Bayou Family Po' Boy Supper

A family-style Cajun & Creole midweek supper built around crisp, breaded-fried Gulf shrimp piled into soft French rolls with a tangy Creole remoulade; bright, smoky accents from sautéed okra and a seasoned Creole rice keep the plate rooted in Louisiana technique while staying fast and manageable for a single home cook.

1. FINAL MENU

  • Cuisine: Cajun & Creole

This meal is worth sitting down for because it delivers classic New Orleans textures and spice in a compact, family-friendly program: crunchy, breaded-fried shrimp finished to order; a cool Creole remoulade that ties each sandwich bite together; a seasoned Creole rice that provides grounding starch and holds; quick sautéed okra with fresh tomatoes for an authentically Southern vegetable; and a crisp, dressed slaw added at the last minute for crunch and relief. The menu is scaled for four, designed so one cook can execute it from a cold start within the allowed cooking window.

2. FULLY EXECUTABLE RECIPES

Crispy Fried Shrimp Po' Boy

Equipment

  • 2 large mixing bowls (1.5–2 L)
  • 1 shallow rimmed baking tray (30×20 cm)
  • 1 wire rack + baking tray
  • 1 thermometer (instant-read or clip thermometer)
  • 4 L heavy-bottomed saucepan or Dutch oven for frying (at least 2.5–3 L oil capacity)
  • Slotted spoon or spider
  • Tongs
  • Small sheet pan for toasting rolls (or oven rack)
  • Cutting board, chef's knife, paper towels

Ingredients

  • Raw shrimp, peeled & deveined, tail-on optional: 800 g (about 24 medium shrimp)
  • Buttermilk: 240 ml (1 cup) ⁺
  • Creole seasoning: 1 1/2 tbsp (approx. 22 ml) ⁺
  • All-purpose flour: 150 g (1 1/4 cups)
  • Yellow cornmeal: 100 g (1/2 cup)
  • Granulated sugar: 5 g (1 tsp) — for batter balance
  • Salt (fine): 8 g (1 1/2 tsp) ⁺
  • Ground black pepper: 2 g (1/2 tsp) ⁺
  • Vegetable oil (neutral frying oil, e.g., canola, sunflower): 1.25 L total (use ~1 L for the fryer plus 2 tbsp for okra) ⁺
  • French sandwich rolls (soft po' boy-style rolls), 15–18 cm: 4 rolls
  • Iceberg lettuce, shredded: 150 g ⁺
  • Tomato, ripe, sliced into 8–12 mm rounds: 2 medium (about 300 g) ⁺
  • Lemon: 1 (for optional squeeze at table) ⁺

Practical substitutions:

  • Buttermilk: 240 ml milk + 1 tbsp white vinegar stirred and rested 5 min.
  • French rolls: 4 crusty sandwich rolls or 4 soft baguette sections.
  • Yellow cornmeal: fine polenta.

Cooking / Baking

  • Target frying oil temperature: 175–180 °C (350–360 °F).
  • Total cook time: 30 minutes (active: breading + frying; does not include simultaneous tasks done in timeline).

Instructions

  1. Shrimp prep (16:25–16:35 per timeline): If shrimp not prepped, pat dry and trim tails if desired. Place shrimp in a large bowl, add buttermilk (240 ml) and 1 tsp (5 g) Creole seasoning; toss to coat. Let sit while you start other tasks (10–12 minutes soak).
  2. Breading station (16:35–16:45): On a shallow tray mix flour (150 g), cornmeal (100 g), remaining Creole seasoning (approx. 1 tbsp / 15 ml), sugar (5 g), 1 tsp (5 g) salt and 1/2 tsp (2 g) pepper. Set a wire rack over a tray for finished breaded shrimp.
  3. Dredge (16:42–16:50): Lift shrimp from buttermilk in batches, let excess drip, dredge thoroughly in the flour–cornmeal mix, pressing so coating adheres. Place coated shrimp on the wire rack in a single layer.
  4. Heat oil (16:40–16:50): Pour ~1 L vegetable oil into Dutch oven to a depth of 6–7 cm. Heat on medium-high with thermometer clipped in; bring to 175–180 °C (350–360 °F).
  5. Frying (start 16:50): Fry shrimp in two or three small batches (do not crowd). Each batch: carefully lower shrimp and fry until golden brown and cooked through, about 2.5–4 minutes per batch depending on shrimp size. Internal shrimp temperature should reach 63 °C (145 °F). Drain on paper towels or clean wire rack.
  6. Toast rolls (16:55–16:58): While final batch fries, split rolls and place cut-side up on sheet pan; toast in oven at 200 °C (400 °F) for 2–3 minutes until warm and slightly crisp.
  7. Assemble (16:56–16:59): Spread 2–3 tbsp remoulade on each roll bottom and top, layer shredded lettuce (≈35–40 g per sandwich), 6 shrimp per sandwich (adjust to appetite), 2 tomato slices, a light squeeze of lemon if desired. Serve immediately.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: additional hot sauce (adult-only), lemon wedges, extra pickles or dill pickles.
  • Global substitutions allowed: low-sodium chicken stock may be replaced with water + bouillon; Creole mustard may be substituted with Dijon + 1 tsp horseradish.
  • Child-safety notes: Frying uses hot oil; keep children well away from the stove when frying and do not carry hot oil. Use long tongs/spider to move shrimp; have a lid ready for the fryer to smother any flare-ups.
  • Explicit timeline risk(s): The tightest execution window is the last 20 minutes (16:40–17:00) when frying shrimp, toasting rolls, dressing slaw and assembling are concurrent. Frying final batches must finish within ~2–4 minutes of plating to preserve crispness; any delay in frying or oil temperature problems will push assembly and risk cold or soggy shrimp.
  • Practical mitigation mindset: Maintain mise en place—have breading station, remoulade, shredded lettuce and tomato slices ready before heating oil. Monitor oil temperature with a thermometer; stagger tasks (start rice and okra early) and accept brief micro-pauses (15–60 seconds) only when required. If oil temperature drops, pause nonessential finishing tasks, bring oil back to temp and resume frying in slightly smaller batches.
  • The latest safe start time: You can start as late as 16:17 for a 17:00 serve.
