2. FULLY EXECUTABLE RECIPES

Pan-Seared Cod with Parsley-Butter

Equipment

  • 12-inch heavy skillet (cast-iron or stainless steel)
  • Fish spatula
  • Small bowl and spoon
  • Paper towels
  • Instant-read thermometer

Ingredients

  • 4 cod fillets, skinless or skin-on, 6 oz each (total 1.5 lb)
  • 1.5 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp olive oil ⁺
  • 4 tbsp unsalted butter (for parsley-butter; this butter is accounted as used here) ⁺
  • 1/3 cup fresh flat-leaf parsley, finely chopped
  • 2 tbsp fresh lemon juice (about 1 lemon) ⁺
  • 4 lemon wedges (for serving) ⁺

Practical substitutions

  • If cod is unavailable: use haddock, pollock or a firm white fish fillet up to 1.75 lb total. If skin-on fillets are used, reduce sear time by ~1 minute per side.

Cooking / Baking

  • Pan-sear cod; target internal temperature 145°F. Make parsley-butter at low heat and finish cod with spooned butter.

Total cook time

  • 15 minutes active (does not include oven-roasting tasks for other dishes)

Instructions

  1. Pat fillets dry with paper towels. Sprinkle 1.5 tsp kosher salt and 1 tsp black pepper evenly over both sides; set on a plate at room temperature for no more than 10 minutes.
  2. Make parsley-butter: in a small pan over low heat, melt 4 tbsp unsalted butter (cut into pieces) until foaming stops; remove from heat, stir in 1/3 cup chopped parsley and 2 tbsp lemon juice, and season with 1/4 tsp kosher salt and 1/8 tsp black pepper. Keep warm but do not let it simmer; cover and set next to stove for finishing.
  3. Heat the 12-inch skillet over medium-high until hot (about 2 minutes). Add 2 tbsp olive oil and swirl.
  4. Add fillets to the pan without crowding (work in two batches if necessary). Sear skin-side down first if skin-on, otherwise presentation side down. Cook 3½–4 minutes without moving, until golden; flip and cook 3–4 minutes more. Check internal temp with instant-read thermometer: 145°F in the thickest part.
  5. Transfer fillets to a warm plate. Spoon parsley-butter over each fillet immediately. Serve with lemon wedges.

Minted Mushy Peas

Not low-carb: peas.

Equipment

  • Medium saucepan (2–3 quart)
  • Potato masher or fork

Ingredients

  • 16 oz frozen garden peas
  • 2 tbsp unsalted butter ⁺
  • 2 tbsp fresh mint, finely chopped
  • 2 tbsp whole milk
  • 1/2 tsp kosher salt
  • 1/4 tsp granulated sugar

Practical substitutions

  • If fresh mint is unavailable, use 1 tbsp dried mint rehydrated in a little warm water (flavor will be muted).

Cooking / Baking

  • Bring peas to simmer, mash lightly and finish with butter, milk and mint.

Total cook time

  • 20 minutes

Instructions

  1. Bring 1/2 cup water to a simmer in the saucepan over medium heat. Add frozen peas, cover and simmer 6–8 minutes until very tender.
  2. Drain any excess water (reserve a tablespoon of cooking liquid if peas are too dry). Add 2 tbsp butter and 2 tbsp milk; mash with potato masher to desired texture (some lumps are fine).
  3. Stir in 2 tbsp chopped mint, 1/2 tsp kosher salt and 1/4 tsp sugar. Keep warm on the lowest heat setting; rewarm gently just before serving.

Oven-Roasted Baby Potatoes with Rosemary & Garlic

Not low-carb: potatoes.

  • 3 tbsp olive oil ⁺
  • 2 tbsp fresh rosemary, finely chopped
  • 4 garlic cloves, minced
  • 1.5 tsp kosher salt
  • 3/4 tsp black pepper

Practical substitutions

  • If baby potatoes are unavailable: use Yukon Gold potatoes cut into 1-inch pieces, adjust roast time as needed.

Cooking / Baking

  • Parboil then roast at 425°F to crisp and brown.

Total cook time

  • 50 minutes (10 min prep/parboil + 40 min roast)

Instructions

  1. Preheat oven to 425°F. Line baking sheet with parchment if desired.
  2. Wash potatoes; leave small ones whole or halve larger ones so pieces are roughly uniform.
  3. Bring a large pot of salted water to a boil. Add potatoes and parboil 8–10 minutes until just tender when pierced with a fork. Drain and return to pot for 1 minute to steam-dry.
  4. In the large bowl, toss potatoes with 3 tbsp olive oil, 2 tbsp chopped rosemary, 4 minced garlic cloves, 1.5 tsp kosher salt and 3/4 tsp black pepper until evenly coated.
  5. Spread in a single layer on the baking sheet. Roast 35–40 minutes, turning once at the 20-minute mark, until edges are browned and crisp. If finished early, keep warm in the turned-off oven with door ajar; aim to serve within 5–10 minutes of finish.

  • 1 tbsp unsalted butter ⁺
  • 1 tsp kosher salt

  • 1 tbsp fresh thyme leaves

Cooking / Baking

  • Roast at 425°F until caramelized.

Total cook time

  • 45 minutes (10 minutes prep + 35 minutes roast)

Instructions

  1. Preheat oven to 425°F (shared with potatoes). Toss carrots and parsnips in a bowl with 2 tbsp olive oil, 2 tbsp honey, 1 tbsp melted butter, 1 tsp kosher salt, 1/2 tsp black pepper and 1 tbsp thyme.
  2. Spread on rimmed sheet in a single layer (do not crowd). Roast 30–35 minutes, turning once at 15 minutes, until edges are caramelized and tender. Keep warm in oven if finished a few minutes before serving; do not let go soggy.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: malt vinegar or lemon wedges for potatoes; extra chopped parsley and a small jar of English mustard on the table.
  • Global substitutions: cod can be swapped for haddock/pollock/firm white fish; buttermilk may be made from milk + vinegar as specified in the recipe.
  • Child-safety notes: Kids should be kept away from the oven door and hot pans during the 4:30–5:00 PM window when multiple hot surfaces are in use; keep handles turned in and a dedicated clear space for plating.
  • Timeline risk(s): The tightest execution window is 4:45–5:00 PM when the cod is pan-seared, potatoes finish roasting, sauce must be warmed and plating occurs. This period demands two-handed stove/oven work and accurate timers.
  • Mitigation mindset: Do a full mise en place before 4:30 PM (measure herbs, grate cheese, set plates and pans), pre-heat oven and arrange racks, keep timers for oven and stove, and use warm plates or tented foil for short holds. If oven space is restricted, rotate vegetables (put the fastest-to-finish sheet on the top rack) and consider finishing potatoes under the broiler for 2–3 minutes while watching closely.
  • Latest safe start time: You can start as late as 4:00 PM for a 5:00 PM serve.
