Seoul Homestyle Braised Short Ribs Supper

A comforting Korean home-style supper built around tender braised short ribs in a sweet-savory soy broth, balanced by bright cucumber salad, sesame-seasoned spinach, steaming short-grain rice and a hot kimchi pancake finished at the last minute — classic banchan rhythm with a pairing of sparkling citron for kids and a bottle of makgeolli for adults.

Braised Beef Short Ribs (Galbijjim-style)

Equipment

  • 6-quart electric pressure cooker (Instant Pot) OR 5–6 quart heavy Dutch oven with tight-fitting lid (see substitution)
  • 10" skillet or small sauté pan (for searing if using Dutch oven)
  • Chef's knife, cutting board

Ingredients (2 servings)

  • Beef short ribs, bone-in — 1.5 lb (trim excess fat)
  • Vegetable oil — 2 tbsp ⁺
  • Yellow onion — 1 small (about 1 cup sliced)
  • Carrot — 1 medium (about 6 oz), cut into 1-inch chunks
  • Garlic — 4 cloves, minced ⁺
  • Fresh ginger — 1 inch, peeled and thinly sliced (about 1 tbsp)
  • Soy sauce — 4 tbsp (1/4 cup) ⁺
  • Mirin (or sake as substitution) — 2 tbsp (see substitutions)
  • Brown sugar — 2 tbsp
  • Water — 2 cups ⁺
  • Toasted sesame oil — 1 tbsp ⁺
  • Cornstarch — 1 tsp (for light thickening)
  • Toasted sesame seeds — 1 tsp ⁺
  • Scallions — 2, sliced on bias for garnish ⁺
  • Kosher salt — 1 tsp ⁺
  • Black pepper — 1/4 tsp

Practical substitutions:

  • If you do not have a pressure cooker, use a 5–6 quart Dutch oven and braise in a 325°F oven for 90–100 minutes after searing (see Cooking / Baking below).
  • If mirin/sake unavailable, use dry sherry (2 tbsp) or omit and add 1 tbsp extra water + 1 tsp sugar.

Cooking / Baking

  • Instant Pot / Pressure cook: Sear + 45 minutes High Pressure + ~10–15 minute natural release. Total cook time: ~85 minutes (includes sear, pressure build, NR).
  • Dutch oven braise substitution: Sear, then braise in 325°F oven 90–100 minutes until ribs are fork-tender.

Total cook time: 1 hour 25 minutes (pressure cooker method). If using Dutch oven: 2 hours total; use only if you can start earlier than 3:15 PM (this plan assumes Instant Pot; Dutch oven option is slower).

Instructions

  1. (Prep) Pat short ribs dry, trim excess loose fat, and season lightly with 1 tsp kosher salt and 1/4 tsp black pepper. Slice onion and carrot; mince garlic and slice ginger. Set scallions aside for garnish.
  2. (Sear) Select Sauté/High on the Instant Pot. Add 2 tbsp vegetable oil and let heat until shimmering. Sear ribs in batches 2–3 minutes per side until well browned (total ~8 minutes). Transfer seared ribs to a plate.
    • If using a Dutch oven, heat oil on stovetop over medium-high and sear the same way in the Dutch oven.
  3. (Aromatics) With pot on Sauté, add sliced onion, garlic and ginger; cook 2 minutes stirring to soften and deglaze the pan with a splash of soy mixture, scraping browned bits.
  4. (Deglaze and assemble) In a small bowl combine 4 tbsp soy sauce, 2 tbsp mirin, 2 tbsp brown sugar and 2 cups water. Pour into pot, stir to combine and scrape the bottom to remove fond. Return ribs and carrots to the pot so liquid covers at least half the ribs.
  5. (Pressure cook) Secure lid, set vent to SEAL, program High Pressure for 45 minutes. The pot will take ~10–15 minutes to come to pressure; that time is part of the schedule.
  6. (Natural release) When cook time completes, allow natural release 10–15 minutes, then carefully release remaining pressure and open lid.
  7. (Finish) Transfer ribs to a serving dish and set aside. Set Instant Pot to Sauté/Medium. Mix 1 tsp cornstarch with 1 tbsp cold water, add to simmering sauce and cook 2–3 minutes until slightly thickened. Stir in 1 tbsp toasted sesame oil. Taste and adjust salt with up to 1/4 tsp more kosher salt if needed.
  8. (Garnish) Spoon sauce and vegetables over ribs, scatter 1 tsp toasted sesame seeds and sliced scallions. Keep warm until service; this dish holds for up to 15 minutes before serve.

Kimchi Pancake (Kimchi Jeon)

Equipment

  • 10" nonstick or well-seasoned cast-iron skillet

Ingredients (2 servings; makes two medium pancakes)

  • All-purpose flour — 3/4 cup
  • Cold water — 1/3 cup
  • Large egg — 1
  • Kimchi, well-drained and chopped — 3/4 cup (about 6 oz), plus 2 tbsp kimchi juice
  • Scallions — 2, sliced into 2" pieces ⁺
  • Vegetable oil — 2 tbsp ⁺
  • Kosher salt — 1/8 tsp

Practical substitutions:

  • If you can't find prepared kimchi, use 3/4 cup well-drained sauerkraut seasoned with 1/2 tsp sugar and 2 tsp sesame oil, but authentic kimchi is recommended.

  • Pan-fry: batter mix 3–4 minutes; fry 6–8 minutes total (two turns/edges). Total cook time: ~12 minutes active; plan to finish within ~5 minutes of service.

Instructions

  1. (Mix batter) In a bowl whisk 3/4 cup flour, 1/3 cup cold water, and 1 egg until smooth. Stir in chopped kimchi and 2 tbsp kimchi juice, sliced scallions and 1/8 tsp kosher salt. Batter should be thick but pourable — add up to 1 tbsp more water if too stiff.
  2. (Heat pan) Heat 10" skillet over medium. Add 1 tbsp vegetable oil and swirl.
  3. (Fry) Pour half the batter into the pan and spread to ~7–8" circle. Fry 3–4 minutes until bottom is golden and edges set. Add 1/2 tbsp oil around edges if needed, flip carefully, and fry 2–4 minutes until golden and crisp. Transfer to a rack or paper towel-lined plate. Repeat with remaining batter.
  4. (Serve) Cut into wedges and serve immediately. This is a finish-to-order dish: do not make more than 8–10 minutes ahead; best served within a few minutes of plating.

Steamed Short-Grain Rice

Equipment

  • 2-quart heavy saucepan with tight-fitting lid OR rice cooker (preferred)

Ingredients (2 servings)

  • Short-grain white rice — 1 cup (dry)
  • Water — 1 1/4 cups

Practical substitutions:

  • If only medium-grain rice available, use same water ratio but expect slightly less sticky texture.

Cooking / Baking

  • Stove-top absorption method: rinse, soak briefly, simmer 18 minutes, rest 10 minutes. Total cook time: 30–40 minutes (including rest).

Instructions

  1. (Rinse) Place 1 cup rice in sieve and rinse under cold water until water runs mostly clear. Drain 1–2 minutes.
  2. (Cook) Place rinsed rice and 1 1/4 cups water in heavy saucepan, cover, bring to a boil over high heat. As soon as it boils, reduce heat to low and simmer, covered, for 18 minutes—do not lift the lid.
  3. (Rest) Remove from heat and keep covered for 10 minutes. Fluff with fork just before serving.

Seasoned Spinach (Sigeumchi Namul)

Equipment

  • 2-quart pot for blanching

Ingredients (2 servings)

  • Baby spinach — 6 oz (one small bag)
  • Garlic — 1 clove, minced ⁺
  • Soy sauce — 1 tbsp ⁺
  • Toasted sesame oil — 1 tsp ⁺
  • Toasted sesame seeds — 1 tsp ⁺
  • Kosher salt — 1/8 tsp

Cooking / Baking

  • Blanch and season: Total cook time: 8 minutes (including blanching and squeezing).

Instructions

  1. (Boil) Bring 2 quarts water to a rolling boil; add a pinch of salt.
  2. (Blanch) Add spinach and blanch 30 seconds until just wilted. Immediately transfer spinach to strainer and run under cold water to stop cooking. Drain and squeeze out excess water with hands or towel.
  3. (Season) Place squeezed spinach in a bowl, add 1 clove minced garlic, 1 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp sesame seeds and 1/8 tsp salt. Toss and mound on serving dish. Hold at room temperature up to 15 minutes before service.

Quick Cucumber Salad (Oi Muchim)

Equipment

Ingredients (2 servings)

  • Persian cucumber (or 1/2 English cucumber) — 1 medium
  • Rice vinegar — 1 tbsp
  • Granulated sugar — 1 tsp
  • Soy sauce — 1/2 tsp ⁺
  • Toasted sesame oil — 1/2 tsp ⁺
  • Garlic — 1/2 clove, minced ⁺
  • Kosher salt — 1/4 tsp
  • Optional at table: gochugaru pinch ⁰

Practical substitutions:

  • If rice vinegar is unavailable, use white wine vinegar with 1/4 tsp sugar extra.

Cooking / Baking

  • No cook; mix and toss immediately prior to serving. Total prep time: 5 minutes.

Instructions

  1. (Slice) Thinly slice cucumber on a bias into 1/8" pieces and place in bowl.
  2. (Mix dressing) Whisk rice vinegar, 1 tsp sugar, 1/2 tsp soy sauce, 1/2 tsp sesame oil, 1/2 clove minced garlic and 1/4 tsp salt.
  3. (Dress) Toss cucumber with dressing and serve immediately. Do not dress earlier than ~5 minutes before service.

Citron Sparkling Soda (kid-friendly)

Equipment

Ingredients (2 servings)

  • Sparkling water — 24 fl oz (12 fl oz per serving)
  • Yuzu/citron marmalade (store-bought yuja marmalade) — 4 tbsp (2 tbsp per serving)
  • Lemon — 1 small, sliced (for 2 slices)

Cooking / Baking

  • No cook. Chill sparkling water and marmalade if possible.

Total prep time: 2 minutes (plus chilling)

Instructions

  1. (Serve) Place 2 tbsp marmalade into each glass, add 12 fl oz sparkling water, stir gently, add lemon slice and serve chilled.

Makgeolli (adult beverage)

Equipment

  • Wine or small ceramic bowls (optional)
  • Bottle opener (if needed)

Ingredients (2 servings)

  • Makgeolli (Korean rice wine), chilled — 1 bottle (750 ml). Serve about 6–8 fl oz per adult.

Cooking / Baking

  • No cook. Purchase 1 chilled bottle. Pour into bowls or glasses and serve.

Instructions

  1. (Serve) Chill bottle. Gently shake or invert once (if unfiltered makgeolli) then pour 6–8 fl oz per adult into small bowls or glasses.

3. LINEAR TIMELINE (3:15 PM–5:00 PM)

  • 3:15 PM: (Braised Beef Short Ribs) Begin mise en place: pat 1.5 lb short ribs dry, trim excess fat, slice 1 small onion, cut 1 carrot into 1" chunks, mince 4 cloves garlic and slice 1" ginger; measure soy, mirin, brown sugar and water.
  • 3:30 PM: (Braised Beef Short Ribs) Heat Instant Pot on Sauté High, add 2 tbsp vegetable oil, sear short ribs 2–3 minutes per side until brown (total ~8 minutes); transfer seared ribs to plate.
  • 3:38 PM: (Braised Beef Short Ribs) In same pot sauté onion, garlic and ginger 2 minutes; deglaze with soy/mirin/brown sugar/water mixture, return ribs and carrots to pot.
  • 3:40 PM: (Braised Beef Short Ribs) Seal Instant Pot and set High Pressure 45 minutes (cook will run 3:40–4:25; pressure build is included). Start kitchen timer.
  • 3:42 PM: (General prep) While pressure builds, rinse 1 cup short-grain rice and drain; set aside in sieve. Chop kimchi (3/4 cup) and slice 4 scallions; measure flour and egg for kimchi pancake batter.
  • 3:50 PM: (General prep) Prep spinach package (wash, drain) and bring a 2-quart pot of water to boil for later blanching; set out utensils, oil, and pans for jeon.
  • 4:10 PM: (Steamed Rice) Start stove-top rice: put rinsed rice and 1 1/4 cups water in saucepan, bring to a boil, then reduce to low for an 18-minute simmer (4:10–4:28).
  • 4:20 PM: (Pressure cooker running) Use this quiet window to set out serving dishes and prepare cucumber (wash) but DO NOT slice or dress cucumber yet; set kimchi batter bowl ready but do not mix wet ingredients yet.
  • 4:25 PM: (Braised Beef Short Ribs) Instant Pot finishes cooking; begin natural release (allow ~10–15 minutes). Keep an eye on rice simmer.
  • 4:28 PM: (Steamed Rice) Rice simmer completes; remove from heat and let rest, covered, for 10 minutes (rest 4:28–4:38).
  • 4:35 PM: (Seasoned Spinach) Bring blanching water back to a rapid simmer if needed; blanch spinach 30 seconds, shock in cold water, squeeze dry and season with 1 clove minced garlic, 1 tbsp soy sauce, 1 tsp sesame oil and 1 tsp sesame seeds; plate and hold at room temp (finished ~4:35).
  • 4:40 PM: (Braised Beef Short Ribs) After ~10–15 minute natural release, open Instant Pot, transfer ribs to serving dish, set to Sauté/Medium and reduce sauce 2–3 minutes; stir in 1 tbsp sesame oil, thicken with 1 tsp cornstarch slurry if desired; spoon vegetables and sauce over ribs and keep warm. Ribs finished and holding at 4:40.
  • 4:40 PM: (Rice) Rice rest ends at 4:38; fluff rice and transfer to serving bowl; keep covered and warm (rice ready by 4:40–4:42).
  • 4:47 PM: (Kimchi Pancake) Mix batter: whisk 3/4 cup flour, 1/3 cup water, 1 egg; fold in 3/4 cup chopped kimchi, 2 tbsp kimchi juice and scallions (finish batter by 4:50).
  • 4:50 PM: (Kimchi Pancake) Heat 10" skillet over medium and add 1 tbsp oil; pour half batter and fry pancakes (first pancake 4:50–4:54, flip and finish 4:54–4:56). Repeat second pancake immediately (4:56–4:58); transfer to rack to drain, cut into wedges — pancakes finish ~4:58. (This is a finish-to-order item.)
  • 4:50 PM: (Quick Cucumber Salad) At 4:50 PM slice cucumber thinly; at 4:55 PM whisk rice vinegar, 1 tsp sugar, 1/2 tsp soy sauce, 1/2 tsp sesame oil, 1/2 clove minced garlic and 1/4 tsp salt and toss with cucumber — serve immediately (dressed ~4:55–4:58).
  • 4:58 PM: (Final plating) Arrange braised short ribs with sauce, place rice, spinach, cucumber salad and kimchi pancake on plates or family-style bowls; garnish ribs with sliced scallions and sesame seeds.
  • 5:00 PM: (Serve) Serve all dishes and beverages exactly at 5:00 PM.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: gochugaru (Korean red pepper flakes) for individuals, extra soy, and extra sesame oil for passing at table.
  • Global substitution note: If no Instant Pot or electric pressure cooker, the Dutch oven oven-braise method works but increases the braise time (see recipe substitution) and may push the plan beyond the 2-hour start window; follow the Dutch oven timings only if you can start earlier than the timeline first step.
  • Child-safety notes: Hot oil for searing and frying and a pressurized cooker are used — keep children away from stove and cooker lid during sear, release and flipping. Use oven mitts when handling the Instant Pot lid and hot pans.
  • Explicit timeline risk(s): The tightest execution window is 3:40–4:45 PM when the pressure-cook cycle, rice simmer/rest, and mise en place must be coordinated. If pressure build or rice simmer takes longer than estimated, the final assembly and jeon frying will become rushed.
  • Mitigation mindset: Do a complete mise en place before starting the pressure cook (trim ribs, chop carrots and onion, rinse rice, chop kimchi and scallions, measure sauces). Have timers set for pressure cook and rice, and keep the skillet and oil pre-heated right before the last 12 minutes so the jeon can go straight into the pan.
  • Latest safe start time: You can start as late as 3:15 PM for a 5:00 PM serve.
