Levantine Sunday Roast

A focused Middle Eastern Sunday dinner built around a simply roasted frenched rack of lamb with a bright pomegranate pan sauce, paired with nutty freekeh pilaf, sumac-roasted root vegetables, a finish-to-order Fattoush, cooling labneh-tahini and warm pita — all timed so one cook can execute from a cold start inside the allowed window.

  • Name of the meal: Levantine Sunday Roast
  • Cuisine type: Middle Eastern
  • Serve time: 5:00 PM

This menu is built around a single, well-executed centerpiece: a frenched rack of lamb roasted to medium-rare and finished with a glossy pomegranate pan sauce. Supporting dishes — a tender freekeh pilaf with toasted almonds, sumac-roasted carrots and parsnips, a bright Fattoush dressed at the last minute, and a cooling labneh-tahini — provide textural contrast and Levantine flavors while being scheduled so one competent cook can complete everything from cold within the cooking window.

  • Instant-read meat thermometer
  • Small sauté pan (8-inch)
  • Cutting board, chef’s knife
  • Small bowl, tongs
  • Aluminum foil

Ingredients (serves 5)

  • Frenched lamb racks — 2 racks (approx 2.75 lb total)
  • Olive oil — 2 tablespoons (30 ml)
  • Ground sumac — 2 teaspoons (4 g)
  • Kosher salt — 1 1/2 teaspoons (9 g)
  • Ground black pepper — 1 teaspoon (2 g)
  • Garlic, minced — 3 cloves (about 1 tablespoon, 9 g)
  • Lemon zest — 1 teaspoon (2 g)
  • Pomegranate molasses — 2 tablespoons (30 ml)
  • Chicken stock — 1/2 cup (4 fl oz / 120 ml)
  • Unsalted butter, cold — 2 tablespoons (1 oz / 28 g)
  • Honey — 1 tablespoon (21 g)
  • Lemon juice — 1 tablespoon (15 ml)
  • Fresh parsley, minced — 2 tablespoons (8 g) for garnish

Practical substitutions

  • If pomegranate molasses is unavailable: use 3 tablespoons pomegranate juice reduced to 2 tablespoons plus 1 teaspoon balsamic vinegar.

Cooking / Baking

  • Oven: 425°F (218°C)
  • Target internal temperature: remove at 125°F (52°C) for medium-rare (will carry to ~130–135°F while resting).
  • Total cook time: 55 minutes (15 minutes active prep + 25 minutes roast + 15 minutes rest)

Instructions

  1. Remove lamb from refrigerator 5 minutes before starting work. Pat dry with paper towels and place on cutting board.
  2. Preheat oven to 425°F (218°C).
  3. In a small bowl combine 2 tbsp olive oil, 3 minced garlic cloves, 2 tsp ground sumac, 1 1/2 tsp kosher salt, 1 tsp ground black pepper and 1 tsp lemon zest. Rub evenly over meat and between bones where accessible.
  4. Place racks bone-side down on the roasting pan; set in the oven and roast for 25 minutes. Insert an instant-read thermometer into the thickest part between bones at 20 minutes to check progress.
  5. While lamb roasts, make pan sauce: heat an 8-inch sauté pan over medium heat, add 2 tbsp pomegranate molasses, 1/2 cup chicken stock and 1 tbsp honey; simmer 3 minutes, stirring, until slightly reduced. Remove pan from heat and whisk in cold butter 1 tablespoon at a time until sauce is glossy. Add 1 tbsp lemon juice and hold warm on the lowest setting; if necessary rewarm gently before service (do not boil).
  6. Remove racks when thermometer reads 125°F (52°C). Tent loosely with foil and let rest 15 minutes on a cutting board; temperature will rise slightly.
  7. At service, carve between the bones into individual chops and spoon warmed pomegranate pan sauce over each portion. Garnish with 2 tbsp minced parsley.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: extra pomegranate molasses, crushed Aleppo pepper or mild red pepper flakes (for adults), extra lemon wedges.
  • Global substitution notes: labneh may be substituted with full-fat Greek yogurt (drain 20–30 minutes same day if desired). Pomegranate molasses can be substituted with reduced pomegranate juice + splash of balsamic (see recipe). Freekeh can be substituted with pearl couscous if unavailable.
  • Child-safety notes: keep children away from the oven when removing the lamb and roasted vegetables and while pita warms. Carving lamb involves a hot pan and knife; keep kids clear.
  • Explicit timeline risk(s): the tightest execution window is 4:20–4:50 PM when the lamb and vegetables share the oven while freekeh simmers on the stove. Risk is oven overcrowding or missing the lamb temperature target.
  • Tightest execution window and why risky: 4:20–4:50 PM is risky because the cook must monitor oven-roasting two items and stove-simmering freekeh simultaneously; there's little slack for mistakes.
  • Practical mitigation mindset: complete all mise en place before the 4:20 PM oven steps (chop vegetables, have sauce components measured, almonds toasted). Use an instant-read thermometer to judge lamb doneness rather than clock time; rotate pans at the 12–17 minute mark if oven hot spots appear; prioritize lamb internal temp (sides can be kept warm under foil for a few minutes).
  • Latest safe start time: You can start as late as 3:55 PM for a 5:00 PM serve.
