Instructions

  1. (Mix) In the large bowl, combine ground beef, grated onion (squeeze out excess liquid), minced garlic, chopped parsley, baharat, cumin, salt and pepper. Mix gently with your hands until evenly combined; do not overwork.
  2. (Shape) Divide mixture into 8 equal portions (about 85 g each). With damp hands, form each portion around a skewer into a long sausage shape, about 5–6" long and 1" thick. Place on a plate.
  3. (Rest briefly) If mixture feels warm, place assembled skewers in the fridge uncovered for 5–10 minutes to firm; otherwise proceed.
  4. (Heat pan) Heat the grill pan over medium-high heat until smoking very lightly (about 3–5 minutes).
  5. (Cook) Brush pan lightly with 1 tsp olive oil. Place kofta skewers across the pan (do not crowd; cook in batches if necessary). Cook 4–5 minutes per side, turning to get even char and cook through. Aim for final internal temp 160°F (71°C).
  6. (Finish) Transfer cooked skewers to a plate and tent loosely — do not let them sit more than a few minutes. Serve immediately with yogurt–tahini sauce.

Yogurt–Tahini Sauce

  • Tahini⁺, 2 tbsp (30 ml)
  • Garlic, 1 clove, minced

  • Water, 1–2 tbsp to adjust consistency
  • Kosher salt⁺, 1/2 tsp (3 g)

Instructions

Instructions

  1. (Toast pine nuts) Heat the small skillet over medium; add pine nuts and toast, stirring, 2–4 minutes until light golden. Transfer to a small bowl.
  2. (Sauté onion) In the saucepan, heat 2 tbsp olive oil over medium heat. Add chopped onion and sauté 4–5 minutes until translucent.
  3. Add bulgur to the pan and stir 1 minute to coat. Add stock, raisins, cinnamon and salt; bring to a boil.
  4. Cover, reduce to a simmer, and cook 12–15 minutes until liquid is absorbed and bulgur is tender.
  5. Remove from heat and let sit covered 5 minutes. Fluff with fork and stir in toasted pine nuts. Keep covered and hold at warm room temperature; this dish holds well for service.

Baba Ganoush (Charred Eggplant Salad)

  • Tahini⁺, 3 tbsp (45 ml)

  • Lemon⁺, 1 tbsp juice (from about 1 small lemon)
  • Kosher salt⁺, 1 tsp (6 g)
  • Smoked paprika, 1/2 tsp (for garnish)

  • If a broiler isn’t strong, roast eggplants at 450°F (230°C) for 30–40 minutes until very soft.

Instructions

  1. Preheat the oven broiler on high and position rack 6–8" from the element. Line the rimmed baking sheet with foil.
  2. Prick eggplants several times with a knife and place on the sheet. Broil, turning every 8–10 minutes, until the skin is very blackened and the flesh is soft when pressed, about 25–30 minutes total.
  3. Remove from broiler and let cool 10 minutes until safe to handle.
  4. Peel and scoop the flesh into a bowl. Discard the skins and excess liquid.
  5. Add tahini, minced garlic, olive oil, lemon juice and salt. Mash with a fork or use a hand blender to reach a slightly chunky but spreadable texture. Adjust salt if needed.
  6. Transfer to a serving dish, drizzle with 1 tsp olive oil, sprinkle smoked paprika and chopped parsley. Can be made up to 1 hour ahead and held at room temperature.

Fattoush Salad (finish-to-order)

  3. (Finish-to-order) 3–5 minutes before serving: add toasted pita chips to the bowl, pour dressing over salad, toss vigorously to coat and serve immediately.

3. LINEAR TIMELINE (3:20 PM–5:00 PM)

  • 3:20 PM: Baba Ganoush — Preheat broiler to high and arrange 2 large eggplants on a foil-lined rimmed sheet; pierce skins and place under broiler to char.
  • 3:25 PM: Bulgur Pilaf — Start toasting pine nuts in small skillet (2–4 minutes); transfer to a bowl, then heat 2 tbsp olive oil in saucepan and begin sautéing 1 medium chopped onion.
  • 3:30 PM: Bulgur Pilaf — Add bulgur to saucepan, stir 1 minute, add 3 cups stock, raisins, 1 tsp salt and cinnamon; bring to a boil.
  • 3:35 PM: Bulgur Pilaf — Reduce to simmer, cover and cook bulgur 12–15 minutes.
  • 3:45 PM: Baba Ganoush — Turn eggplants, return to broiler and continue charring (broil total ~25–30 minutes, turning every 8–10 minutes).
  • 3:50 PM: Bulgur Pilaf — Remove pan from heat; keep covered and let bulgur rest 5 minutes; fluff and stir in toasted pine nuts; cover and hold.
  • 3:50 PM: Baba Ganoush — Remove eggplants from broiler; set aside to cool 10 minutes on the counter.
  • 4:00 PM: Baba Ganoush — Peel and scoop eggplant flesh into bowl; mix in 3 tbsp tahini, 1 clove garlic, 2 tbsp olive oil, 1 tbsp lemon juice and 1 tsp salt; mash to chunky-smooth and transfer to server; garnish later. Hold at room temp.
  • 4:05 PM: Yogurt–Tahini Sauce — Whisk 1 cup Greek yogurt, 2 tbsp tahini, 1 clove garlic, 1 tbsp olive oil, 1/2 tsp salt and 1/4 tsp cumin; chill briefly.
  • 4:05 PM: Salad Prep — Begin chopping lettuce, tomatoes, cucumber, radishes, green onions and mint and place in a large bowl in the fridge; make the salad dressing (olive oil + red wine vinegar + sumac + salt) in a jar and leave aside.
  • 4:15 PM: Kofta — Start mixing 1.5 lb ground beef with grated onion (squeezed dry), 2 minced garlic cloves, 1/2 cup chopped parsley, baharat, cumin, 1½ tsp salt and 1/2 tsp pepper; mix gently.
  • 4:20 PM: Kofta — Form mixture into 8 evenly sized logs on skewers (about 85–95 g each). Place on a plate; refrigerate uncovered 5–10 minutes if mixture warmed.
  • 4:35 PM: Oven / Pan Prep — Preheat oven to 400°F for pita warming; also preheat grill pan on medium-high for initial heat-up (allow 3–5 minutes).
  • 4:40 PM: Final checks — Remove bulgur from holding; set covered near plating area. Bring baba ganoush and yogurt sauce to serving bowls, add final parsley and smoked paprika to baba ganoush.
  • 4:45 PM: Warm Pita — Place 6 pita rounds in oven for 4–6 minutes until softened and slightly puffed; remove and wrap in towel.
  • 4:48 PM: Kofta — Brush hot grill pan with 1 tsp oil and place kofta skewers on pan; grill 4–5 minutes per side for a total 8–10 minutes, aiming for internal temp 160°F (71°C).

  • Global substitutions: if fine bulgur is unavailable at your local grocery, use fine couscous (see substitution note in Bulgur recipe). If baharat is unavailable, use the listed allspice + cumin mix.
  • Child-safety notes: broiler and grill pan are hot—keep children away from stove and oven while charring and grilling. Handle skewers carefully (metal skewers retain heat).
  • Timeline risk(s): the tightest execution window is 4:40–5:00 PM when kofta grilling, warming pita, and the salad final toss overlap. This window is risky because multiple short, finish-to-order tasks must be completed in quick succession.
  • Mitigation mindset: have all vegetables pre-chopped and dressing made before 4:15; have skewers ready and grill pan heated during the 4:35–4:48 window; designate the serving platter near the stove for immediate transfer. Work steadily: when a dish is simmering (bulgur), use that time to shape kofta and prep salads.
