  • Sea bream fillets with skin, 5 fillets, about 6 oz (170 g) each — total 30 oz (850 g)
  • Extra-virgin olive oil 2 tbsp (30 ml) ⁺
  • Unsalted butter 75 g (5 tbsp)
  • Garlic 3 cloves, finely minced — 9 g ⁺

Instructions

  1. Pat fish fillets dry with paper towel; season both sides with 1 1/2 tsp kosher salt and 1/2 tsp black pepper. Let sit at room temperature while you prepare other components (no more than 20 minutes).
  2. Measure butter, capers, lemon juice and parsley into a small bowl and set near the stove.
  3. Heat the 12-inch skillet over medium-high until hot (about 2–3 minutes). Add 1 tbsp olive oil and swirl.

Instructions

  1. Heat the medium skillet over medium. Add pine nuts and toast, stirring constantly, 2–3 minutes until fragrant and light golden. Transfer to a small bowl to stop cooking.
