  2. Add the 1.5 lb thinly sliced pork shoulder to half the marinade (reserve the other half in the bowl). Toss to coat, cover with plastic wrap and set aside to marinate 30 minutes.

  • 4:48 PM: (Bun Cha) Grill remaining patties and any remaining slices in second batches (again 3–4 minutes per side for patties; 2–3 minutes per side for slices). Use short bursts so no single continuous work exceeds ~12–15 minutes.
  • 4:52 PM: (Rice vermicelli) Add noodles to boiling water; cook 4–6 minutes until tender. While noodles cook, give final sear to any slices that need color.
  • 4:55 PM: (Rice vermicelli) Drain noodles, rinse briefly under warm water, toss with 1 tsp oil and transfer to serving bowl; cover. Finish grilling or resting: tent grilled meat; squeeze 2 lime wedges over meat if desired.
