Aegean Sunday Supper

A bright, family-friendly Greek meal built around lemon-oregano roasted chicken — warm pita, roasted lemon potatoes, tomato-orzo with feta, cooling tzatziki and a village salad. Simple techniques and shared flavors let one cook deliver a satisfying, authentic table in a single cooking window.

  • Name of the meal: Aegean Sunday Supper
  • Cuisine type: Greek
  • Serve time: 5:00 PM

This menu is worth sitting down for because it balances a warmly roasted, lemon-and-oregano-scented chicken — the convivial centrepiece — with bright, texturally contrasting Greek sides: crisp salad dressed at the last minute, cooling tzatziki, nutty tomato-orzo studded with feta, and golden lemon potatoes that share the oven and the chicken's pan juices. Designed for one cook and five diners (2 adults, 3 kids), the plan times every finish-to-order element to the serve time so plates arrive at peak texture.

  • Greek Lemon-Oregano Roasted Chicken
  • Oven-Roasted Lemon Potatoes
  • Tomato Orzo (Kritharaki) with Feta
  • Tzatziki
  • Greek Village Salad (Horiatiki) — dress at serve time
  • Warm pita (heat at finish)
  • Kid-friendly Sparkling Greek Lemonade
  • Assyrtiko white wine (adult beverage)

2. FULLY EXECUTABLE RECIPES

Greek Lemon-Oregano Roasted Chicken

Equipment

  • 1 rimmed 13 x 9-inch roasting pan (or 9 x 13-inch)
  • Kitchen thermometer (instant-read)
  • Small bowl
  • Whisk or fork
  • Cutting board and chef’s knife

Ingredients (serves 5)

  • 6 bone-in, skin-on chicken thighs (approx. 3 lb total)
  • 3 tablespoons olive oil⁺
  • 3 tablespoons fresh lemon juice⁺ (about 1½ lemons)
  • 4 garlic cloves, minced⁺ (about 1½ tablespoons)
  • 2 teaspoons dried oregano⁺
  • 2 teaspoons kosher salt⁺
  • 1 teaspoon ground black pepper⁺
  • 1 medium lemon, sliced (for placing in pan)⁺

Practical substitutions

  • If skin-on thighs are unavailable, use 3 lb bone-in chicken pieces (mix thighs and drumsticks). If dried oregano is unavailable, use 2 teaspoons fresh chopped oregano.

Cooking / Baking

  • Oven temperature: 425°F
  • Roast time in oven: 40 minutes
  • Target internal temperature: 165°F measured in the thickest part of thigh without touching bone
  • Total cook time: 55 minutes (15 min active prep + 40 min roast)

Instructions

  1. Preheat oven to 425°F with rack in center.
  2. Pat chicken pieces dry with paper towels. Place in the 13 x 9-inch roasting pan, skin side up with space between pieces.
  3. In a small bowl whisk together 3 tablespoons olive oil, 3 tablespoons lemon juice, minced garlic, dried oregano, 2 teaspoons kosher salt and 1 teaspoon black pepper.
  4. Spoon and brush the mixture evenly over chicken pieces and under the skin where possible. Tuck 1 lemon sliced into the pan among chicken.
  5. Arrange potatoes (see Oven-Roasted Lemon Potatoes recipe) around the chicken if following the joint-oven plan; otherwise place chicken on its own pan.
  6. Roast in the preheated 425°F oven for 40 minutes. Begin checking at 35 minutes: insert instant-read thermometer into thickest part; target 165°F. If not at temp, roast up to 5 more minutes.
  7. Remove pan from oven at 165°F, tent loosely with foil, and let chicken rest 10 minutes before serving. Reserve pan juices for drizzling.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper or dried chili flakes for adults who want extra heat at the table (not included in base seasoning).
  • Global substitution note: dried dill may be used instead of fresh dill in tzatziki (2 tsp dried ≈ 2 tbsp fresh).
  • Child-safety note: Keep the hot roasting pan and oven door away from small children while roasting and during rest; use oven mitts and set pan on a low counter area out of child reach.
  • Timeline risk(s): The tightest execution window is the 4:10–4:50 PM oven roast period when the cook must also prepare orzo and tzatziki. The main risk is simultaneous stove-top attention (orzo) while monitoring roast. Mitigation: follow sequence exactly, start orzo at 4:20–4:24 and use gentle simmer; set timers for 12–14 minutes and use the oven check at 4:33 PM to limit interruptions. Keep mise en place (onion chopped, orzo measured) before chicken goes in.
  • Latest safe start time: You can start as late as 3:55 PM for a 5:00 PM serve.
