Instructions

  1. Saffron and stock: 15 minutes before cook time ends, warm 1/4 cup of the stock in a microwave-safe cup (or small saucepan) until hot but not boiling; add saffron threads and set aside to steep (5–10 minutes).
  2. Mise en place (start at recipe start time): Chop onion, mince garlic, grate or finely chop tomato, slice red pepper and chorizo, measure rice and spices, thaw shrimp fully and pat dry, scrub mussels and discard any broken shells; keep seafood refrigerated until ready.
  3. Heat pan: place paella pan or 12–13" skillet over medium heat; add 3 tbsp olive oil and warm for 30 seconds.
  4. Brown chorizo: add chorizo slices and sauté 2–3 minutes until they render fat and start to brown; move chorizo to the pan edge but leave oil and drippings.
