Caribbean Comfort Supper

A home-ready Caribbean Sunday supper built around a richly seasoned Brown Stew Chicken, accompanied by coconut rice with pigeon peas, caramelized fried plantains and a bright avocado–tomato salad; pineapple–coconut agua fresca for kids and a measured dark-rum punch for adults complete the table. The plan staggers slow-simmered depth with last-minute fried and dressed elements so everything finishes at service and a single cook can execute reliably.

  • Name of the meal: Caribbean Comfort Supper
  • Cuisine type: Caribbean
  • Serve time: 5:00 PM

This supper is worth sitting down for: tender, caramelized Brown Stew Chicken gives warm, nostalgic depth while coconut rice with pigeon peas supplies fragrant island starch; sweet fried plantains add sticky-sweet contrast and a fresh avocado–tomato salad brightens each bite. The pineapple–coconut agua fresca keeps kids happy and a measured dark-rum punch provides an authentic adult option. Timing prioritizes finish-to-order items so textures are correct and the solo cook completes everything within a realistic window.

  • Brown Stew Chicken
  • Coconut Rice & Pigeon Peas
  • Fried Sweet Plantains (Maduros)
  • Avocado & Tomato Salad (optional: finish at service)
  • Pineapple–Coconut Agua Fresca (kid drink)
  • Dark Rum Punch (adult beverage)

2. FULLY EXECUTABLE RECIPES

Brown Stew Chicken

Equipment

  • 5–6 quart Dutch oven or heavy-bottomed pot with lid
  • 12-inch skillet (optional)
  • Instant-read thermometer
  • Tongs
  • Measuring cups and spoons
  • Wooden spoon
  • Small shallow bowl for dredging
  • Plate for resting seared chicken

Ingredients

  • 5 bone-in, skin-on chicken thighs (about 3.5–4.5 lb)
  • 2 tsp kosher salt (total for recipe)
  • 1 tsp freshly ground black pepper (total for recipe)
  • 1/2 cup (60 g) all-purpose flour
  • 4 tbsp (60 ml) vegetable oil (for searing)
  • 1 medium yellow onion, diced (about 8 oz / 225 g)
  • 1 medium bell pepper, diced (any color) (about 6 oz / 170 g)
  • 3 scallions (green onions), white and light-green parts sliced (about 1.5 oz / 45 g)
  • 4 cloves garlic, smashed then minced (about 12 g)
  • 2 tbsp tomato paste (about 33 g)
  • 1 tbsp packed dark brown sugar (about 12 g)
  • 2 tbsp soy sauce (30 ml)
  • 2 cups (480 ml) low-sodium chicken broth
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 bay leaf
  • 1/2 tsp ground allspice (1.5 g)
  • 1 tbsp (14 g) unsalted butter (optional for finish)
  • 1/8 tsp cayenne pepper (0.5 g) — optional for individual plates only ⁰

Practical substitutions

  • If fresh thyme is unavailable, use 1 tsp dried thyme.
  • If vegetable oil unavailable for searing, use canola or peanut oil.

Cooking / Baking

  • Stove-top, covered simmer in Dutch oven.
  • Internal temperature target: 165°F (74°C) at thickest part near the bone.

Total cook time

  • 70 minutes (15 minutes active searing/build + 45 minutes gentle simmer + 10 minutes finish/rest overlap).

Instructions

  1. Prep (5 minutes): Remove chicken from packaging, pat dry with paper towels. Combine flour, 1 tsp kosher salt and 1/2 tsp black pepper in a shallow bowl. Dredge each thigh lightly in flour and shake off excess; place on a plate.
  2. Sear (15 minutes): Heat Dutch oven over medium-high until hot. Add 2 tbsp (30 ml) vegetable oil and heat until shimmering. Place chicken skin-side down in a single layer (work in two batches if necessary). Sear 4–5 minutes skin-side down until deep golden; flip and brown 3–4 minutes. Transfer seared pieces to a plate and repeat with remaining chicken, adding remaining 2 tbsp oil if pan looks dry.
  3. Build base (5 minutes): Reduce heat to medium. Add diced onion and bell pepper to the pot and sauté 3–4 minutes until softened. Add sliced scallions and minced garlic and cook 30 seconds.
  4. Add aromatics (1 minute): Stir in tomato paste and brown sugar and cook 1 minute. Stir in soy sauce, ground allspice, thyme sprigs and bay leaf.
  5. Deglaze and simmer (45 minutes): Pour in chicken broth, scraping the browned bits from the bottom with the spoon. Return all chicken pieces to the pot, nestling them skin-side up. Bring to a gentle simmer, cover, reduce heat to low and simmer gently for 45 minutes (do not boil vigorously).
  6. Finish and check (5 minutes): Uncover, remove thyme sprigs and bay leaf. Insert an instant-read thermometer into the thickest part of the largest thigh without touching bone; target 165°F (74°C). If the thermometer reads below 165°F, simmer uncovered 3–5 additional minutes and recheck. If the sauce is thinner than you prefer, increase heat and boil uncovered 2–3 minutes to reduce. For a silkier finish, off heat stir in 1 tbsp unsalted butter.
  7. Salt & pepper finalization (1 minute): You have 1 tsp kosher salt and 1/2 tsp black pepper remaining from the totals listed. Add up to the remaining 1 tsp kosher salt in 1/4-tsp increments and up to the remaining 1/2 tsp black pepper in 1/8-tsp increments, checking after each addition, until the sauce tastes balanced.
  8. Rest (up to 15 minutes): Keep covered off heat for up to 15 minutes while finishing other items. Do not leave finished chicken uncovered for more than 15 minutes.

Total cook time

  • 40 minutes (5 min prep + 30 min covered simmer + 5 min rest).

Instructions

  1. Rinse rice in a fine-mesh strainer under cold water until water runs clear; drain well.
  2. Heat 1 tbsp vegetable oil or butter in the saucepan over medium heat. Add diced onion and sauté 3–4 minutes until translucent. Add minced garlic and cook 30 seconds.
  3. Add the rinsed rice and stir 1 minute to coat the grains.
  4. Add the 13.5 oz (400 ml) coconut milk, 2 1/3 cups (560 ml) water, drained pigeon peas, thyme, 1.5 tsp kosher salt and 1/4 tsp black pepper. Stir once to combine and bring to a gentle boil over medium-high heat.
  5. When boiling, reduce heat to the lowest setting, cover tightly and simmer undisturbed for 25–30 minutes until liquid is absorbed and rice is tender.
  6. Remove from heat and let sit covered 5 minutes. Remove thyme sprigs and fluff rice with a fork before serving.

Fried Sweet Plantains (Maduros)

Equipment

  • 12-inch heavy skillet or sauté pan
  • Tongs or slotted spoon
  • Instant-read thermometer (optional)
  • Paper towels and baking sheet or platter

Ingredients

  • 3 large ripe plantains (skin black-speckled)
  • 1.5 cups (360 ml) vegetable oil for frying (plus ~1 tbsp oil usage elsewhere is accounted separately in shopping list) ⁺
  • 1/2 tsp kosher salt (total)

Practical substitutions

  • If fresh plantains unavailable, use thawed frozen sliced maduros.

Total cook time

  • 12 minutes active (peel/slice + two frying batches).

Instructions

  2. Heat oil in skillet over medium-high until it reaches ~350°F (175°C). If no thermometer, oil should shimmer and a small piece of plantain should sizzle immediately.
  3. Fry plantain slices in a single layer (work in two batches) 3–4 minutes per side until deep golden and caramelized. Do not overcrowd the pan.
  4. Transfer to paper towels to drain and immediately sprinkle with 1/4 tsp kosher salt per batch (total 1/2 tsp). Serve hot; these are finish-to-order and should be ready at service.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: bottled hot pepper sauce for adults (not part of the shared base); extra lime wedges for plating; extra rum for topping drinks held off the child's area.
  • Global substitutions: dried thyme may replace fresh thyme at 1 tsp dried for the 4–6 sprigs; canned cannellini or pink beans may replace pigeon peas (one 15-oz can).
  • Child-safety notes: Frying plantains requires hot oil (~350°F). Keep children away from the stove while frying; use long tongs and a splatter screen. Keep alcoholic beverages and punch pitcher preparation out of children's reach and prepare adult punch away from child-serving zones.
  • Explicit timeline risk(s): The tightest execution window is 4:45–5:00 PM when chicken finish-check, rice fluffing, plantain frying and salad assembly overlap. If chicken requires extra simmer time or rice needs additional minutes, the final 15-minute window compresses.
  • Practical mitigation mindset without changing the menu: Monitor the chicken thermometer around 4:40 PM to confirm time-to-doneness and reduce heat to maintain a gentle simmer so it finishes predictably at 4:45 PM. Pre-measure (mise en place) all salad and drink ingredients and have plates and serving spoons ready before 4:40 PM. If the chicken reads slightly under at 4:45 PM by 3–5°F, finish it uncovered and speed plantain frying by using slightly hotter oil and smaller batches, watching closely to avoid burning.
  • Latest safe start time: You can start as late as 3:35 PM for a 5:00 PM serve.
