Mumbai Weeknight Curry

A compact Indian supper built around a gently spiced stove-top chicken curry, fragrant cumin basmati rice and an easy cucumber raita (optional). The menu balances bold aromatics with a mild shared base, finishes quickly and yields friendly leftovers.

  • Name of the meal: Mumbai Weeknight Curry
  • Cuisine: Indian
  • Serve time: 5:00 PM

This meal is worth sitting down for because a layered, stove-top chicken curry delivers deep, familiar Indian flavors without long hands-on time; toasted cumin rice brings an aromatic, buttery backdrop; an optional cooling cucumber raita refreshes the palate and keeps spice level household-mild while letting adults add heat at the table. The result is a concentrated, homely Indian supper that finishes promptly at service and yields tidy leftovers.

Chicken Curry (Simple Indian Stove-Top Curry)

Equipment

  • 12-inch heavy skillet with lid (or a 4–5 quart sauté pan)
  • Cutting board and chef’s knife
  • Measuring spoons and cups
  • Instant-read thermometer
  • Wooden spoon or sturdy spatula
  • Small bowl for mixing yogurt
  • Plate or tray for prepped chicken

Ingredients

  • Boneless, skinless chicken thighs — 2.5 lb (cut into 1-inch pieces)
  • Yellow onion — 2 medium (about 12 oz), finely diced
  • Garlic cloves — 6 cloves, minced
  • Fresh ginger — 2-inch piece, peeled and grated (about 2 tablespoons)
  • Vegetable oil — 3 tablespoons
  • Ground cumin — 1.5 teaspoons
  • Ground coriander — 2 teaspoons
  • Turmeric — 1 teaspoon
  • Paprika — 1 teaspoon
  • Red chili powder — 1/4 teaspoon (keeps base mild)
  • Garam masala — 1 teaspoon (added at finish)
  • Salt — 2 teaspoons
  • Plain yogurt — 1 cup (full-fat preferred) ⁺
  • Canned crushed tomatoes — 15 ounces
  • Fresh cilantro — 1/4 cup chopped (for garnish) ⁺
  • Lemon — 1 small, juiced (about 1 tablespoon)

Practical substitutions

  • If boneless thighs are unavailable, use boneless chicken breasts cut into 3/4–1-inch pieces — reduce final simmer by ~2 minutes and confirm internal temp 165°F.
  • If crushed tomatoes are not available, substitute 2 cups canned diced tomatoes lightly mashed.

Cooking / Baking

  • Stove: medium to medium-high heat.
  • Target internal temperature for chicken: 165°F.
  • Total cook time: 40 minutes (includes active prep and passive simmer).

Instructions

  1. Measure and prep everything before heating the pan: cut chicken into 1-inch pieces and put on a plate; finely dice onions; mince garlic; grate ginger; open tomatoes. (This is part of the 40-minute total.)
  2. Heat skillet over medium heat, add 3 tablespoons vegetable oil and let warm ~30 seconds.
  3. Add diced onions and 2 teaspoons salt; sauté, stirring occasionally, 12 minutes until deep golden (reduce heat to medium-low if browning too fast).
  4. Add minced garlic and grated ginger; cook 1 minute until fragrant.
  5. Add ground cumin, ground coriander, turmeric, paprika and red chili powder; stir 30 seconds to bloom spices.
  6. Add crushed tomatoes and 1 cup plain yogurt; stir to combine and simmer uncovered 2 minutes to integrate (adjust heat so it bubbles gently).
  7. Increase heat to medium-high; add chicken pieces in a single layer, stir to coat and sear 6 minutes, stirring and turning so pieces brown lightly on all sides.
  8. Reduce heat to medium-low, cover, and simmer 9 minutes. Uncover and check the largest piece with an instant-read thermometer — it must read 165°F. If not at 165°F, simmer uncovered 1–2 minutes more and recheck.
  9. Stir in 1 teaspoon garam masala and 1 tablespoon lemon juice; taste and adjust salt if needed (no additional salt specified). Sprinkle chopped cilantro over the pan just before serving.
  10. Keep covered off heat if finished early; do not let sit uncovered more than 15 minutes.

Jeera (Cumin) Basmati Rice

Not low-carb: rice.

Equipment

  • 3-quart saucepan with tight-fitting lid
  • Fine-mesh sieve or bowl for rinsing rice
  • Measuring cups and spoons
  • Fork for fluffing

Ingredients

  • Basmati rice (uncooked) — 2.5 cups
  • Water — 3.75 cups (3 3/4 cups)
  • Unsalted butter — 1 tablespoon
  • Cumin seeds — 1.5 teaspoons
  • Salt — 1.5 teaspoons

Practical substitutions

  • If basmati rice is unavailable, use long-grain white rice with the same volume but reduce simmer time by 2–3 minutes and verify texture.

Cooking / Baking

  • Stove: medium-high to low for simmer.
  • Total cook time: 26 minutes active + rest finishing to 5:00 PM (rinsing, boil, simmer, rest).

Instructions

  1. Rinse 2.5 cups basmati rice under cold water until the rinse runs nearly clear (about 1–2 minutes). Drain well.
  2. At medium heat, warm a 3-quart saucepan and add 1 tablespoon unsalted butter. When butter foams, add 1.5 teaspoons cumin seeds and toast 30 seconds until aromatic.
  3. Add the drained rice and stir 30 seconds to coat with butter and lightly toast.
  4. Add 3.75 cups water and 1.5 teaspoons salt; increase heat to high and bring to a rapid boil, uncovered.
  5. As soon as the pot reaches a steady rolling boil, cover, reduce heat to low, and simmer 12 minutes undisturbed.
  6. After 12 minutes, turn off heat and keep the pot covered for 7 minutes (carryover finishes the rice).
  7. At service (5:00 PM), remove lid, gently fluff with a fork and transfer to a warm serving dish.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red chili flakes or store-bought hot sauce may be offered at the table for adults who want extra heat.
  • Global substitutions: if basmati is unavailable, use long-grain white rice and reduce simmer time by 2–3 minutes; if boneless thighs are unavailable, use boneless breasts cut small and check temperature closely.
  • Child-safety notes: children should not be near the stove during the 4:15–4:36 active sauté/sear window; keep handles turned inward.
  • Timeline risks: the tightest execution window is 4:15–4:36 PM when the onions sauté, spices bloom and the chicken sears — several tasks overlap with rice startup. If the cook is interrupted during this period, the curry browning and rice timing will be affected.
  • Mitigation mindset: focus on mise en place before 4:15 (have spices measured, chicken cut, rice rinsed). If time runs short, reduce onion sauté by 2 minutes and accept slightly less caramelization — flavor remains robust.
  • Latest safe start time: You can start as late as 4:05 PM for a 5:00 PM serve.
