Instructions

  1. (Prep) Trim fish and cut into 2" pieces; pat dry and keep chilled on a plate in the refrigerator until ready. Measure all spices and liquids and place near the stove.

  4. At the 20-minute mark of simmering, add the chopped tomato (1 medium) and 1.5 teaspoons salt; continue simmering until dal reaches a creamy but slightly textured consistency (about 5–8 more minutes). If mixture becomes too thick, add up to 1/2 cup water to reach the stated texture.
  5. Make tadka: in the small skillet over medium heat warm 2 tablespoons ghee and 1 tablespoon vegetable oil. When hot, add 1 teaspoon cumin seeds and let sizzle 10 seconds, then add 4 sliced garlic cloves and cook 30–45 seconds until garlic is lightly golden (do not burn).
  6. Pour the hot tadka over the dal, stir once, add 1/4 teaspoon ground black pepper, cover and remove from the heat. Garnish with 2 tablespoons chopped cilantro. Keep covered and warm until serving (dal may sit finished up to 15 minutes).

Steamed Basmati Rice

  • 4:47 PM: (Oven) Preheat oven to 425°F for warming naan (optional).
