Stir-fried Sunday dinners

Very high heat, constant motion, and everything prepped before anything is cooked. A stir-fry takes minutes at the stove and most of its work happens on the cutting board beforehand. The usual failure is heat, not skill: a domestic burner under a crowded pan makes steam, and steam is the opposite of what the method is for.
