Cooking / Baking

Instructions

  1. Pat fish dry with paper towels; season both sides with 1 teaspoon kosher salt and 3/4 teaspoon black pepper.
  2. Make the lemon-tahini sauce: in a small saucepan or bowl combine 1/3 cup tahini, 3 tablespoons lemon juice, 3 tablespoons water and 1 tablespoon olive oil (from the 3 Tbsp listed). Whisk until smooth. If too thick, add water 1 teaspoon at a time until pourable but still creamy. Set nearby.
  3. Heat a 12-inch skillet over medium-high heat until hot (about 2 minutes). Add 2 tablespoons olive oil and heat until shimmering.
  4. Add the cod fillets spaced apart. Sear without moving 3–4 minutes until the bottom is golden. Flip gently and sear 3–4 minutes more. For pieces about 1-inch thick, total sear 6–8 minutes. Check internal temp with thermometer: 145°F is target; remove at 140–145°F for firm, flaky fish.
  5. Remove fillets to a warm plate and tent loosely with foil. Add 1 tablespoon butter to the skillet and swirl to melt, scraping any browned bits; spoon this butter over the fish.

Cucumber & Pomegranate Salad with Mint (finish-to-order)

3. LINEAR TIMELINE (4:10 PM–5:00 PM)

  • 4:10 PM: (Roasted Cumin & Honey Carrots) Preheat oven to 400°F. Peel and cut 1.5 lb carrots; toss with 2 Tbsp olive oil, 1 tsp ground cumin, 1 Tbsp honey, 3/4 tsp kosher salt and 1/2 tsp black pepper; spread on sheet pan and place in oven to roast (22–28 minutes).
  • 4:15 PM: (Bulgur Pilaf) Start bulgur: heat 2 Tbsp olive oil in 2-qt saucepan, cook 1 medium chopped onion 4–5 minutes; add 1 1/4 cups bulgur and 1 tsp cumin, stir 1 minute; add 2 1/2 cups chicken broth and 1 tsp kosher salt, bring to boil then reduce and simmer covered.
  • 4:18 PM: (Drink) In pitcher dissolve 1/3 cup sugar in 1 cup lemon juice; add 4 cups cold water and 8 mint sprigs; chill in fridge (needs ~30 minutes).
  • 4:20 PM: (Optional Quick Herbed Yogurt) Mix 1 cup yogurt, 1 Tbsp olive oil, 1 tsp lemon juice, 1 Tbsp chopped mint and 1/4 tsp salt; cover and refrigerate until service (optional).
  • 4:25 PM: (Bulgur Pilaf) Check bulgur; simmer until liquid absorbed (target finish ~4:45). Toast 3 Tbsp pine nuts in an 8" skillet 2–3 minutes and set aside.

  • 4:40 PM: (Pan-Seared Cod) Begin final fish prep: pat 1.5 lb cod dry, season; make lemon-tahini sauce quickly by whisking 1/3 cup tahini, 3 Tbsp lemon juice, 3 Tbsp water and 1 Tbsp olive oil until smooth; heat 12" skillet over medium-high and add 2 Tbsp olive oil to shimmer.
  • 4:42 PM: (Pan-Seared Cod) Sear cod in hot skillet 3–4 minutes without moving; flip and cook 3–4 minutes more. Monitor internal temp; target 145°F.
  • 4:45 PM: (Bulgur Pilaf) Bulgur should be finished. Fluff with fork, stir in 1 tsp lemon zest, 2 Tbsp chopped parsley and toasted pine nuts; cover and keep warm.
  • 4:45 PM: (Roasted Carrots) Remove carrots from oven, toss with 1 Tbsp lemon juice and 2 Tbsp parsley; tent and keep warm (do not let sit more than ~15 minutes before service).
  • 4:50 PM: (Pan-Seared Cod) Remove fish to warm plate and tent; spoon pan butter and finish plating prep (have sauce and garnishes ready).
  • 4:52 PM: (Cucumber Salad — final prep) Finish chopping cucumber if not already done; have pomegranate seeds and chopped mint measured and ready but do NOT dress yet.
  • 4:53 PM: (Pita) Warm pitas in oven at 350°F wrapped in foil for 6 minutes or warm in skillet (1 minute per side).
  • 4:55 PM: (Cucumber & Pomegranate Salad) Whisk dressing (2 Tbsp lemon juice + 2 Tbsp olive oil + 1/2 tsp salt + 1/4 tsp pepper), dress salad, toss gently — serve immediately.
  • 4:56 PM: (Pan-Seared Cod) Reheat sauce briefly if needed (20 seconds) and plate: spoon sauce, place cod portions, scatter pomegranate seeds and parsley.

  • Global substitutions you may prefer: cod → haddock or pollock; pine nuts → slivered almonds; tahini → smooth peanut butter (nontraditional).
  • Child-safety notes: Keep skewers, jars, and small bowls of pomegranate seeds away from infants and very small children who may choke; supervise children while serving and cutting.
  • Timeline risk(s): The tightest execution window is 4:40–5:00 PM when the pan-seared cod, salad dressing, pita warming and final plating overlap. The fish must be seared and plated last and the salad must be dressed within minutes of service.
  • Practical mitigation mindset: Prep mise en place fully (measure, chop and have bowls ready), keep warm serving dishes near the stove/oven, and use the oven-warming option for pita so you can focus on the fish during the final 10 minutes.
