Instructions

3. LINEAR TIMELINE (3:00 PM–5:00 PM)

  • 3:00 PM: All — Begin: preheat oven to 425°F; clear and wipe workspace; set out equipment for oven roasting (two sheet pans). Start with escalivada prep: wash peppers and eggplants; pierce eggplants with tip of knife in 2–3 places.
  • 3:10 PM: Escalivada — Place whole red peppers and whole eggplants on a rimmed sheet pan; put in oven to roast (425°F). Set timer 40 minutes.
  • 3:15 PM: Escalivada — Quarter onions and place on second sheet pan lightly oiled; set aside to add later.
  • 3:20 PM: Escalivada — Check oven: turn peppers/eggplant for even charring if the oven runs hot; continue roasting.
  • 3:30 PM: Potatoes — Wash and cut 4.5 lb Yukon Gold into 1" cubes; place in large mixing bowl.
  • 3:40 PM: Potatoes — Toss potatoes with 6 tbsp olive oil, 2 tbsp pimentón, 2 tsp kosher salt and 1 tsp black pepper; leave bowl covered near workspace.
  • 3:45 PM: Escalivada — Add onions to oven on second rack; roast onions ~20–25 minutes alongside peppers/eggplants.
  • 3:55 PM: Escalivada — Remove peppers and eggplants from oven (they have roasted ~40–45 minutes); place in a large bowl and cover to steam for 10 minutes. Turn oven to empty space and confirm racks to accept potato sheet pan at 4:00.
  • 4:00 PM: Potatoes — Spread potatoes in single layer on sheet pan and place in oven (425°F). Start a 40–45 minute roast cycle (will finish ~4:45).
  • 4:00 PM: Escalivada — When cool enough to handle (after steaming ~10 minutes), peel and slice peppers and eggplant and combine with roasted onions; toss with 3 tbsp olive oil, 3 tbsp sherry vinegar, 1 tsp salt and 1/2 tsp pepper. Set escalivada on counter to cool to room temp; cover lightly.
