Pour in prepared sauce, bring to a simmer, then add cornstarch slurry while stirring until sauce thickens (30–45 seconds). 5. NOTES & ASSUMPTIONS

  • Optional table-side items: Chinese chili oil or chili crisp, extra light soy sauce, extra toasted sesame seeds and lime or lemon wedges for drinks.
  • Global substitutions: Shaoxing wine → dry sherry; oyster sauce substitution noted in recipe; gai lan → broccolini or broccoli (adjust steam time).
  • Child-safety notes: Keep wok and steamer away from children; use oven mitts for hot platters; clear table edges before serving.
  • Timeline risk(s): The tightest execution window is 4:43–5:00 PM when the beef marinade ends, rice finishes/rests, gai lan is steamed and the stir-fry executes. Multiple tasks converge and require mise en place and a fully preheated wok at 4:48 PM. If mise en place is incomplete, the final stir-fry may be rushed and the beef can overcook.
  • Practical mitigation mindset without changing menu: Complete all chopping, sauce mixing and measuring during the 20-minute passive marinate (4:28–4:48). Keep sauce, slurry, oil and utensils immediately adjacent to the stove; preheat the wok just before starting the stir-fry so searing is fast.
  • The latest safe start time: You can start as late as 4:16 PM for a 5:00 PM serve.
