Canton Home Dinner

A balanced, family-friendly Cantonese-inspired dinner centered on a tender wok-fried chicken with cashews, crisp garlic baby bok choy and a silky egg-drop soup; finishes at the table with fragrant jasmine rice and a sparkling lychee drink for kids, while adults enjoy a dry Riesling.

1. FINAL MENU

  • Cuisine type: Chinese
  • Serve time: 17:00

This meal is worth sitting down for because it layers classic Chinese home techniques—fast, high-heat wok cooking; a silky egg-drop finish; and simple braise-style holding—into a single streamlined service that gives crisp texture, clean aromatics, and comforting rice. The shared base is kept mild for kids; crunchy cashews and a tabletop chili oil let adults add heat as desired.

  • Stir-Fried Chicken with Cashews (mild, table chili optional)
  • Wok-Fried Baby Bok Choy with Garlic
  • Egg Drop Soup with Sweet Corn
  • Steamed Jasmine Rice
  • Lychee Sparkling Agua Fresca (kid drink)
  • Dry Riesling, 1 bottle (adult beverage)

2. FULLY EXECUTABLE RECIPES

  • Neutral vegetable oil — 60 ml (4 tbsp) ⁺
  • Garlic, minced — 12 g (3 cloves)
  • Fresh ginger, minced — 12 g (1 tbsp)
  • Scallions, white and green separated, whites sliced thin, greens cut 4 cm long — 3 stalks
  • Red bell pepper, 1 medium, seeded and 2 cm diced — 1 (optional visual and sweetness)
  • Roasted unsalted cashews — 75 g (about 3/4 cup)
  • Chicken stock or low-sodium broth — 60 ml (1/4 cup) ⁺
  • Dark soy sauce — 10 ml (2 tsp)
  • Brown sugar — 10 g (1 tbsp)
  • Rice vinegar — 10 ml (2 tsp) ⁺
  • Sesame oil — 5 ml (1 tsp) ⁺
  • Salt — 3 g (1/2 tsp) ⁺
  • White pepper — 0.5 g (1/8 tsp)

Practical substitutions

  • If Shaoxing wine is unavailable, use dry sherry 15 ml.

Cooking / Baking

  • Total cook time: 8 minutes active wok-cook; allow 18 minutes prep (total planned time 26 minutes including mise en place).
  • Target internal temperature for chicken: 74 °C.

Instructions

  1. Mise en place (do this during the earlier prep window): Put chicken cubes in a mixing bowl; add 15 ml light soy and 15 ml Shaoxing wine and 10 g cornstarch; toss to coat. Set aside.
  2. Make sauce in a small bowl: combine 15 ml light soy, 60 ml chicken stock, 10 ml rice vinegar, 10 g brown sugar, 10 ml dark soy, 5 ml sesame oil, 5 g cornstarch (for slight thickening), whisk until smooth. Set beside stove.
  3. Heat wok over high heat until hot (2–3 minutes). Add half the vegetable oil (30 ml) and swirl.
  4. Add the marinated chicken in a single layer; stir-fry without crowding for 3–4 minutes until the outside is mostly cooked and starting to brown. Check internal temp if uncertain; it should read ~68 °C as it will finish in sauce.
  5. Push chicken to the side, add remaining 20 ml oil, add garlic, ginger, and white parts of scallion; stir 20–30 seconds until fragrant.
  6. Add diced red pepper and stir 30 seconds.
  7. Pour sauce into wok; stir constantly 1–2 minutes until sauce thickens and chicken reaches 74 °C.
  8. Stir in roasted cashews and scallion greens, toss 10–15 seconds to combine. Adjust seasoning with remaining 1/2 tsp salt and 1/8 tsp white pepper if needed.
  9. Transfer directly to serving dish and serve immediately. Adults may add tabletop chili oil or whole dried chilies.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: chili oil or toasted whole dried chilies for adults to add heat at the table (do not add to shared base).
  • Global substitutions: if jasmine rice is unavailable, use long-grain white rice (increase cooking water to 540 ml). If Shaoxing wine unavailable, use dry sherry.
  • Child-safety notes: Keep children away from stove during high-heat wok work and when transferring hot pots; serve soup to kids at a safely cool temperature.
  • Timeline risk(s): The tightest execution window is the final 8 minutes (16:52–17:00) when the main stir-fry must be cooked continuously and finished exactly at service time. Risk arises if mise en place is incomplete or if the stove gets crowded.
  • Mitigation mindset: Complete all chopping, sauce-mixing, and toasting of cashews before 16:48; have all bowls, utensils and serving dishes staged by the stove; keep the soup warm off heat rather than hot-simmering to avoid last-minute simmer adjustments. Work in the order given; do not start the stir-fry until bok choy and soup are done.
  • Latest safe start time: You can start as late as 16:25 for a 17:00 serve.
