Caribbean Sunday dinners

Island cooking is a record of everyone who passed through — West African, Indian, Spanish, French and British technique layered onto what grows in the tropics. Jerk is the famous one, but the everyday cooking is rice and peas, stews built on a seasoning base, and fish cooked simply because it was caught that morning. Allspice and scotch bonnet do most of the identifying work.
