  • Yellow onion, 1 large (about 200 g), finely chopped ⁺
  • Garlic, 6 cloves, peeled ⁺
  • Fresh ginger, 30 g (about 2 tbsp), grated
  • Kashmiri chili powder, 1 tbsp (mild, for color and medium heat)
  • Ground coriander, 2 tsp
  • Ground cumin, 2 tsp
  • Ground cloves, 1/4 tsp
  • Cinnamon stick, 1 small (2–3 cm)

Instructions

  1. Prep (15:45): Put the pork cubes on a sheet tray and pat dry. Finely chop the onion. Peel garlic and grate ginger.

Blend to a smooth-ish paste, adding 1–2 tbsp water if needed to move. Transfer paste to a bowl.
  3. Brown pork (15:55–16:05): Heat large sauté pan over medium-high. Add 2 tbsp (30 ml) vegetable oil. When shimmering, add pork in a single layer (work in two batches if pan overcrowded) and sear 3–4 minutes per side until browned; total ~6–8 minutes. Transfer browned pork to plate.
  4. Sweat onion and spices (16:05–16:08): Add remaining 1 tbsp (15 ml) oil to the pan. Add chopped onion and the cinnamon stick; sauté 4–5 minutes until soft and just beginning to color.
  5. Combine and simmer (16:08–16:45): Return pork to pan. Stir in the blended paste, 300 ml water, 2 tsp salt, and fresh curry leaves. Bring to a gentle simmer, cover, reduce heat to low and simmer, covered, 35–40 minutes, stirring once halfway, until pork is tender and sauce thickens slightly.

Cucumber–Tomato–Coconut Salad (finish-to-order)

3. LINEAR TIMELINE (15:45–17:00)

  • 15:45: Pork Vindaloo — Start mise en place: weigh pork, peel garlic (6 cloves) and grate ginger (30 g); chop 1 large onion; assemble spices and vinegar.
  • 15:48: Pork Vindaloo — Make vindaloo paste in blender: garlic, ginger, Kashmiri chili powder, ground coriander, ground cumin, ground cloves, peppercorns, 45 ml white vinegar and brown sugar; blend smooth.
  • 15:55: Pork Vindaloo — Heat large sauté pan, add 2 tbsp (30 ml) oil and sear pork cubes in a single layer until well browned, ~6–8 minutes total. Remove seared pork to plate.
  • 16:03: Pork Vindaloo — In same pan add remaining 1 tbsp oil and chopped onion + cinnamon stick; sauté 4–5 minutes until softened.
  • 16:08: Pork Vindaloo — Return pork to pan; add blended paste, 300 ml water, 2 tsp salt and curry leaves; bring to gentle simmer, cover and reduce heat to low to simmer 35–40 minutes (pork will cook undisturbed while you work on other dishes).

  • 16:28: Spiced Pan-Fried Potatoes — Heat skillet with 2 tbsp oil, add 1 tsp mustard seeds; when they sputter add sliced onion and curry leaves, sauté 2–3 minutes; then add parboiled potatoes, turmeric and 1 tsp salt and spread to brown.
