Instructions

Coconut-Turmeric Basmati Rice

  • 2 cups long-grain basmati rice (uncooked) (about 360 g)
  • 1 can (400 ml) light coconut milk ⁺

Instructions

  1. Rinse 2 cups basmati rice in a strainer under cold water until water runs nearly clear (~1–2 minutes). Drain well.

Instructions

3. LINEAR TIMELINE (4:45 PM–5:30 PM)

  • 4:45 PM: (Cauliflower & Peas) Begin: Trim and cut 1 medium cauliflower into small florets; chop 1 medium onion; mince 2 garlic cloves. Heat skillet; add 2 tbsp oil and mustard seeds to prepare for cooking.
  • 4:50 PM: (Cauliflower & Peas) Add onions to skillet and sauté 4–5 minutes until soft; add garlic 30–45 seconds; add turmeric and coriander powder; add cauliflower, 1 tsp salt and 1 tbsp water; cover and cook on medium-low.
  • 4:55 PM: (Rice) Rinse 2 cups basmati rice in strainer until water is nearly clear; in 2.5–3 qt pot heat 1 tbsp oil, add 6 curry leaves, add rice and stir 30 seconds. Add 400 ml coconut milk + 240 ml water, 1/2 tsp turmeric and 1 tsp salt; bring to simmer.
  • 4:58 PM: (Rice) Reduce heat to low, cover and simmer rice 15–18 minutes undisturbed.
  • 5:05 PM: (Cauliflower & Peas) Remove lid; add 1 cup thawed peas and 1/2 tsp garam masala; increase heat slightly and sauté uncovered 4–6 minutes until edges brown; turn off heat, garnish with cilantro and keep covered (will hold until ~5:15–5:20).

  • 5:22 PM: (Naan) Heat large skillet for warming naans. Begin warming first naan in skillet 1.5–2 minutes per side, using tongs; sequentially warm all 4 so they are ready by 5:30.
  • 5:25 PM: (Kerala Prawn Curry) Taste and adjust salt; remove from heat and cover to keep warm for final plating. (Prawns finish-to-order; final timing ensures they are freshly cooked.)
