5. NOTES & ASSUMPTIONS

  • Optional table-side items: chaat masala (1/2 tsp) for sprinkling on the kachumber (marked ⁰ in shopping list).
  • Global substitutions: if Kashmiri chili powder unavailable, substitute 1 tsp mild paprika + 2 tsp mild red chili powder by weight; if atta unavailable, use 50/50 whole-wheat and all-purpose flour.
  • Child-safety: hot oil and a very hot skillet are used during the final 25 minutes while cooking rotis; keep children away from the stove and hot surfaces during that period.
  • Timeline risks:
    • Tightest execution window: 4:45–5:00 PM. During these 15 minutes the rotis must be rolled and cooked to finish-to-order while the kachumber is tossed, lassi chilled/served and final plating is completed. This is risky because multiple hot, finish-to-order tasks overlap.
    • Mitigation mindset: pre-form all dough balls at 4:38 PM; roll one or two while the first batch cooks and keep cooked rotis wrapped; keep rice and curry tightly covered and nearby so you can focus on rotis and plating; if available, ask one adult to pour drinks or unwrap lassis to free hands.
  • The latest safe start time: You can start as late as 3:20 PM for a 5:00 PM serve.
