Practical substitutions

  • If unsweetened coconut water is unavailable, substitute 400 ml low-sodium chicken stock + 2 tbsp canned coconut milk (stir well).

Cooking / Baking

Instructions

  1. Prepare ingredients (00:00–00:05): Pat duck legs dry with paper towels. Season both sides with 1 tsp kosher salt (5 g) and 1/2 tsp black pepper (1 g). Peel shallots and smash garlic.
  2. Make caramel (00:05–00:08): Place the Dutch oven over medium heat. Add sugar (50 g) in an even layer and heat without stirring for 2 minutes until the edges begin to melt. Gently swirl pan to help sugar melt uniformly; continue until amber-brown (watch closely — 3–4 minutes total).

  5. Simmer covered (00:20–00:50): Bring to a gentle simmer uncovered over medium heat (2–3 minutes), then reduce heat to low–medium-low so the liquid maintains a gentle bubble. Cover and braise for 30 minutes, turning duck once halfway through.
  6. Prepare eggs (00:27–00:35, concurrent): In a small saucepan, add 4 eggs and cold water to cover by 2 cm. Bring to a rolling simmer over high heat, then reduce to maintain a gentle simmer for exactly 8 minutes. Transfer eggs to cold water, peel.
  7. Add eggs to braise (00:35–00:45): With about 10 minutes left in the braise (after eggs peeled), nestle eggs into the braising liquid so they absorb color and flavor; keep covered.
  8. Finish and glaze (00:45): Remove lid, increase heat to medium for 2–3 minutes to reduce and thicken the braising liquid into a glossy sauce. Check duck at thickest point with instant-read thermometer: target 74°C (165°F). If not reached, simmer uncovered 2–4 more minutes and recheck.
  9. Rest and garnish (00:45): Turn off heat. Let sit uncovered for 5–10 minutes while you finish the rice and prepare the salad. Scatter sliced scallions and cilantro over the duck before serving. Serve duck legs whole so each diner may pick bones.

Steamed Jasmine Rice

Equipment

  • 2.5-L saucepan with tight-fitting lid (or rice cooker if preferred; instructions are for stovetop)

Ingredients

  • Jasmine rice — 360 g (2 cups)
  • Cold water — 600 ml (for cooking)

Cooking / Baking
