Puerto Rican Saturday Family Supper

A warm, home-style Puerto Rican supper built on gently stewed Huevos Guisados in a bright sofrito-tomato sauce, anchored by classic arroz con gandules and a crisp cabbage salad to cut the richness — straightforward techniques, pantry-friendly ingredients, and all finish for a 17:00 family meal.

  • Name of the meal: Puerto Rican Saturday Family Supper
  • Cuisine type: Puerto Rican
  • Serve time: 17:00

A simple, focused Puerto Rican supper that delivers the cuisine's hallmark sofrito-and-sazón flavors without fuss: tender eggs finished gently in a bright tomato-sofrito braise, a fragrant one-pot arroz con gandules that holds for the table, and a quick shredded cabbage salad that provides crunch and acidity. It reads classic, cooks in a single hour window for one cook, and leaves planned leftovers.

Huevos Guisados (Puerto Rican Stewed Eggs in Sofrito-Tomato Sauce)

Equipment

  • 10-inch heavy skillet with lid
  • Heatproof spatula or wooden spoon
  • Measuring cups and spoons
  • Small bowl for cracking eggs
  • Spoon to make wells

Ingredients

  • Large eggs — 8
  • Olive oil — 2 tablespoons
  • Prepared sofrito — 1/2 cup (see Arroz con Gandules recipe for making a shared sofrito; if using store-bought, use 1/2 cup jarred sofrito) ⁺
  • Tomato sauce — 1 cup (8 fl oz) ⁺
  • Low-sodium chicken stock or water — 1/4 cup (2 fl oz) ⁺
  • Kosher salt — 1 teaspoon ⁺
  • Ground black pepper — 1/4 teaspoon ⁺

Practical substitutions:

  • If jarred sofrito isn't available, substitute with 1/2 cup blended mix of: 1/4 medium yellow onion + 1/4 green bell pepper + 2 garlic cloves + 2 tablespoons cilantro (all finely chopped/blended).
  • If chicken stock is not available, use water + 1/2 teaspoon bouillon paste or 1/2 chicken bouillon cube dissolved.

Cooking / Baking

  • Total cook time: 15 minutes active (finish-to-order; start so final step is at 17:00)

Instructions

  1. (Reserve) When you make the sofrito for the rice, reserve 1/2 cup for these eggs and refrigerate it until use.
  2. At 16:45, place the 10-inch skillet over medium heat and add 2 tablespoons olive oil.
  3. Add 1/2 cup prepared sofrito to the hot oil and sauté 60–90 seconds, stirring, until fragrant and softened.
  4. Add 1 cup tomato sauce and 1/4 cup chicken stock; stir and bring the sauce to a gentle simmer over medium heat (about 2–3 minutes).
  5. Season the sauce with 1 teaspoon kosher salt and 1/4 teaspoon black pepper; reduce heat to maintain a low simmer.
  6. Use the back of a spoon to make eight shallow wells in the sauce. Crack 1 egg into a small bowl and gently slip each egg into a well; repeat until all 8 eggs are in the pan.
  7. Cover the skillet with the lid and simmer gently for 8–10 minutes, checking at 8 minutes: whites should be set, yolks still slightly soft but not runny for family-friendly texture. If you prefer firmer yolks, simmer up to 10–12 minutes. Keep heat low so sauce does not bubble hard (no more than a gentle simmer).
  8. When eggs reach desired doneness, remove pan from heat and keep covered until serving at 17:00 (eggs finish at serve time).

Arroz con Gandules (Puerto Rican rice with pigeon peas)

Not low-carb: rice.

Not paleo: rice.

Equipment

  • 3-quart heavy-bottomed saucepan with tight-fitting lid (or 10-inch skillet with lid capable of holding 3–4 cups liquid)
  • Blender or chef's knife and cutting board (for sofrito)
  • Measuring cups and spoons
  • Fine-mesh strainer (for drained peas)

Ingredients

  • Long-grain white rice — 2 cups (about 16 oz uncooked)
  • Low-sodium chicken stock — 3 3/4 cups (30 fl oz) ⁺
  • Canned gandules (pigeon peas) — 1 can (15 oz), drained (about 1 cup drained)
  • Olive oil — 2 tablespoons ⁺
  • Prepared sofrito — 1 cup (make as directed below) ⁺
  • Tomato sauce — 1/2 cup (4 fl oz) ⁺
  • Sazón packet (with achiote) — 1 packet (or 1 teaspoon ground cumin + 1/2 teaspoon paprika as substitution)
  • Kosher salt — 1 1/2 teaspoons ⁺
  • Ground black pepper — 1/2 teaspoon ⁺
  • Bay leaf — 1

Practical substitutions:

  • If you cannot find gandules/pigeon peas, substitute one 15-oz can of drained cannellini or butter beans; flavor will be slightly different but the dish remains Puerto Rican-style.
  • If you do not have a sazón packet, use 1 tsp ground cumin + 1/2 tsp smoked or sweet paprika and 1/4 tsp garlic powder.

Note: This recipe includes making a single batch of sofrito to use for both rice and the eggs; yield below makes about 1 1/2 cups—use 1 cup here and reserve 1/2 cup for Huevos Guisados.

Sofrito (shared)

  • Yellow onion — 1 medium, peeled and quartered (about 1 cup chopped) ⁺
  • Green bell pepper — 1 medium, seeded and quartered (about 1 cup chopped) ⁺
  • Fresh cilantro leaves — 1/2 cup packed (stems trimmed) ⁺
  • Garlic — 4 cloves ⁺ (Place these in a blender/food processor and pulse to a coarse paste; you should have about 1 1/2 cups total. Use 1 cup for the rice and reserve 1/2 cup refrigerated for the eggs.)

Cooking / Baking

  • Total cook time: 35 minutes (includes initial sauté and covered simmer)

Instructions

  1. Make the sofrito first (16:22 start): combine 1 medium yellow onion (quartered), 1 medium green bell pepper (quartered), 1/2 cup packed cilantro, and 4 garlic cloves in a blender or chop finely by hand. Pulse/blend briefly into a coarse paste, not completely smooth. Measure out 1 cup for the rice and place 1/2 cup in a covered small container in the refrigerator for the Huevos Guisados.
  2. At 16:30, place the 3-quart saucepan over medium heat and add 2 tablespoons olive oil.
  3. Add 1 cup sofrito to the hot oil and sauté, stirring, for 2–3 minutes until softened and fragrant.
  4. Add 2 cups long-grain white rice and sauté, stirring constantly, for 1–2 minutes until the rice is glossy and some grains begin to look translucent at the edges.
  5. Stir in 1/2 cup tomato sauce, drained 15-oz can gandules, 1 packet sazón (or substitutes), 1 1/2 teaspoons kosher salt, 1/2 teaspoon ground black pepper, and 1 bay leaf.
  6. Pour in 3 3/4 cups low-sodium chicken stock and increase heat to high to bring to a steady boil (about 2–3 minutes).
  7. Once boiling, stir once gently, reduce heat to low, cover tightly, and simmer undisturbed for 17 minutes. (Do not lift the lid.)
  8. After 17 minutes, turn off heat and let rice rest, covered, for 3 minutes. Fluff with a fork and remove bay leaf just before serving. Rice should finish by 16:55 and will hold, covered, for up to 15 minutes before serving.

Ensalada de Repollo (Puerto Rican shredded cabbage salad)

Equipment

  • Large mixing bowl
  • Box grater or sharp knife
  • Small bowl or jar for dressing
  • Tongs or salad fork

Ingredients

  • Green cabbage — 1/2 head (about 1 lb), shredded
  • Large carrot — 1, peeled and grated
  • Red onion — 1/2 small, thinly sliced
  • Fresh lime — 2 limes (juice yields about 2 tablespoons)
  • Olive oil — 2 tablespoons ⁺
  • Kosher salt — 1 teaspoon ⁺
  • Ground black pepper — 1/4 teaspoon ⁺

Practical substitutions:

  • If limes are out of season, use 2 tablespoons white wine vinegar instead.

Cooking / Baking

  • Total cook time: 10 minutes (no cooking; finish at serve time)

Instructions

  1. At 16:50, shred 1/2 head green cabbage (about 4 cups shredded) and place into the large mixing bowl.
  2. Grate 1 large carrot into the bowl and add 1/2 small thinly sliced red onion.
  3. In a small bowl or jar, combine juice of 2 limes (about 2 tablespoons), 2 tablespoons olive oil, 1 teaspoon kosher salt, and 1/4 teaspoon ground black pepper; whisk or shake until emulsified.
  4. Pour dressing over cabbage mixture and toss thoroughly. Hold the dressed salad until serving; if you prefer the cabbage crisper, keep the dressing separate and toss at 16:58–16:59, immediately before serving.

3. LINEAR TIMELINE (16:22–17:00)

  • 16:22: Arroz con Gandules — Begin by making the sofrito: quarter 1 medium yellow onion and 1 medium green bell pepper, trim cilantro, peel 4 garlic cloves; pulse in blender to a coarse paste; measure 1 cup for the rice and reserve 1/2 cup refrigerated for the Huevos Guisados. (16:22–16:30)
  • 16:30: Arroz con Gandules — Heat 2 tbsp olive oil in 3-qt saucepan over medium heat; add 1 cup sofrito and sauté 2–3 minutes until fragrant. (16:30–16:33)

  • Olive oil — 6 tablespoons (3 fl oz) ⁺
  • Sazón packet (with achiote) — 1 packet
  • Kosher salt — 1 tablespoon + 1/2 teaspoon total (use from home supply) ⁺
  • Ground black pepper — 1 teaspoon total (use from home supply) ⁺
  • Bay leaf — 1

5. NOTES & ASSUMPTIONS

  • Optional table-side items: hot pepper flakes or sliced pickled pepper (for adults only) may be offered at the table; any heat must be added at-table to respect the household base spice level.
  • Global substitutions: canned gandules can be swapped for a 15-oz can of cannellini or butter beans if pigeon peas are unavailable; sazón packet can be substituted with 1 tsp ground cumin + 1/2 tsp paprika + 1/4 tsp garlic powder.
  • Child-safety notes: eggs are poached in hot sauce and the skillet lid will be hot — keep children away from the stove during the 16:45–17:00 window and use oven mitts when lifting lids.
  • Timeline risks: the tightest execution window is 16:45–17:00 when Huevos Guisados must be started and finished while you finish the salad and allow rice to rest. The risk is multitasking: if you leave the eggs unattended at too high a simmer, yolks can overcook or sauce can boil aggressively.
  • Mitigation mindset: keep the egg simmer low, use a timer for the rice and the eggs, and perform the salad prep while the eggs are gently simmering (salad assembly is non-heat work). If you need a single-focus bailout, stop active salad work and attend the eggs; the salad can be dressed and tossed in 1 minute once the eggs are on low simmer.
  • Latest safe start time: You can start as late as 16:22 for a 17:00 serve.
