  • 3:55 PM: Tahini sauce for fish — In small bowl whisk 3 Tbsp tahini, 3 Tbsp warm water, 1/2 tsp minced garlic, 1 Tbsp lemon juice, 1/4 tsp cumin, 1 tsp pomegranate molasses and 1/4 tsp salt; set aside at room temp.
  • 4:05 PM: Baba Ganoush — Eggplants should be finishing roasting now; remove from oven to cool 5 minutes on counter.
  • 4:08 PM: Baba Ganoush — Cut, scoop flesh into a sieve to drain 2–3 minutes; then mash with 3 Tbsp tahini, 1 minced garlic clove, 1 Tbsp lemon, 2 Tbsp olive oil and 1 tsp kosher salt; transfer to serving bowl, drizzle 1 Tbsp olive oil and sprinkle smoked paprika and parsley.
