until reduced by half and syrupy; use 2 tbsp for glaze and 1 tbsp folded into meat.
  • Tahini unavailable → plain unsweetened sunflower seed butter, same quantity.

Cooking / Baking

  • Total cook time: 35 minutes active (mix 10 min, shape 10–15 min, grill 10–12 min). Final grilling is finish-to-order and must land at serve time.

Instructions

  1. Combine mix (15 minutes): In a large bowl add 2 lb ground lamb, grated onion (squeeze out excess liquid), 1 large egg, 2 tsp baharat, 1½ tsp ground cumin, 1 tsp ground coriander, 2 tsp kosher salt (reserve ½ tsp for tahini separate), ½ tsp black pepper and 1 tbsp pomegranate molasses. Mix gently with clean hands until just combined, about 1–2 minutes; do not overwork.
  2. Shape (10–12 minutes): Divide into 12 equal portions (~3 oz each). Press each portion firmly onto a skewer or shape into tight 3½–4" logs on a tray. Keep at room temperature up to 30 minutes while other items cook; do not chill until shaped.
  3. Warm glaze (2 minutes during grilling): Place remaining 2 tbsp pomegranate molasses in small saucepan over very low heat, stir until slightly fluid; keep warm (do not burn).
  4. Preheat grill pan (2–3 minutes before grilling): Heat 12" grill pan over medium-high until very hot; brush pan with 1 tbsp olive oil.
  5. Grill (10–12 minutes finishing at serve): Arrange skewers on hot pan (or grill). Cook 3–4 minutes per side, rotating every 3–4 minutes to brown evenly — total 10–12 minutes. In the final 2 minutes brush with warmed pomegranate glaze.
  6. Temperature and rest: Cook to 160°F internal temperature. Remove from heat and rest 1–2 minutes.
  7. Tahini drizzle (while kofta grills, 3 minutes): Whisk ½ cup tahini, 3 tbsp cold water, 1 minced garlic clove, ½ tsp kosher salt and 1 tbsp lemon juice (optional) in a small bowl until pourable; add tiny extra water if needed.
  8. Serve: Arrange kofta on platter, brush any extra glaze, and drizzle tahini over some skewers right before serving.

Mujaddara (Lentils, Rice, Caramelized Onions)

Equipment

  • 12" skillet or sauté pan for onions
  • 3‑quart saucepan with lid (for lentils + rice)
  • Fine mesh sieve
  • Wooden spoon
  • Measuring cups and spoons
  • Small bowl for reserved onions

Ingredients

  • Brown or green lentils, rinsed: 1½ cups
  • Long-grain white rice (basmati preferred), rinsed: 2 cups
  • Yellow onions, thinly sliced: 3 large (about 24 oz)
  • Olive oil: 3 tbsp
  • Kosher salt: 1½ tsp
  • Ground cumin: 1 tsp
  • Ground cinnamon: ½ tsp
  • Water: 9 cups (6 cups for lentils + 3 cups for final rice step)

Practical substitutions:

  • Use jasmine rice if basmati unavailable (same quantity).
  • If you want more jammy onions, increase olive oil by 1 tbsp.

Cooking / Baking

  • Total cook time: 48 minutes (onion caramelization 25–30 min overlapping with lentil and rice cooking).

Instructions

  1. Caramelize onions (start): Heat 3 tbsp olive oil in 12" skillet over medium-low. Add sliced onions and ½ tsp kosher salt. Cook, stirring every 3–4 minutes, until deep golden and jammy, 25–30 minutes. Midway remove 1 cup of the caramelized onions to a small bowl to reserve for garnish; leave remaining onions in pan.
  2. Cook lentils (concurrent): In 3‑qt saucepan combine 1½ cups rinsed lentils and 6 cups water. Bring to a simmer over medium-high, then reduce heat to maintain gentle simmer and cook uncovered 18–22 minutes until just tender but not mushy. Drain any large excess water leaving about ½ cup of cooking liquid in the pot if necessary.
  3. Combine rice and lentils: When lentils are just tender, add 2 cups rinsed rice, 3 cups water, 1 tsp ground cumin, ½ tsp ground cinnamon and 1 tsp kosher salt to the lentils pot. Bring to a boil, cover, reduce to low and cook 15–18 minutes until rice is tender and liquid absorbed.
  4. Rest and finish: Remove from heat, let stand covered 5 minutes. Fluff rice and lentils with fork, fold in remaining caramelized onions (reserve some for garnish). Transfer to serving bowl and top with reserved onions.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: extra pomegranate molasses, extra tahini, crushed red pepper or Aleppo flakes for adults who want more heat.
  • Global substitution note: If pomegranate molasses is unavailable, reduce 2 tbsp pomegranate juice + 2 tbsp balsamic vinegar until syrupy (use as 1:1).
  • Child-safety: Wooden skewers are sharp — use metal skewers or remove logs from skewers before serving to children. Keep hot pans and grill pan out of child reach while finishing.
  • Timeline risks: The tightest execution window is the final 20 minutes (4:40–5:00 PM) when baba ganoush processing, mujaddara finish/rest, kofta shaping and grilling, and warming pita overlap. The single biggest risk is delaying start of kofta grilling: kofta is finish-to-order and must begin on schedule or the service will be late.
  • Mitigation mindset: Prepare mise en place before 4:40 (skewers, thermometer, glaze warmed in small saucepan). If time slips, prioritize starting kofta grilling on time; mujaddara can stand covered for an extra 3–5 minutes without damage, but avoid more than that. Keep oven schedule tight — eggplants and carrots share oven; follow listed times exactly.
  • Latest safe start time: You can start as late as 3:55 PM for a 5:00 PM serve.
