Instructions

  6. Add liquids: pour in 1 cup water or vegetable broth, then add 3 tbsp soy sauce and 1 tbsp dark soy sauce. Stir once to combine. The sauce should mostly cover the ingredients; if it looks extremely shallow, add up to 2 tbsp more water.
  7. Simmer covered: bring to a gentle simmer, reduce heat to low, cover and simmer for 20 minutes, gently turning once at the 10-minute mark to distribute sauce and color.
  8. Finish seasoning: remove lid, increase heat to medium-low and simmer uncovered 1–2 minutes to thicken slightly. Stir in 1/4 tsp salt and 1/4 tsp black pepper. If using, stir in 1/2 tsp toasted sesame oil.
