Aegean Family Supper

A warm Greek family meal built around tender pork braised in a rich tomato-and-cinnamon sauce, paired with oven-roasted briam, a bright village salad and cooling tzatziki — finished with fluffy warm pita and an orzo pilaf tossed with spinach and feta. The cooking is designed so the one cook works steadily and finishes the delicate, finish-to-order items right at service.

  • Cuisine: Greek
  • Serve time: 5:00 PM

This dinner highlights a comforting Greek braise — pork kokkinisto — whose long, gentle simmer produces melt-in-the-mouth pork in a spiced tomato sauce; it is balanced by rustic oven-roasted briam, a fresh horiatiki village salad and cooling tzatziki, with orzo studded with spinach and feta and warm pita to scoop. The plan staggers holding-stable items and last-minute finish-to-order components so a single cook can complete everything within the two-hour cooking window and serve all components hot and texturally correct.

  • Pork Kokkinisto (Pork braised in tomato and cinnamon)
  • Briam (Greek oven-roasted mixed vegetables)
  • Orzo with spinach and feta
  • Horiatiki (Greek village salad) — finish-to-order
  • Tzatziki (yogurt-cucumber sauce)
  • Warm pita rounds
  • Pomegranate Sparkling Spritzer (kid-friendly drink)
  • Agiorgitiko red wine (adult beverage)

2. FULLY EXECUTABLE RECIPES

Pork Kokkinisto (Pork braised in tomato and cinnamon)

Equipment

  • 5–6 qt heavy Dutch oven or other lidded ovenproof pot (6 qt recommended)
  • Chef's knife, cutting board
  • Tongs
  • Measuring spoons and cup
  • Wooden spoon
  • Instant-read thermometer

Ingredients

  • 2.5 lb boneless pork shoulder, trimmed and cut into 1½-inch cubes
  • 3 tbsp olive oil
  • 2.5 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 large yellow onion (about 8 oz), diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 28 oz can crushed tomatoes (28 oz)
  • 1.5 cups low-sodium chicken stock
  • 1/2 cup dry red wine (for deglaze; use extra stock if avoiding alcohol)
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 tsp granulated sugar
  • 2 tbsp fresh parsley, chopped (for finishing)

Practical substitutions:

  • If pork shoulder is unavailable, use boneless pork butt or country-style ribs (same cook time). If you must use pork loin, reduce braise time (see recipe notes).
  • If dry red wine is not desired, substitute an extra 1/2 cup chicken stock and 1 tbsp red wine vinegar.

Cooking / Baking

  • Braise covered on low simmer on stovetop for 70 minutes after searing; total active cook time 1 hour 25 minutes.
  • Target doneness: pork should be fork-tender; internal temperature will often read 180–195°F for break-down-tender braise. At minimum, ensure pork reaches 145°F, but for this shoulder braise plan for 180–195°F to be tender.

Instructions

Total cook time: 1 hour 25 minutes

  1. 3:35 PM — Pat pork dry with paper towels. Season all pieces evenly with 2 tsp of the kosher salt and the 1 tsp ground black pepper.
  2. 3:36 PM — Heat Dutch oven over medium-high, add 2 tbsp of olive oil. When oil shimmers, sear pork in a single layer in batches to avoid crowding: 2–3 minutes per side until well browned. Use tongs; transfer browned pieces to a plate. (If an extra tablespoon oil is needed between batches, add it.)
  3. 3:51 PM — Lower heat to medium. Add remaining 1 tbsp olive oil if pan looks dry. Add diced onion and sauté 6 minutes until translucent, stirring. Add minced garlic and cook 30 seconds.
  4. 3:58 PM — Stir in 2 tbsp tomato paste and cook 1 minute. Pour in 1/2 cup red wine and scrape browned bits from bottom with wooden spoon; simmer 1–2 minutes until slightly reduced.
  5. 4:01 PM — Return all pork to pot. Add 28 oz crushed tomatoes, 1.5 cups chicken stock, cinnamon stick, bay leaf, and 1 tsp sugar. Add remaining 0.5 tsp kosher salt now (total reaches 2.5 tsp).
  6. 4:03 PM — Bring to a gentle simmer on stovetop over medium heat, then reduce to low so liquid barely simmers. Cover and simmer gently for 70 minutes, checking the pot once during that interval to ensure a gentle simmer (not a rolling boil); skim any excess foam. Maintain a simmer; adjust heat as required.
  7. 5:13 PM — At ~70 minutes of covered simmer (approximately 5:13 PM if started per timeline), uncover and verify tenderness: pierce a large piece with a fork — it should be fork-tender. If very tender, remove pot from heat. If sauce is too thin, simmer uncovered over medium-low 5–8 minutes to concentrate. If sauce is too thick, add up to 1/4 cup hot stock.
  8. 5:15 PM — Remove cinnamon stick and bay leaf. Stir in 2 tbsp chopped parsley. Taste and adjust seasoning if needed (note: salt already quantified).
  9. 5:15 PM — Keep covered off heat; pork may rest up to 15 minutes before service. Reheat to a gentle simmer for 1–2 minutes if it cooled too much just before service.

Notes: Braise uses low consistent simmer; frequent stirring is unnecessary. Target fork-tender 180–195°F if aiming for shreddable, but pork shoulder at ~180°F will be tender for this dish.

Briam (Greek oven-roasted mixed vegetables)

Equipment

  • 13 x 9-inch rimmed baking dish or 12-inch ovenproof skillet
  • Chef's knife, cutting board
  • Mixing bowl
  • Measuring spoons and cup
  • Oven thermometer (optional)

Ingredients

  • 1.5 lb small Yukon gold or baby potatoes, halved if larger
  • 1 large eggplant (about 1 lb), cut into 1-inch cubes
  • 2 medium zucchini (about 12 oz total), cut into 1/2-inch rounds or half-moons
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 medium yellow onion, cut into wedges
  • 3 garlic cloves, minced
  • 1 cup crushed tomatoes (8 oz)
  • 4 tbsp olive oil
  • 1.5 tsp kosher salt
  • 1 tsp ground black pepper
  • 2 tsp dried oregano
  • 1 tbsp fresh parsley, chopped (for finishing)

Practical substitutions:

  • If fresh red bell pepper is unavailable, use 1 cup jarred roasted red peppers drained (reduce baking liquid by 2 tbsp).

Cooking / Baking

  • Oven roast at 400°F for 45 minutes, tossing once halfway through. Total cook time 1 hour (15 min prep + 45 min bake).

Instructions

Total cook time: 1 hour

  2. 3:45 PM — In a large mixing bowl, combine potatoes, eggplant, zucchini, red pepper, onion, and minced garlic.
  3. 3:47 PM — Add 1 cup crushed tomatoes, 4 tbsp olive oil, 1.5 tsp kosher salt, 1 tsp black pepper and 2 tsp dried oregano. Toss until vegetables are evenly coated.
  4. 3:50 PM — Spread vegetables in a single layer in a 13 x 9-inch baking dish (pack slightly but do not mound).
  5. 4:00 PM — Place dish in preheated 400°F oven and roast 45 minutes, uncovered. At 4:22 PM (about halfway), use a spatula to turn/toss vegetables so they brown evenly.
  6. 4:45 PM — Remove from oven, sprinkle with 1 tbsp chopped parsley. The briam can rest for up to 15 minutes before serving; hold hot but do not reheat beyond 10 minutes.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper or cayenne (for adults to add), extra chopped parsley, extra feta for sprinkling.
  • Global substitutions allowed: if pork shoulder unavailable, use boneless pork butt or country-style ribs; if crushed tomatoes are unavailable, substitute equal volume of tomato sauce plus 2 tbsp tomato paste. If pomegranate juice is unavailable, use unsweetened cranberry juice or 1:1 grape+cranberry mix.
  • Child-safety notes: keep the hot Dutch oven and oven door away from child reach; store knives out of reach; pour and plate hot liquids away from table edges.
  • Timeline risks:
    • Tightest execution window: the pork braise start and the briam oven window overlap with finishing steps for orzo, salad and pita. The single biggest risk is juggling the final 20 minutes (4:40–5:00 PM) when oven, stovetop boiling and plating must be coordinated.
    • Mitigation mindset: keep all mise en place completed before 4:30 PM (vegetables chopped, ingredients measured). Use timers for the orzo and set visible reminders for oven toss and pork-check. When a dish is simmering or roasting, use that predictable time to prep the next finish-to-order item so there is always a next focused action.
  • Latest safe start time: You can start as late as 3:35 PM for a 5:00 PM serve.
