Instructions

  1. Preheat oven to 450°F and line the baking sheet with foil.
  2. Prick each eggplant 6–8 times with a fork, place on the baking sheet.
  3. Roast in the center of the oven for 30–35 minutes, turning once halfway, until skin is deeply blistered and flesh collapses.
  4. Remove from oven and let cool 8 minutes on the sheet until safe to handle.
  5. Trim the stem, split open and scoop flesh into a colander to drain 2–3 minutes, then transfer to the food processor.
  6. Add tahini, lemon juice, garlic, olive oil, salt and smoked paprika. Pulse 6–8 times until slightly chunky but well combined (or smoothly blended to preference).
  7. Transfer to a serving bowl, smooth surface, and drizzle 1 tsp (5 ml) olive oil on top if desired.
  8. Serve at room temperature. Hold time: can sit at room temperature once finished.

Jeweled Basmati Rice (with vermicelli, almonds, raisins, pomegranate)

Practical substitutions: If pomegranate arils are unavailable, substitute 2 tbsp dried cranberries and omit the 2 tbsp raisins (use 4 tbsp dried fruit total).

Instructions

  1. Rinse rice in a fine mesh strainer under cold water until drain runs clear (about 1 minute). Drain well.
  2. Heat the small skillet over medium, add vermicelli and toast, stirring constantly, until golden brown, about 2–3 minutes. Transfer vermicelli to the saucepan.
  3. Add 1 tbsp olive oil to the saucepan with vermicelli, return to medium heat, add drained rice, and stir 1 minute to coat and lightly toast.
  4. Add 1 3/4 cups (420 ml) water and 3/4 tsp salt. Bring to a boil uncovered over medium-high (2–3 minutes).
  5. Once boiling, reduce heat to low, cover tightly and simmer undisturbed 18 minutes.
  6. Remove from heat and let rest, covered, 7 minutes.
  7. Fluff with fork, stir in raisins and toasted almonds, and sprinkle pomegranate arils just before serving at 4:45 PM. Keep covered and warm until plated at service.

  • Active cook time on grill: 6–8 minutes per batch (total 8 minutes for this quantity if cooked together)
  • Internal temp target for ground lamb: 160°F (71°C) for safety (use instant-read thermometer)
  • Total cook time (mixing, shaping, grilling): 30 minutes

Instructions

  1. In a large bowl combine ground lamb, grated and squeezed onion, parsley, minced garlic, cumin, coriander, allspice, 1 tsp salt and 1/4 tsp pepper. Mix gently but thoroughly until uniform (about 1–2 minutes).
  2. Divide mixture into 6 equal portions (~65 g each). Wet hands slightly, press each portion onto a skewer into 4–5" logs, smoothing seams.
  3. Brush kofta lightly with 1 tbsp olive oil and set on a plate while you heat the grill pan over medium-high until hot (2–3 minutes). If using outdoor grill, preheat to medium-high.
  4. Place skewers on the hot pan/grill. Cook 3–4 minutes per side (total 6–8 minutes) rotating once until nicely charred and internal temperature reaches 160°F (71°C).
  5. While skewers rest 2 minutes off heat, make drizzle: in a small bowl whisk tahini, lemon juice, warm water, minced garlic, 1/8 tsp salt until pourable — add water 1 tsp at a time if too thick. Stir in 1 tsp olive oil.
  6. Plate kofta immediately and spoon 1–2 tbsp lemon-tahini over the kofta (serve extra on the side). Finish-to-order: begin grilling so the final turn lands within 5 minutes of the 5:00 PM serve time.

Shirazi Cucumber–Tomato Salad with Sumac and Mint (finish-to-order)

3. LINEAR TIMELINE (3:50 PM–5:00 PM)

  • 3:50 PM: Baba Ganoush — Preheat oven to 450°F; prick 2 eggplants, place on baking sheet and put into oven to roast (start 35 minutes roast).
  • 3:55 PM: Timeline housekeeping — set out all ingredients and tools for rice and kofta; soak wooden skewers if using (not needed for metal).
  • 4:10 PM: Jeweled Rice — Measure and rinse 1 cup basmati rice; break and toast 1/4 cup vermicelli in small skillet over medium for 2–3 minutes.
  • 4:13 PM: Jeweled Rice — Add vermicelli to 2.5–3 qt saucepan with 1 tbsp olive oil, add drained rice, stir 1 minute, add 1 3/4 cups water and 3/4 tsp salt, bring to boil.
  • 4:20 PM: Jeweled Rice — Reduce to low, cover and simmer rice undisturbed for 18 minutes (to 4:38 PM).
  • 4:25 PM: Baba Ganoush — Remove roasted eggplants from oven (finish roast), let cool on sheet 8 minutes.
  • 4:33 PM: Baba Ganoush — Scoop flesh into food processor, add tahini, 1 tbsp lemon juice, 2 cloves garlic, 1 tbsp olive oil and 1 tsp salt; process to texture preferred, transfer to bowl and reserve at room temperature.
  • 4:35 PM: Grilled Lamb Kofta — Begin mixing kofta: combine 400 g ground lamb, grated onion, parsley, 1 garlic clove, cumin, coriander, allspice, 1 tsp salt and 1/4 tsp pepper; mix 2 minutes until uniform.
  • 4:38 PM: Jeweled Rice — Remove rice from heat and let rest covered for 7 minutes.
  • 4:41 PM: Jeweled Rice — Fluff rice with fork, stir in raisins and toasted almonds, cover and keep warm; sprinkle pomegranate arils in shortly before plating.
  • 4:43 PM: Grilled Lamb Kofta — Divide mixture and shape onto 6 skewers (about 4–5" logs); brush 1 tbsp olive oil over kofta and get grill pan heating to medium-high.
  • 4:45 PM: Jeweled Rice — Final garnish: fold in pomegranate arils and keep covered and warm until served (finish time 4:45 PM).
  • 4:47 PM: Grilled Lamb Kofta — Place skewers on hot grill pan (or grill). Cook 3–4 min, then rotate.
  • 4:50 PM: Shirazi Salad — Assemble the cucumber, tomatoes, onion and mint in a bowl but do NOT add dressing yet; keep covered on counter.
  • 4:51 PM: Grilled Lamb Kofta — Turn skewers; continue grilling second side 3–4 min until internal temperature 160°F (71°C).
  • 4:55 PM: Grilled Lamb Kofta — Remove from heat and rest 1–2 minutes on plate; while resting, finish lemon-tahini drizzle (whisk tahini, 1 tbsp lemon juice, warm water, 1 clove minced garlic, 1/8 tsp salt and 1 tsp olive oil).
  • 4:56 PM: Shirazi Salad — Dress salad with 1 tbsp lemon juice, 1 tbsp olive oil, 1/2 tsp sumac, 1/8 tsp salt and a pinch of pepper; toss and transfer to serving bowl immediately.
