Pan-Seared Lamb Chops with Lemon-Garlic Herb Butter Sauce

Equipment

  • 12-inch heavy skillet (preferably cast iron)
  • Instant-read thermometer
  • Tongs
  • Small bowl and spoon
  • Measuring spoons and cups
  • Plate and foil for resting

Ingredients

  • Lamb loin chops, frenched or trimmed — 2.00 lb (about 8 small chops)
  • Kosher salt — 1 1/2 tsp
  • Ground black pepper — 3/4 tsp
  • Olive oil — 2 tbsp
  • Unsalted butter — 3 tbsp
  • Garlic — 3 cloves, smashed then minced
  • Fresh lemon juice — 2 tbsp (juice of 1/2 lemon)
  • Fresh flat-leaf parsley — 1/4 cup, finely chopped
  • Dried oregano — 1 tsp
  • Low-sodium chicken broth — 1/2 cup

Practical substitutions

  • If lamb loin chops are unavailable, use 2.00 lb boneless lamb leg steaks cut 3/4–1" thick (cook times similar).
  • If low-sodium chicken broth is not stocked, use vegetable broth (same quantity).

Cooking / Baking

  • Target internal temperature: 145°F for medium (carryover and 3-minute rest recommended).
  • Total active cook time: 11–12 minutes (plus 3 minutes rest).

Instructions

  1. Remove chops from refrigerator and pat dry. Season both sides evenly with 1 1/2 tsp kosher salt and 3/4 tsp black pepper; place on a plate and hold at room temperature while you work on sides (they will rest ~25–30 minutes before cooking).
  2. Make the herb butter: in a small bowl combine 3 tbsp unsalted butter (softened), 3 minced garlic cloves, 1/4 cup chopped parsley, 1 tsp dried oregano, and 2 tbsp lemon juice. Stir and set near the stove.
  3. Heat a 12-inch skillet over medium-high for 2 minutes until very hot. Add 2 tbsp olive oil and swirl.
  4. Sear chops, working in a single layer without crowding: cook 3–4 minutes on the first side undisturbed until a deep brown crust forms.
  5. Flip with tongs and continue cooking 3–4 minutes on second side. Add the prepared herb butter to the pan and tilt the pan, spooning melted butter over the chops for 1–2 minutes while the butter foams.
  6. When an instant-read thermometer reads 140–145°F, remove chops to a plate; tent loosely with foil and let rest 3 minutes (carryover will reach ~145°F). Spoon any pan juices over chops before serving.
  7. While chops rest, pour pan juices into a small skillet, add 1/2 cup low-sodium chicken broth, bring to a simmer to deglaze and reduce for 1–2 minutes, then spoon over chops on plates.

Total cook time: 11–12 minutes active (plus resting 3 minutes).

Lemon-Parsley Israeli Couscous

Not gluten-free: couscous.

Not low-carb: couscous.

Equipment

  • 2-quart saucepan with lid
  • Wooden spoon
  • Measuring cups and spoons

Ingredients

  • Israeli (pearl) couscous — 2.00 cups (dry)
  • Olive oil — 2 tbsp
  • Unsalted butter — 1 tbsp
  • Low-sodium chicken broth — 2 1/4 cups
  • Garlic — 1 clove, minced
  • Kosher salt — 1 tsp
  • Fresh flat-leaf parsley — 1/2 cup, chopped
  • Lemon — 1 lemon (zest and juice)

Practical substitutions

  • If Israeli (pearl) couscous is unavailable, substitute regular fine (Moroccan) couscous: use 2.00 cups dry plus 2 1/4 cups boiling water, cover and remove from heat for 5 minutes, then fluff (texture will be lighter; cook method differs).
  • If low-sodium chicken broth unavailable, use vegetable broth.

Cooking / Baking

  • Total active cook time: 11 minutes (3–4 minutes to toast + ~7–8 minutes simmer)
  • Simmer gently covered until liquid is absorbed.

Instructions

  1. Heat a 2-quart saucepan over medium heat. Add 2 tbsp olive oil and 1 tbsp butter. When butter foams, add 1 minced garlic clove and sauté 20–30 seconds until fragrant, not browned.
  2. Add 2 cups Israeli couscous and toast, stirring, for 3–4 minutes until pearls show light color change and smell nutty.
  3. Pour in 2 1/4 cups low-sodium chicken broth and 1 tsp kosher salt. Bring to a gentle boil, then reduce heat to low, cover, and simmer 7–8 minutes until liquid is absorbed and couscous is tender but not mushy.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper flakes and extra lemon wedges may be offered at the table for adults who want extra heat or brightness.
  • Global substitution: Israeli couscous may be substituted with regular (Moroccan) couscous using the adjusted method in the recipe. Lamb can be substituted with boneless lamb leg steaks if chops are unavailable.
  • Child-safety notes: Lamb chops may contain small bones; cut into bite-sized pieces for children. Keep children away from hot pans and the oven during the roast and sear steps.
  • Explicit timeline risks:
    • The tightest execution window is the lamb sear (4:48–5:00 PM). It requires hot pan timing and immediate attention; over-searing will overcook, under-searing may not form a proper crust.
    • Mitigation mindset: have all mise ready before starting the lamb (butter mix, thermometer, tongs); preheat the pan thoroughly and monitor temp with an instant-read thermometer rather than relying on timing alone.
  • Latest safe start time: You can start as late as 4:05 PM for a 5:00 PM serve.
