Moroccan Market Supper

A bright, spice-forward North African supper centered on grilled ras el hanout lamb cutlets with a honey‑orange glaze, served with smoky zaalouk, orange-scented couscous and a tender semolina‑almond cake; balanced, textural contrasts and kid‑friendly sweetness make this a family sitting worth slowing down for.

2. FULLY EXECUTABLE RECIPES

Grilled Ras el Hanout Lamb Cutlets with Honey-Orange Glaze

Equipment

  • 12-inch (30 cm) heavy grill pan or outdoor grill (grate wide enough for 8 cutlets)
  • Instant-read thermometer
  • Small mixing bowl
  • Measuring spoons
  • Tongs
  • Plate lined with foil for brief resting

Ingredients

  • Lamb rib cutlets (French-trimmed): 1.00 kg total (about 8 medium cutlets)
  • Ras el hanout: 2 tsp (≈ 8 g)
  • Sweet paprika: 2 tsp (≈ 6 g)
  • Garlic, minced: 2 cloves (≈ 8 g)
  • Olive oil: 2 tbsp (30 ml) ⁺
  • Honey: 1 tbsp (21 g)
  • Orange zest: 1 tsp (from 1 orange) ⁺
  • Fresh orange juice: 1 tbsp (15 ml) ⁺
  • Kosher salt: 1 tsp (6 g) ⁺
  • Ground black pepper: 1/2 tsp (1.5 g) ⁺

Practical substitutions: If ras el hanout is unavailable, substitute 1 tsp ground cumin + 1 tsp ground coriander + 1/2 tsp cinnamon + pinch of ground allspice.

Cooking / Baking

  • Total cook time: 16 minutes active + 20 minutes marinade (marinade starts within the cooking window; no long marinating required)
  • Target internal temperature: 60°C (140°F) for medium; remove 2–3°C (5°F) below if you prefer resting to reach final temp.

Instructions

  1. Combine marinade: in small bowl whisk ras el hanout, paprika, minced garlic, olive oil, honey, orange zest, orange juice, salt and pepper.
  2. Place lamb cutlets on a rimmed plate. Rub both sides with marinade, coating evenly. Let sit to marinate while other items cook — 20 minutes is sufficient.
  3. At 5 minutes before cooking the lamb, preheat grill pan over high heat until very hot and smoking slightly, or preheat outdoor grill to high (230–260°C surface).
  4. Blot excess wet marinade with a paper towel (to avoid excessive smoke). Oil the grill lightly or brush cutlets with a touch more olive oil.
  5. Grill cutlets: place cutlets on the hot grill, cook 3–4 minutes without moving, flip and cook 3–4 minutes more for medium (aim for 60°C internal). Use instant-read thermometer in the thickest part (between bones).
  6. Transfer to a warm plate and rest for 3–5 minutes (do not rest longer than ~15 minutes). During resting spoon any pan drippings lightly over cutlets, or brush a little extra honey if a shinier glaze is desired.
  7. Plate and serve immediately (finish-to-order).

Zaalouk — smoky eggplant & tomato dip

Equipment

  • Baking sheet (if broiling/char‑roasting eggplants) OR 12-inch skillet (stovetop charring)
  • 12-inch heavy skillet
  • Chef’s knife
  • Cutting board
  • Potato masher or sturdy fork
  • Wooden spoon

Ingredients

  • Large eggplants: 2 (about 800 g total)
  • Ripe tomatoes: 400 g (about 3 medium)
  • Olive oil: 3 tbsp (45 ml) ⁺
  • Garlic, minced: 2 cloves (≈ 8 g) ⁺
  • Ground cumin: 1 tsp (2 g)
  • Sweet paprika: 1 tsp (3 g)
  • Smoked paprika: 1/2 tsp (1.5 g)
  • Granulated sugar: 1 tsp (4 g) ⁺
  • Kosher salt: 1½ tsp (9 g) ⁺
  • Fresh parsley, chopped: 2 tbsp (8 g)
  • Lemon juice: 1 tsp (5 ml)

Practical substitutions: If tomatoes are out of season, substitute 1 can (400 g) of whole peeled tomatoes, drained and coarsely chopped; reduce added liquid accordingly.

Cooking / Baking

  • Total cook time: 30 minutes

Instructions

  1. Char eggplants: Oven method — preheat broiler to high and place whole eggplants on a rimmed baking sheet under broiler, turning every 5 minutes, until skin is collapsed and flesh is blackened, about 12–15 minutes total. Stovetop method — place directly on a gas burner or on a very hot dry skillet, turning until blackened and collapsed, 12–15 minutes.
  2. When charred, transfer eggplants to a bowl and cover 5 minutes to steam; then peel and roughly chop the flesh, discarding most skin and stem.
  3. Prep tomatoes: score skins, blanch in boiling water 30 seconds, shock in cold water, peel and chop (or use canned as noted).
  4. Heat 3 tbsp olive oil in 12-inch skillet over medium heat. Add minced garlic and sauté 30 seconds.
  5. Add chopped tomatoes, cumin, sweet paprika, smoked paprika, sugar and salt. Cook, stirring, 8–10 minutes until tomatoes have broken down into a thick sauce.
  6. Add chopped eggplant flesh and mash/stir into the tomato base with potato masher or fork; cook 6–8 minutes more, stirring so moisture reduces and mixture is thick but still moist. Taste and adjust salt.
  7. Remove from heat, stir in lemon juice and chopped parsley.
  8. Transfer to a serving bowl; zaalouk holds at warm or room temperature for service.

Orange & Almond Couscous with Toasted Almonds and Raisins

Equipment

  • Small skillet (for toasting almonds)
  • Fork for fluffing

  • Raisins: 50 g
  • Orange zest: 1 tsp (from 1 orange) ⁺

Practical substitutions: If instant couscous is unavailable, fine bulgur cracked wheat (fine) can be used; cook per packet instructions with same liquid ratio.

Cooking / Baking

  • Total cook time: 12 minutes

5. NOTES & ASSUMPTIONS

  • Optional table-side items: extra mild harissa and extra honey for finishing the lamb; extra orange blossom water or mint for drinks.
  • Global substitutions: vegetable broth may be substituted with low-sodium chicken broth or water + 1 tsp vegetable bouillon; ras el hanout may be approximated as cumin + coriander + cinnamon + allspice (see recipe substitution).
  • Child-safety notes: grill pan and oven will be hot simultaneously near service; keep children away from stove/oven area while searing; supervise any child near the table when hot plates are present.
  • Timeline risk(s): the tightest execution window is 16:50–17:00 when the lamb must be hot-grilled and plating occurs while final garnishes are laid out. If the grill pan is not preheated fully or lamb sticks, timing will slip.
  • Practical mitigation mindset: preheat the grill pan early (start heating by 16:50), have tongs and thermometer ready, and plate couscous and zaalouk on warm dishes before you begin the final sear so you only need to place cutlets and serve. If the grill is overloaded, sear in two batches and keep finished pieces loosely tented for no more than 5 minutes.
  • Latest safe start time: You can start as late as 16:00 for a 17:00 serve.
