Chao Phraya Family Supper

A bright, family-scaled Thai dinner built around a fragrant green curry with tender shrimp, steamed jasmine rice and a finishing green papaya salad. The menu balances creamy coconut, fresh herbs and lime, finishing with a crisp, dressed salad made at the last minute so textures and flavors arrive at the table at their best.

  • Cuisine: Thai
  • Serve time: 5:00 PM
  • This menu is worth sitting down for because it pairs a family-style, aromatic green curry—creamy coconut, bright lime and Thai basil—with perfectly steamed jasmine rice and a freshly dressed green papaya salad that is prepared at the last minute so the crunch and brightness remain vivid. The flavors are layered yet kid-accessible (mild base, chilies on the side), the portions are scaled for a large table, and the service timing keeps texture-sensitive items finished to order.
  • Thai Green Curry with Shrimp (Gaeng Khiao Wan Goong)
  • Steamed Jasmine Rice
  • Green Papaya Salad (Som Tum) — finish-to-order
  • Sparkling Thai Lime Soda (kid-friendly)
  • Off-dry Riesling — adult beverage (purchase)

2. FULLY EXECUTABLE RECIPES

Thai Green Curry with Shrimp (Gaeng Khiao Wan Goong)

Equipment

  • 5-quart Dutch oven or large heavy-bottom pot with lid
  • Chef's knife and cutting board
  • Measuring spoons and measuring cup
  • Wooden spoon
  • Tongs
  • Small bowl for seasoning

Ingredients (serves 7)

  • 2 lb 8 oz (2.5 lb) raw shrimp, peeled and deveined (tails optional)
  • 3 (13.5 fl oz) cans coconut milk (total 40.5 fl oz)
  • 6 tablespoons green curry paste
  • 1 cup low-sodium chicken stock or water (8 fl oz)
  • 1 lb 8 oz (1.5 lb) Thai / Chinese eggplant, quartered (about 3 medium) (substitute: 2 medium globe eggplants cut into 1" cubes or 3 small zucchini)
  • 1 (8 oz) can bamboo shoots, drained
  • 3 tablespoons fish sauce
  • 2 tablespoons palm sugar (or light brown sugar)
  • 6 kaffir lime leaves, torn (substitute: 1 teaspoon lime zest)
  • 1.5 cups loosely packed Thai basil leaves (about 1 oz)
  • 2 tablespoons vegetable oil
  • 1 medium shallot, thinly sliced (about 1/2 cup)
  • 6 cloves garlic, minced
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1/2 teaspoon kosher salt

Practical substitutions

  • If Thai eggplant is unavailable, use globe eggplant or zucchini (see above).
  • If kaffir lime leaves are unavailable, use 1 teaspoon lime zest added near the end.

Cooking / Baking

  • Stove: medium-high and medium-low heat.
  • Total cook time: 35 minutes (includes active prep and stove time).

Instructions

  1. Prep (4:25 PM start): Peel and devein the shrimp if not already done; pat dry and refrigerate covered. Quarter eggplants, drain bamboo shoots, slice shallot, mince garlic, tear kaffir leaves, pick basil leaves. Measure coconut milk and curry paste.
  2. Heat (4:35 PM): Place the Dutch oven over medium heat and add 2 tablespoons vegetable oil. When oil shimmers (~30 seconds), add sliced shallot and sauté 2 minutes until softened.
  3. Bloom curry paste (4:37 PM): Add 6 tablespoons green curry paste and 2 minutes, stir constantly until fragrant and oil begins to separate slightly from the paste.
  4. Add coconut (4:39 PM): Shake one can of coconut milk and add it to the pot, stir to loosen browned bits, and simmer 2 minutes to bloom aromatics.
  5. Add vegetables and stock (4:41 PM): Pour in remaining 2 cans coconut milk plus 1 cup chicken stock/water. Add eggplant and bamboo shoots. Bring to a gentle simmer, reduce heat to medium-low, cover partially, and simmer 12 minutes, stirring once midway so eggplant softens (4:41–4:53 PM).
  6. Taste and season (4:53 PM): Stir in 3 tablespoons fish sauce, 2 tablespoons palm sugar, 6 torn kaffir lime leaves (or 1 tsp lime zest), and 1/2 teaspoon kosher salt. Simmer 1 minute.
  7. Finish with shrimp (4:57 PM): Add shrimp to the simmering curry and cook 3 minutes, stirring until shrimp are opaque and curled (internal flesh no longer translucent). Remove pot from heat at 5:00 PM minus 0–2 minutes (target finish 4:58–5:00 PM).
  8. Final touches (immediately off heat): Stir in 1–2 tablespoons fresh lime juice and fold in 1.5 cups Thai basil leaves. Keep covered very briefly (no longer than 5 minutes) and serve hot at 5:00 PM.

Steamed Jasmine Rice

Equipment

  • 4-quart heavy-bottom saucepan with tight-fitting lid
  • Fine-mesh sieve
  • Wooden spoon or rice paddle
  • Measuring cups

Ingredients (serves 7)

  • 3 cups uncooked jasmine rice
  • 4 1/2 cups water
  • 1 teaspoon kosher salt
  • 1 tablespoon vegetable oil (optional, helps grains separate)

Practical substitutions

  • If jasmine rice is unavailable, use long-grain white rice with same ratio but check package instructions.

Cooking / Baking

  • Stove: bring to boil then low simmer, covered.
  • Total cook time: 30 minutes (5 minutes prep/bring to boil, 15 minutes simmer, 10 minutes rest).

Instructions

  1. Rinse rice (4:30 PM): Place 3 cups jasmine rice in sieve and rinse under cold running water until the water runs mostly clear. Drain thoroughly.
  2. Combine (4:32 PM): Transfer rice to the 4-quart saucepan, add 4 1/2 cups water, 1 teaspoon kosher salt and 1 tablespoon oil. Stir once.
  3. Bring to boil (4:33 PM): Place saucepan over high heat and bring to a rolling boil uncovered (2–3 minutes).
  4. Simmer (4:35 PM): Once boiling, reduce to the lowest simmer, cover with tight lid, and cook undisturbed for 15 minutes (4:35–4:50 PM).
  5. Rest (4:50 PM): Remove from heat and keep covered; let rest 10 minutes. Fluff with a fork or rice paddle just before serving at 5:00 PM.

Green Papaya Salad (Som Tum) — finish-to-order

Not nut-free: peanuts.

Equipment

  • Large mortar and pestle OR large mixing bowl and a wooden rolling pin/pestle
  • Box grater with julienne side or dedicated shredder, or chef's knife and julienne peeler
  • Large mixing bowl
  • Measuring spoons and cup

Ingredients (serves 7)

  • 2 medium green papayas (about 3 lb total), peeled and shredded (target 8–9 cups shredded)
  • 8 oz long green beans (string beans), trimmed and cut into 1" pieces
  • 1 pint cherry tomatoes (about 12–16), halved
  • 1 cup roasted unsalted peanuts
  • 4 cloves garlic
  • 2 tablespoons palm sugar
  • 4 tablespoons fish sauce
  • 6 tablespoons fresh lime juice
  • 0 Thai chilies in the dressing (base is mild)
  • 6 fresh Thai chilies, whole, served on the side for table heat (cut into slivers) — serve at table for adults who want heat
  • 1/2 teaspoon kosher salt

Practical substitutions

  • If green papaya is unavailable, substitute 3 cups shredded carrot + 3 cups thinly sliced cucumber for a similar crunchy salad (adjust dressing).

Cooking / Baking

  • Total cook time: 15 minutes (all active; finish to order).

Instructions

  1. Start shredding (4:45 PM): Peel the papayas and use a julienne peeler, box grater (julienne side), or sharp knife to shred into thin strips. Transfer shredded papaya to a large bowl and keep cold.
  2. Trim beans and halve tomatoes (4:48 PM): Trim ends and cut green beans into 1" pieces; halve cherry tomatoes.
  3. Make dressing in mortar (4:49 PM): In a mortar and pestle, lightly pound 4 cloves garlic with 2 tablespoons palm sugar until a rough paste forms. Add 4 tablespoons fish sauce and 6 tablespoons lime juice; stir/pound to dissolve sugar.
    • If you don't have a mortar: mince garlic finely, whisk with sugar, fish sauce and lime juice in a small bowl.
  4. Finish and toss (4:52 PM): Add shredded papaya, green beans, and halved cherry tomatoes to a large mixing bowl. Pour dressing over the salad and toss with 1 cup roasted peanuts (reserve a few for garnish). Adjust salt with 1/2 teaspoon kosher salt if needed.
  5. Plate and serve immediately (finish 4:58–5:00 PM): Som Tum must be plated and served within a few minutes. Serve Thai chilies on the side so diners can add heat individually.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: sliced fresh Thai chilies (6 whole provided), extra lime wedges.
  • Global substitution: if green papaya is unavailable, substitute shredded carrot + thinly sliced cucumber (see Som Tum recipe). If Thai eggplant is unavailable, globe eggplant or zucchini may be used (see curry recipe).
  • Child-safety notes: supervise children around hot pots and boiling liquids. Keep the Dutch oven and saucepan handles turned away from table edges. Hot drinks and wine should be served only to adults.
  • Explicit timeline risk(s): the tightest execution window is the final 10 minutes (4:50–5:00 PM), when the curry is finished by adding shrimp and the Som Tum must be assembled to order while rice is resting. Both tasks require simultaneous attention and quick transitions.
  • Mitigation mindset: mise en place completely before 4:35 PM — have shrimp cleaned, papaya shredded and dressing ingredients measured. Use the curry simmer time to rinse rice and begin papaya shredding; have utensils and serving bowls laid out before starting. Work methodically: if necessary, pause a simmer briefly to toss Som Tum; shrimp cooks fast—add it only when ready to focus on plating.
  • Table size and lead time: because you are cooking for 7 people solo and using larger batch sizes, the timing is tight; allow extra lead time if you anticipate interruptions. The cook should consider starting earlier than the plan if they want a buffer.
  • You can start as late as 4:25 PM for a 5:00 PM serve. If you want a margin, start earlier.
