Pomegranate-Baharat Sunday Supper

A convivial Middle Eastern meal centered on tender braised lamb shoulder glazed with pomegranate and warm baharat, balanced by jeweled saffron rice, smoky eggplant dip, a crisp dressed cucumber-tomato salad finished at the last minute, warm pita and complementary drinks. Textures and temperatures are staged so finish-to-order items arrive just before the table and holdable components free the cook for the final push.

  • Name of the meal: Pomegranate-Baharat Sunday Supper
  • Cuisine type: Middle Eastern
  • Serve time: 5:00 PM

This meal pairs a gently spiced, fruit-forward braised lamb shoulder — rich, tender and lacquered with pomegranate — with complementary Middle Eastern accents: jeweled saffron rice to add sweet-tart nuts and barberries, smoky baba ganoush for creamy, cool contrast, a bright cucumber-tomato salad dressed at the table for freshness, warm pita for scooping, and two beverage choices tailored to adults and children. The menu is arranged so long, low braising frees hands for faster finish-to-order items and the children eat the same plates as adults with the shared spice level kept mild.

  • Braised Lamb Shoulder with Pomegranate and Baharat
  • Jeweled Saffron Rice Pilaf (rice with toasted almonds and barberries)
  • Smoky Eggplant Dip (Baba Ganoush)
  • Cucumber–Tomato Salad with Lemon and Sumac (finish-to-order)
  • Warm store-bought pita
  • Garlic Yogurt Sauce (for cooling/serving)
  • Pomegranate Lemonade — kid-friendly drink
  • Dry Rosé (Grenache or Cinsault-style) — adult beverage (2 bottles)

2. FULLY EXECUTABLE RECIPES

Braised Lamb Shoulder with Pomegranate and Baharat

Equipment

  • 6–8 quart heavy Dutch oven with lid (large enough for 4–5 lb lamb in one layer)
  • Tongs, wooden spoon, chef’s knife, cutting board
  • Instant-read thermometer
  • 9x13" rimmed baking sheet (for resting juices if needed)
  • Measuring cups and spoons

Ingredients

  • Bone-in lamb shoulder, cut into 6–8 large pieces — 4.5 lb total
  • Kosher salt — 2 1/2 teaspoons
  • Black pepper, ground — 1 teaspoon
  • Baharat spice blend — 2 tablespoons (see substitution below)
  • Olive oil — 3 tablespoons
  • Yellow onions, sliced — 2 large (about 12 oz total)
  • Garlic cloves, smashed — 6 cloves
  • Tomato paste — 2 tablespoons
  • Pomegranate molasses — 1/2 cup
  • Chicken stock or low-sodium beef stock — 3 cups
  • Diced canned tomatoes (14 oz can) — 1 can (14 oz / 400 g)
  • Honey — 1 tablespoon
  • Fresh lemon juice — 2 tablespoons
  • Bay leaves — 2
  • Whole allspice berries or ground allspice — 6 whole or 1/2 teaspoon ground
  • Ground cinnamon — 1/2 teaspoon

Practical substitutions:

  • Baharat blend: substitute 1 tsp ground cumin + 1 tsp ground coriander + 1/2 tsp ground black pepper + 1/2 tsp ground paprika + 1/4 tsp ground cloves if pre-mixed baharat is unavailable.
  • Pomegranate molasses: substitute 1/2 cup reduced pomegranate juice or 1/4 cup balsamic + 2 tablespoons honey if unavailable.

Cooking / Baking

  • Oven temperature: 325°F (160°C).
  • Braise internal target: lamb should be fork-tender; treat 195°F as guidance for fall-apart braise but rely on fork-tender test.

Total cook time

  • 1 hour 45 minutes (25 minutes active prep/sear + 1 hour 20 minutes covered braise)

Instructions

  1. Remove lamb from refrigerator 5 minutes before starting. Pat pieces dry with paper towels. Season lamb evenly with 2 tsp kosher salt, 1 tsp black pepper and 2 tbsp baharat; press seasoning into meat.
  2. Preheat oven to 325°F. Place Dutch oven on medium-high heat and add 3 tbsp olive oil.
  3. When oil shimmers, sear lamb pieces in two batches (do not crowd); sear 3–4 minutes per side until deeply browned. Use tongs to transfer seared pieces to a plate. (Total searing time ~12 minutes.)
  4. Reduce heat to medium. Add sliced onions to the Dutch oven and cook 4 minutes, stirring, until soft and starting to brown. Add smashed garlic and cook 30 seconds.
  5. Stir in 2 tbsp tomato paste and cook 1 minute. Add pomegranate molasses, 3 cups stock, 14 oz diced tomatoes (with juices), 1 tbsp honey, 2 tbsp lemon juice, 2 bay leaves, 6 whole allspice berries (or 1/2 tsp ground), and 1/2 tsp ground cinnamon. Bring to a gentle simmer, scraping up browned bits.
  6. Return lamb pieces to the pot so they sit in the liquid (meat should be partly submerged). Bring liquid to a gentle simmer on the stove top (2–3 minutes).
  7. Cover Dutch oven and transfer to oven. Braise at 325°F for 1 hour 20 minutes. Check once at 45 minutes (lid stays on; no stirring needed)—lamb should be simmering gently. Total oven time 80 minutes.
  8. At 1 hour 20 minutes, remove pot from oven and test lamb pieces with a fork — they should be fork-tender and yielding. If still firm, return covered to oven for up to 10 more minutes and recheck (timeline notes address this risk).
  9. Transfer lamb to a warm platter; tent loosely with foil and allow to rest 10–15 minutes while finishing the rest of the meal. Skim excess fat from pan juices; if desired, reduce braising liquid on stove top over medium-high for 3–5 minutes to make a glaze; taste and adjust with 1 tbsp lemon juice or a pinch of salt as needed.
  10. Serve pieces with some braising glaze spooned over.

Jeweled Saffron Rice Pilaf

Not dairy-free: butter.

Not nut-free: almonds.

Equipment

  • 3-quart saucepan with tight-fitting lid
  • Small skillet for toasting nuts
  • Fine mesh sieve, measuring cups and spoons

Ingredients

  • Basmati rice, rinsed until water runs clear — 3 cups (uncooked)
  • Chicken or vegetable stock — 4 1/2 cups
  • Unsalted butter — 3 tablespoons
  • Olive oil — 1 tablespoon
  • Small onion, finely diced — 1 medium (about 6 oz)
  • Slivered almonds — 1 1/4 cups (about 6 oz)
  • Dried barberries OR dried cranberries — 1/2 cup (if barberries unavailable, use cranberries) — 1/2 cup
  • Sugar — 2 teaspoons
  • Saffron threads — generous pinch (about 10–15 threads) steeped in 2 tablespoons hot water OR 1/4 teaspoon ground turmeric as substitution
  • Kosher salt — 2 teaspoons

Practical substitutions:

  • Saffron: use 1/4 tsp ground turmeric for color and a faint aroma if saffron is unavailable.
  • Barberries: substitute dried cranberries.

Cooking / Baking

  • Stovetop simmer, covered: 25–30 minutes.

Total cook time

  • 40 minutes (10 minutes prep + 30 minutes cook)

Instructions

  1. Rinse 3 cups basmati rice in cold water until runoff is clear; drain in a fine sieve for 5 minutes.
  2. Heat a small skillet over medium; add 1 1/4 cups slivered almonds and toast, stirring, until golden, about 3–4 minutes. Transfer to a plate.
  3. In a 3-quart saucepan, melt 3 tbsp butter with 1 tbsp olive oil over medium heat. Add diced onion and cook 4–5 minutes until translucent.
  4. Add rinsed rice to the pan and stir to coat in butter for 1–2 minutes, stirring so rice grains warm but do not brown.
  5. Stir in 4 1/2 cups stock, 2 tsp salt, 2 tsp sugar, the saffron steeped in 2 tbsp hot water (or turmeric), and 1/2 cup barberries/cranberries.
  6. Bring to a boil uncovered, then immediately reduce heat to low, cover tightly and simmer 20–25 minutes until liquid is absorbed and rice is tender.
  7. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and fold in toasted almonds. Keep covered and warm until service.

Smoky Eggplant Dip (Baba Ganoush)

Not dairy-free: yogurt.

Equipment

  • 2 rimmed baking sheets or 1 large (if both fit in oven)
  • Blender or food processor (or a fork and fine sieve for hand-mashing)
  • Chef’s knife, bowl, spatula

Ingredients

  • Large globe eggplants — 4 (about 3–3.5 lb total)
  • Tahini — 1/2 cup
  • Fresh lemon juice — 1/3 cup (about 2 lemons)
  • Garlic, minced — 3 cloves
  • Olive oil — 1/3 cup + 2 tablespoons for finishing
  • Kosher salt — 1 1/2 teaspoons
  • Ground cumin — 1/2 teaspoon
  • Smoked paprika or sumac for garnish — 1 teaspoon

Practical substitutions:

  • If tahini is unavailable, use 1/2 cup plain yogurt (note: changes texture and flavor).

Cooking / Baking

  • Oven broil or roast 35–45 minutes until eggplants collapse and are charred; finish in food processor.

Total cook time

  • 55 minutes (15 minutes active prep + 40 minutes roasting)

Instructions

  1. Preheat oven to 425°F (or use a hot broiler rack with foil-lined sheets). Prick eggplants a few times with a fork to allow steam to escape.
  2. Place eggplants on a rimmed baking sheet and roast at 425°F for 35–45 minutes, turning once, until they collapse and the skins are blistered and charred. (If using the broiler, place 6–8" from element and broil 10–12 minutes per side; watch closely.)
  3. Remove roasted eggplants to a bowl and let cool 8–10 minutes until they can be handled. Cut off stems, open and scoop flesh into a colander, let drain 3–4 minutes to remove excess liquid.
  4. Transfer flesh to a food processor. Add 1/2 cup tahini, 1/3 cup lemon juice, 3 minced cloves garlic, 1/3 cup olive oil, 1 1/2 tsp salt and 1/2 tsp ground cumin. Pulse until mostly smooth but still a little textured — about 6–10 pulses.
  5. Taste and adjust salt or lemon. Transfer to a serving bowl, make a shallow well and drizzle 2 tbsp olive oil and sprinkle smoked paprika or sumac. Keep at room temperature; this dip holds well.

  2. Open and pour for adults at table. Approximately 1 bottle serves 4 adults comfortably; two bottles recommended for 4 adults.

3. LINEAR TIMELINE (3:10 PM–5:00 PM)

  • 3:10 PM: Braised Lamb Shoulder — Pat lamb pieces dry, season with salt, pepper and baharat; heat Dutch oven with 3 tbsp olive oil.
  • 3:12 PM: Braised Lamb Shoulder — Sear lamb in batches, 3–4 minutes per side until well browned; transfer seared pieces to a plate (total searing ~12 minutes).
  • 3:24 PM: Braised Lamb Shoulder — Add sliced onions to pot, cook 4 minutes; add garlic, tomato paste and cook 1 minute.
  • 3:29 PM: Braised Lamb Shoulder — Add pomegranate molasses, stock, canned tomatoes, honey, lemon juice, bay leaves, allspice and cinnamon; bring to a gentle simmer on stove (2–3 minutes).
  • 3:32 PM: Braised Lamb Shoulder — Return lamb pieces to the pot; cover and transfer Dutch oven to preheated 325°F oven to braise for 1 hour 20 minutes (will finish at 4:52 PM if placed now). [If using a different oven rack position than below, keep at mid-rack.]
  • 3:35 PM: Baba Ganoush (Smoky Eggplant Dip) — Place 4 pricked eggplants on a rimmed baking sheet and slide into oven to roast alongside braise at 425°F is NOT possible simultaneously; instead ensure the oven is set to 325°F for braise — for this plan roast eggplants directly on same rack under broil for char using broiler later: instead at 3:35 PM turn oven to BROIL HIGH and broil eggplants on the top rack for intense charring 8–12 minutes per side, watching closely; (see recipe note) — if using 325°F roast option, place eggplants on oven at this time to roast 35–40 minutes; plan uses 325°F braise with eggplant roast concurrently, so proceed to roast at 325°F for 35–40 minutes.
  • 3:40 PM: Jeweled Saffron Rice — Toast almonds in small skillet (3–4 minutes) then set aside; dice small onion and have rice rinsed and draining.
  • 3:50 PM: Baba Ganoush — Turn eggplants on sheet pan (if roasting at 325°F) so both sides char and collapse; continue to roast.
  • 4:05 PM: Jeweled Saffron Rice — In saucepan melt butter + olive oil; sauté onion 4–5 minutes, then add rice and begin the simmer step by adding stock, saffron water, salt and barberries/cranberries. Bring to boil and reduce to low covered to cook 20–25 minutes.
  • 4:10 PM: Baba Ganoush — Check eggplants; they should be collapsed and soft by now (~35–40 minutes). Remove eggplants from oven; let cool 8–10 minutes.
  • 4:15 PM: Baba Ganoush — Scoop flesh into colander to drain; finish purée in food processor with tahini, lemon juice, garlic, olive oil, cumin and salt; transfer to serving bowl and set aside. (Baba ganoush ready and holds.)
  • 4:20 PM: Jeweled Saffron Rice — Rice continues cooking (covered). Begin prepping salad vegetables: halve, seed and dice cucumbers and tomatoes, thinly slice red onion; store loosely covered in bowl until dressing time.
  • 4:35 PM: Jeweled Saffron Rice — Rice should be done; fluff with fork, fold in toasted almonds, keep covered and warm.
  • 4:40 PM: Braised Lamb Shoulder — Internal check: open Dutch oven, verify a gentle simmer remained; continue braise in oven if still needing time. (Note: scheduled to finish by ~4:52 PM).
  • 4:45 PM: Braised Lamb Shoulder — Remove Dutch oven from oven; test lamb for fork-tenderness. If fork-tender, transfer lamb pieces to a warm platter and tent with foil; skim or reduce braising liquid on stovetop 3–4 minutes to glaze. Let lamb rest 10–12 minutes.
  • 4:50 PM: Warm Pita — Preheat oven to 350°F (or heat skillet). Place pitas on sheet pan ready to warm at service.
  • 4:50 PM: Garlic Yogurt Sauce — Whisk together yogurt, garlic, lemon, olive oil and salt; place in serving bowl and set on counter.
  • 4:52 PM: Braised Lamb Shoulder — Spoon a small amount of reduced glaze over lamb, keep tented; begin plating warm bowls for serving. (Lamb resting window; acceptable to rest ~8 minutes.)
  • 4:53 PM: Quick final tasks — Check baba ganoush garnish, spoon olive oil and paprika; move rice to serving dish; keep covered.
  • 4:55 PM: Cucumber–Tomato Salad — Whisk lemon-sumac dressing then dress vegetables now; toss and transfer to serving bowl (finish-to-order).
  • 4:55 PM: Warm Pita — Place pitas in 350°F oven for 6–8 minutes or warm quickly in skillet 1–2 minutes per side.
  • 4:58 PM: Final plating — Place lamb on platter with some glaze, set rice, baba ganoush, yogurt sauce and salad on table; open two bottles of chilled rosé; place pitcher of pomegranate lemonade on table with ice and glasses.
  • 5:00 PM: Service — Serve all dishes and beverages to the table.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper or Aleppo pepper at the table for adults who want heat; plain yogurt available as extra cooling condiment.
  • Global substitutions: if baharat is unavailable, follow the substitution listed in the lamb recipe; saffron may be substituted with turmeric as noted.
  • Child-safety notes: keep pomegranate molasses and strong spices out of reach of children until plated; supervise kids around any hot pans used for final warming.
  • Timeline risk(s): The tightest execution window is the lamb braise: the plan schedules a 1 hr 20 min braise that must complete and be fork-tender by ~4:52 PM to allow a 10–12 minute rest before serving. If the lamb is not fork-tender at that time, the cook will need to extend oven time, which will push the finish and compress the last-minute tasks.
  • Practical mitigation mindset: If the lamb remains firm at the 1 hr 20 min mark, increase oven temperature to 350°F and continue covered for 10–15 minutes, then check again; alternatively remove some pieces and reduce braising liquid on the stove to glaze and disguise slightly firmer meat (but the fork-tender test is primary). Keep other dishes warm (rice covered; baba ganoush at room temperature) while adjusting lamb time.
  • Large table note: cooking for eight with sizeable braising pieces is heavier work for one cook. Give yourself a cushion: start up to 15 minutes earlier than the timeline if you are less experienced, or confirm all mise en place is completed before 3:10 PM.
  • The latest safe start time: You can start as late as 3:10 PM for a 5:00 PM serve. If you prefer extra buffer due to size of lamb pieces or oven variability, begin up to 15 minutes earlier.
