  • 2 tablespoons fresh ginger, minced
  • 1 clove garlic, minced

  • 1 teaspoon mustard seeds

Instructions

  6. Add tamarind paste and pour in one can of coconut milk (13.5 oz), stir to loosen browned bits. Add second can of coconut milk and 1/2 cup water to make enough sauce. Bring to a gentle boil, then reduce heat to low, cover partially, and simmer gently for 40 minutes, stirring once or twice to prevent sticking. (4:05–4:45 PM)
  7. After 40 minutes, test a piece of lamb for tenderness — it should be fork-tender. If still firm, continue simmering uncovered for up to 10 more minutes. Adjust salt (add up to 1/4 tsp more if needed).

3. LINEAR TIMELINE (3:25 PM–5:00 PM)

  • 3:25 PM: (Kerala-Style Lamb & Coconut Curry) Trim and cube 2.5 lb lamb; measure spices and chop 2 medium onions, mince ginger and garlic; set spices in a small bowl. Preheat Dutch oven over medium-high.
