Anatolian Sunday: Adana-Style Lamb Kofta Supper

Grilled Adana-style lamb kofta — spiced ground lamb shaped on skewers and finished on a hot grill — served with buttery Turkish rice pilaf, fresh tabbouleh, cooling cucumber-yogurt cacık, smoky baba ganoush and warm pita. Bright mint lemonade for the kids and a bottle of Syrah for adults complete a family-friendly Middle Eastern supper built for shared plates and easy plating at 5:00 PM.

  • Name of the meal: Anatolian Sunday: Adana-Style Lamb Kofta Supper
  • Cuisine type: Middle Eastern
  • Serve time: 5:00 PM

This meal is worth sitting down for because the charcoal-like sear and fragrant ground-lamb spices in the Adana kofta give a focused centerpiece, while textural contrasts — fluffy orzo-studded pilaf, verdant parsley-forward tabbouleh, creamy cacık and smoky baba ganoush — create a lively family spread that is fast to execute and finishes at the table. The menu is built for five (two adults, three kids), keeps the shared base mild for children, and offers adult heat and wine at the table.

2. FULLY EXECUTABLE RECIPES

Adana-Style Lamb Kofta Skewers

Equipment

  • Large mixing bowl
  • Box grater (for onion)
  • 10 metal skewers or 20 soaked bamboo skewers (8–10" length)
  • 12" cast-iron grill pan or outdoor gas grill
  • Instant-read thermometer
  • Plate and foil for brief resting

Ingredients (total for 5 servings)

  • 2 lb ground lamb
  • 1 large yellow onion, peeled and grated (about 1 cup grated) ⁺
  • 3 cloves garlic, minced ⁺
  • 1/4 cup flat-leaf parsley, finely chopped ⁺
  • 1 tablespoon sweet paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil ⁺
  • Optional for adults at table: crushed red pepper flakes, harissa (serve separately)

Practical substitutions

  • If ground lamb is unavailable: 2 lb ground beef (80/20) may be used, but label will be "Adana-style" rather than traditional lamb-forward flavor.

Cooking / Baking

  • Total active cook time: 40 minutes (mixing/shaping 20 min; grilling 10–12 min; passive short rests included)
  • Target internal temp: 160°F for ground lamb

Instructions

  1. Combine (pre-mix): Put 2 lb ground lamb in a large mixing bowl. Add grated onion (press out no liquid), 3 minced garlic cloves, 1/4 cup chopped parsley, 1 tbsp paprika, 1 tbsp cumin, 1 tsp coriander, 1 1/2 tsp kosher salt, and 1 tsp black pepper. Add 1 tbsp olive oil.
  2. Mix: Using your hands, mix until evenly combined but not overworked, about 1.5–2 minutes.
  3. Rest the mixture uncovered in the fridge for 5–10 minutes to firm slightly (optional short chill).
  4. Shape: Divide into 10 equal portions (~3.2 oz each). With wet hands, form each portion into an elongated sausage around a skewer, pressing firmly and tapering the ends so meat adheres. Place skewers on a plate; cover and keep chilled upright in fridge for up to 20 minutes while you prepare other components.
  5. Preheat grill: Preheat a grill or a 12" cast-iron grill pan over medium-high heat until very hot (about 5–7 minutes). Brush grill grates or pan with remaining 1 tbsp olive oil just before cooking.
  6. Grill: Place skewers on hot grill/pan. Cook 4–5 minutes per side, turning to get even sear and cook through. Total 8–12 minutes depending on thickness. Check internal temp with an instant-read thermometer — target 160°F for ground lamb.
  7. Rest and serve: Slide kofta off skewers onto a warm platter; tent loosely with foil and rest 2–3 minutes (they will be plated immediately). Serve hot with sides and warm pita. Adults may add red pepper flakes or harissa at the table.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper flakes or harissa (adults only) to add heat to individual portions; place in small bowl at table.
  • Global substitutions: if ground lamb is unavailable, 2 lb ground beef (80/20) is the closest reliable substitute. If tahini is unavailable, use 1/4 cup Greek yogurt for baba ganoush (different but serviceable).
  • Child-safety notes: Keep skewers (metal or bamboo) away from children; remove meat from skewers and serve to kids off the skewer. Supervise children near the hot grill/pan and oven.
  • Timeline risks: The tightest execution window is 4:45–5:00 PM when multiple finish-to-order tasks converge (grilling kofta, dressing tabbouleh, warming pita, final plating). This is risky because the grill requires constant attention while the salad needs immediate dressing and plating.
  • Mitigation mindset: Prioritize the kofta's grill time (it cannot be held). Prepare and queue all salad ingredients fully chopped and measured before starting to grill; while the kofta cooks, immediately dress the tabbouleh and finish plating. Use the oven for warming pita during coat/grill rests to free hands. Keep all serving bowls and utensils staged and within reach before 4:50 PM.
  • Latest safe start time: You can start as late as 3:45 PM for a 5:00 PM serve.
