Sunday Italian Roast Supper

A relaxed Italian Sunday built around a herb-spatchcocked roast chicken, crisp rosemary potatoes and a last-minute fresh tagliatelle in brown butter and sage — comforting, family-friendly, and designed so the crisp pasta and dressed salad arrive at the table at their peak. Simple techniques, bold Italian flavors and one warm oven make efficient work of feeding five with planned leftovers.

  • Name: Sunday Italian Roast Supper
  • Cuisine: Italian
  • Serve time: 5:00 PM

One paragraph rationale: This is a classic Italian family supper that balances a hands-off herb-roast technique with one finish-to-order starch so textures and warmth are perfect at service. The spatchcocked chicken roasts quickly and rests while rosemary potatoes hold happily; a quick sautéed green vegetable and a bright arugula-tomato salad bring freshness. Fresh tagliatelle finished in brown butter and sage is the last-minute flourish that makes the meal feel special — approachable for kids, satisfying for adults, and efficient for one cook.

2. FULLY EXECUTABLE RECIPES

Herb-Roasted Chicken with Lemon and Garlic

Equipment

  • Kitchen shears
  • Cutting board
  • Chef’s knife
  • 16" x 12" rimmed baking sheet (or equivalent roasting pan)
  • Instant-read thermometer
  • Small bowl
  • Tongs
  • Aluminum foil (for resting)

Ingredients

  • 1 whole chicken, 5.0 lb (spatchcocked) — see Instructions for how to spatchcock
  • 3 tbsp extra-virgin olive oil⁺
  • 2.5 tsp kosher salt⁺
  • 1 tsp freshly ground black pepper⁺
  • 4 cloves garlic, minced⁺ (about 1 tbsp)
  • 2 tbsp fresh rosemary, finely chopped⁺ (about 6–8 small sprigs)
  • 1 tbsp fresh thyme, leaves only⁺ (about 8–10 sprigs)
  • 1 lemon, zested and halved⁺

Practical substitutions

  • If you cannot find a 5-lb whole chicken, use two bone-in chicken breasts and adjust roasting time (not covered here); whole spatchcocked bird gives best even roast.
  • If fresh rosemary/thyme are unavailable, use 2 tsp dried rosemary and 1 tsp dried thyme (reduce by half if very old).

Cooking / Baking

  • Oven: 425°F
  • Target internal temperature: 165°F in thickest part of thigh
  • Total cook time: 55 minutes (10 min active prep + 40 min roast + 5 min finish)

Instructions

  1. Remove chicken from refrigerator 10 minutes before starting active work. Preheat oven to 425°F and put rack in the center.
  2. Spatchcock the chicken: place chicken breast-side down on cutting board. Using kitchen shears, cut along both sides of the backbone and remove it; flip the bird breast-side up and press firmly with both palms to flatten. Trim excess fat. (If uncomfortable with shears, ask butcher to spatchcock.)
  3. Pat chicken dry with paper towels. Transfer to rimmed baking sheet skin-side up.
  4. In small bowl combine olive oil, kosher salt, pepper, minced garlic, chopped rosemary, thyme, and lemon zest. Rub mixture all over the skin and under the skin where you can, and under the breasts if you can reach.
  5. Place the two lemon halves cut-side down next to the bird on the pan (they flavor the pan juices).
  6. Roast in the preheated oven at 425°F for 40 minutes uncovered. Start checking at 35 minutes: insert instant-read thermometer into the thickest part of the thigh (not touching bone); target 165°F. If at 40 minutes it's 160°F, return to oven and check every 3–4 minutes.
  7. When 165°F is reached, remove from oven and tent loosely with foil. Rest 10 minutes before carving and serving. Use pan juices for spooning on plates if desired.

Crispy Rosemary Roasted Potatoes

Not low-carb: potatoes.

Not paleo: yukon gold.

Equipment

  • 9" x 13" baking pan
  • Mixing bowl
  • Measuring spoons
  • Spatula

Ingredients

  • 2.5 lb small Yukon Gold or red potatoes, halved or quartered to ~1–1.5" pieces (about 0.5 lb per person)
  • 3 tbsp extra-virgin olive oil⁺
  • 1 tbsp fresh rosemary, chopped⁺ (approx. 3–4 sprigs)
  • 1.5 tsp kosher salt⁺
  • 1/2 tsp freshly ground black pepper⁺
  • 3 cloves garlic, smashed and left in larger pieces⁺

Practical substitutions

  • If small potatoes aren’t available, use 3 lb regular potatoes cut into 1" dice; roast time the same with frequent turning.

Cooking / Baking

  • Oven: 425°F (shared with chicken)
  • Total cook time: 40 minutes (5 min prep + 35–40 min roast)

Instructions

  1. Preheat oven to 425°F (done with chicken). Toss halved potatoes with olive oil, chopped rosemary, kosher salt, black pepper, and smashed garlic in a mixing bowl until evenly coated.
  2. Spread in a single layer on a 9"x13" pan. Place in oven at the same time as the chicken (see timeline) on a lower rack. Roast 35–40 minutes, flipping once at roughly 20 minutes, until edges are golden and interior is tender when pierced.
  3. When done, remove garlic pieces (optional) and keep warm. Serve immediately or hold in pan covered with foil while chicken rests (no longer than 15 minutes).

Sautéed Green Beans with Garlic and Lemon

Not low-carb: green beans.

Not paleo: green beans.

Equipment

  • Large colander
  • 12" skillet
  • Tongs
  • Small bowl

Ingredients

  • 1.25 lb green beans, trimmed
  • 2 tbsp extra-virgin olive oil⁺
  • 3 cloves garlic, thinly sliced⁺
  • 1 tsp lemon zest⁺
  • 1 tbsp lemon juice⁺
  • 3/4 tsp kosher salt⁺
  • 1/2 tsp freshly ground black pepper⁺
  • 1 tbsp cold water (for finishing)

Practical substitutions

  • If green beans are out of season, use haricots verts (adjust trimming) or broccoli florets (sauté time will change; cut smaller).

Cooking / Baking

  • Stove: high heat for blanching/medium-high for sauté
  • Total cook time: 12 minutes (5 min prep + 7 min cook)

Instructions

  1. Trim green beans and rinse. Bring a 6-quart pot of water to a boil (you will use same pot for pasta — timing coordinated in timeline).
  2. Blanch beans 2 minutes in boiling water, then drain and refresh briefly under cold running water to stop cooking. Drain thoroughly.
  3. Heat 12" skillet over medium-high heat, add olive oil, then sliced garlic; cook 30 seconds until fragrant (don’t brown).
  4. Add blanched beans, toss for 3–4 minutes so they finish cooking and start to blister on spots.
  5. Add lemon zest, lemon juice, salt, pepper and 1 tbsp cold water; toss 30 seconds, remove from heat and transfer to a warm serving dish to hold very briefly until plating.

Fresh Tagliatelle with Brown Butter and Sage

Not gluten-free: tagliatelle.

Not dairy-free: butter.

Not low-carb: pasta.

Not paleo: pasta.

Equipment

  • 6-quart pot
  • Large colander
  • 10" skillet
  • Tongs
  • Grater
  • Measuring spoons

Ingredients

  • 20 oz fresh tagliatelle (refrigerated) — about 4 oz per person with a modest leftover serving
  • 8 tbsp unsalted butter (1 stick)
  • 20 fresh sage leaves (about 2 tbsp whole) or 1.5 tbsp chopped
  • 1 tbsp kosher salt for pasta water (for cooking)⁺
  • 1/2 cup grated Pecorino Romano (about 2 oz)
  • Freshly ground black pepper for finishing — 1/4 tsp⁺

Practical substitutions

  • If fresh pasta is not available, use 1 lb dried fettuccine (cook 8–10 minutes); timing will change.
  • If Pecorino is unavailable, use Parmigiano-Reggiano (milder).

Cooking / Baking

  • Stove: medium-high for boiling; medium-low for brown butter
  • Total cook time: 12 minutes active at the end (includes boiling, tossing, plating). This is a finish-to-order dish and must be cooked last.

Instructions

  1. Bring 4 quarts water to a rolling boil in a 6-quart pot; add 1 tbsp kosher salt when boiling.
  2. While water heats, melt butter in a 10" skillet over medium heat. Add sage leaves. Cook butter until it foams and begins to brown and smell nutty (2–3 minutes). Watch carefully — when butter is brown and fragrant remove skillet from heat and keep warm off the burner (do not burn).
  3. When water boils, add fresh tagliatelle and cook 2–3 minutes (fresh) until al dente. Reserve 1 cup pasta water, then drain pasta quickly in colander.
  4. Immediately return drained pasta to the skillet with the brown butter, add 1/4 cup reserved pasta water and toss vigorously with tongs for 30–45 seconds to coat. Add grated Pecorino Romano and another splash of pasta water if needed to form a glossy coating. Season with 1/4 tsp black pepper.
  5. Plate and serve immediately. Total active finish-to-order time ~12 minutes: boiling and tossing; final step must land within ~5 minutes of serve.

  • 3 tbsp extra-virgin olive oil⁺
  • 2 tbsp fresh lemon juice⁺
  • 1/2 tsp kosher salt⁺
  • 1/4 tsp freshly ground black pepper⁺

Practical substitutions

  • If arugula is peppery for kids, use baby spinach or mixed baby greens (label: substitute).

Cooking / Baking

  • Total cook time: 5 minutes (assembly). Toss salad at the last minute (finish within 5 minutes of serve).

Instructions

  1. In a bowl whisk together olive oil, lemon juice, kosher salt, and pepper.
  2. Add arugula and halved cherry tomatoes; toss lightly to coat.

  • Chianti Classico (red wine) — 1 bottle (750 ml)

Notes on notation in list:

  • Items used only for optional components are marked with ⁰ (none of the menu components are optional; San Pellegrino line is placed here for shopping practicality — primary Drinks section still lists it)

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper flakes and extra grated Pecorino Romano for adults to add at the table (not included in core shopping list).
  • Global substitutions: fresh tagliatelle may be substituted with 1 lb dried fettuccine if refrigerated fresh is unavailable — cooking time increases (8–10 minutes) and must be reflected in timeline if used.
  • Child-safety notes: use caution when spatchcocking raw poultry; keep kids away from the prep area when using sharp shears and the oven. Keep hot pans and carving area clear of children.
  • Explicit timeline risks:
    • The tightest execution window is 4:43–5:00 PM when pasta is finished-to-order while the chicken is resting and sides must be finished simultaneously. Juggling boiling water, sautéing green beans, finishing brown butter, and carving the chicken is the busiest stretch.
    • Risk mitigation mindset: sequence tasks, set timers, and stage mise en place (have pasta measured, butter & sage ready, salad pre-washed) so each step is immediate. If you finish early on any roast checks, use short pauses (brief wiping/combing tasks) but avoid cooking early for fresh pasta and salad.
  • Latest safe start time: You can start as late as 3:55 PM for a 5:00 PM serve.
