Instructions

3. LINEAR TIMELINE (16:10–17:00)

  • 16:10: Paella — Put 1.20 L stock in a small saucepan, heat to a gentle simmer and keep hot; while stock heats, scrub mussels under cold running water, debeard and discard any that are open and do not close when tapped; peel and devein shrimp if needed; pat seafood dry.
  • 16:20: Paella — Finely dice 1 medium yellow onion and mince 3 garlic cloves; grate or finely chop 300 g tomatoes; measure rice, saffron, smoked paprika and salt; chop 15 g parsley. (mise en place complete)
  • 16:30: Paella — Place 30 cm paella pan over medium heat, add 45 ml olive oil; sauté onion 5–6 minutes until translucent, add garlic 1 minute, add grated tomato and 3 g smoked paprika and cook sofrito 6–7 minutes until reduced.
