Roasted Sunday dinners

Roasting is dry oven heat working on something large enough to develop a crust before the middle overcooks. It is the classic Sunday method because it scales to a table without scaling the cook's attention: the oven holds a steady temperature for an hour while everything else gets made. Resting is not optional — a roast carved straight out of the oven loses to the cutting board what it spent an hour gaining.
