Sunday Mussels & Chips

A convivial British-style supper centered on steamed mussels in a classic white-wine, garlic and parsley broth, paired with crisp oven chips, minted peas and warm rolls — simple technique, bold coastal flavors and minimal last-minute fuss. It's worth sitting down for the theater of steaming mussels at the table, the crunch of fresh chips and the family-friendly, sharable format.

Moules Marinière (Steamed Mussels in White Wine)

Equipment

  • 1 large wide 5–6 quart stainless-steel or enameled saucepan with tight-fitting lid (or large Dutch oven)
  • Chef's knife and cutting board
  • Measuring cups and spoons
  • Fine-mesh colander or large bowl for cleaning mussels
  • Wooden spoon
  • Tongs
  • Serving bowl (wide, for mussels) and ladle

Ingredients

  • Fresh mussels in shell — 5.0 lb (total, in shell) (cleaned per instructions)
  • Dry white wine (Muscadet or unoaked Sauvignon Blanc) — 1 cup (8 fl oz)
  • Unsalted butter — 3 tablespoons (0.75 oz / 21 g) ⁺
  • Olive oil — 2 tablespoons (1 fl tbsp = 0.5 oz; total 1 fl oz)
  • Shallots — 3 medium (about 3.5 oz / 100 g), finely minced
  • Garlic — 6 cloves (about 2 oz / 60 g), peeled and minced
  • Flat-leaf parsley — 1/2 cup, packed, finely chopped (about 15 g)
  • Freshly ground black pepper — 1 teaspoon
  • Kosher salt — 1 1/2 teaspoons ⁺

Practical substitutions

  • If Muscadet is unavailable, use an unoaked Sauvignon Blanc or dry Pinot Grigio.
  • If fresh parsley is unavailable, use 2 tablespoons dried parsley (but reduce to 1/4 cup fresh-equivalent flavor).

Cooking / Baking

  • Total cook time: 12 minutes active steaming, plus about 15 minutes cleaning/prep (total kitchen time ~27 minutes).

Instructions

  1. Clean mussels (15 minutes): Place mussels in a large bowl of cold water. Working in batches, scrub shells and pull off beards. Discard any mussels that are cracked or do not close when tapped (or that remain open after a firm tap). Keep cleaned mussels in the colander refrigerated (on ice if needed) until ready.
  2. Prep aromatics (3 minutes): Finely mince shallots and garlic; chop parsley; measure wine, butter, oil, salt and pepper.
  3. Heat pan (30 seconds): Over medium heat, add olive oil and 1 tablespoon of the butter to the large pan. When the butter melts and begins to shimmer, add the minced shallots.
  4. Sweat aromatics (2 minutes): Cook shallots, stirring, until softened and fragrant but not browned (approx. 2 minutes). Add garlic and cook 30 seconds more.
  5. Deglaze (30 seconds): Add the 1 cup white wine and bring to a brisk simmer; scrape any fond from the pan with a wooden spoon.
  6. Add mussels and steam (6–8 minutes): Increase heat to high, add all mussels to the pot, cover immediately with the lid. Steam for 6–8 minutes, shaking the pot once after 3 minutes to redistribute. Mussels are done when most shells are open.
  7. Finish sauce (30 seconds): Remove lid, immediately add remaining 2 tablespoons butter, chopped parsley, salt and pepper; swirl until butter melts into glossy sauce.
  8. Plate (30 seconds): Transfer mussels and broth to the wide serving bowl with tongs; discard any mussels that remain closed. Serve immediately with ladle for broth.

Oven Chips (Skin-on Potato Wedges)

Not low-carb: potatoes.

Equipment

  • One 15" x 10" rimmed baking sheet (or two 12" x 9" sheets) — single layer is required
  • Large bowl for tossing
  • Sharp chef's knife and cutting board
  • Oven thermometer (optional)
  • Wire cooling rack and sheet pan (for crispness, optional)

Ingredients

  • Russet potatoes (unpeeled) — 4.0 lb (about 6 medium large potatoes)
  • Vegetable oil (or light olive oil) — 4 tablespoons (2 fl oz)
  • Kosher salt — 2 teaspoons ⁺
  • Ground black pepper — 1 teaspoon
  • Dried rosemary — 1 teaspoon (optional)
  • Smoked paprika — 1/2 teaspoon (optional, for mild smoky note kids will accept)

Practical substitutions

  • If Russets are unavailable, use Yukon Golds for slightly creamier insides (reduce roasting time by 5 minutes).
  • If vegetable oil is unavailable, use canola oil (neutral) or light olive oil.

Cooking / Baking

  • Total cook time: 40 minutes (active prep 15 minutes, oven time 40 minutes).

Instructions

  1. Preheat oven (at timeline time): Preheat oven to 425°F. Place the rack in the middle position.
  2. Wash and cut potatoes (10–12 minutes): Scrub potatoes and pat dry. Halve lengthwise, then cut each half into 3–4 wedges so pieces are approx. uniform (about 3/4"–1" thick).
  3. Toss (2 minutes): In the large bowl, combine potatoes, vegetable oil, kosher salt, black pepper, dried rosemary and smoked paprika (if using). Toss thoroughly so each wedge is lightly coated.
  4. Roast (40 minutes): Spread potatoes in a single layer on the rimmed baking sheet(s) with the cut side down where possible. Roast at 425°F for 40 minutes, turning once with a spatula at the 20–22 minute mark to promote even browning.
  5. Finish (1 minute): After 40 minutes, potatoes should be golden and crisp outside. Transfer to a wire rack set over a baking sheet (keeps underside crisp) and tent loosely with foil if you must hold briefly (no more than 15 minutes).
  6. Serve: Bring to table hot; salt lightly if needed (recipe uses exact salt in prep).

  • Fresh mint leaves — 2 tablespoons, finely chopped (about 8–10 leaves) ⁺
  • Kosher salt — 1 teaspoon ⁺
  • Ground black pepper — 1/4 teaspoon

Practical substitutions

  • If frozen peas unavailable, use two 15.5 oz cans of petit peas, drained (reduce salt to 3/4 tsp).

Cooking / Baking

  • Total cook time: 6 minutes (active).

Instructions

  1. Bring peas to a simmer (2–3 minutes): In the saucepan, add frozen peas and 1–2 tablespoons water. Cover and bring to a simmer over medium heat until peas are just warmed through (about 2–3 minutes).
  2. Finish (2–3 minutes): Remove lid, add butter, milk, chopped mint, salt and pepper. Stir to combine. If you prefer a slightly mashed texture, press with the back of the spoon to break some peas.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crusty rolls (listed as optional); individual malt vinegar for chips at table (not required — bring if household prefers).
  • Global substitutions: Muscadet may be replaced by an unoaked Sauvignon Blanc for cooking and bottle purchase; frozen peas may be replaced with canned peas (drained) if necessary.
  • Child-safety notes: Cleaning and steaming mussels involves hot steam and boiling liquid; keep children away from stove during mussel steaming and while removing lids. Shell fragments may occur; supervise young children while eating mussels and offer chips and peas first.
  • Timeline risks:
    • Tightest execution window: cleaning mussels and steaming them at the end (4:35–4:58). If mussels are not fully cleaned by 4:50, final steaming will be delayed and service time risks slipping.
    • Oven capacity: chips require a full 40-minute roast; turning at ~20 minutes is needed. If oven space is small, roast batches may be required, which will extend the timeline.
  • Practical mitigation mindset:
    • Assign about 15 continuous minutes to mussel cleaning starting at 4:35 and focus on removing beards and discarding bad shells quickly; if you fall behind, you can place cleaned mussels in a colander in cold water while finishing chips, but do not wash them twice.
    • If oven space is tight, cut chips slightly smaller to reduce roast time by 5–7 minutes, and keep a close eye on browning.
    • Keep mise en place: mince shallots/garlic and measure wine and butter before starting chips to avoid parallel overload.
  • The latest safe start time: You can start as late as 4:00 PM for a 5:00 PM serve.
