Sunday Roman Family Supper

A convivial Italian Sunday supper built around a juicy roasted lemon‑herb chicken and a bright, finish‑to‑order tagliatelle al limone with sautéed mushrooms; roasted Parmesan potatoes and garlicky green beans round the table. Precise timing keeps the roast resting while the pasta and bread finish so everything reaches the table hot and balanced.

  • Cuisine: Italian

This menu pairs a comforting, savory roasted lemon‑herb chicken that holds while a bright, finish‑to‑order tagliatelle al limone (lemon pasta) with sautéed mushrooms provides the immediate, silky pasta moment that kids and adults both enjoy. 2. FULLY EXECUTABLE RECIPES

Roasted Lemon-Herb Chicken

Equipment

  • One rimmed baking sheet, 18 x 13 inches
  • Wire rack that fits the sheet pan (optional but recommended)
  • Instant-read thermometer
  • Chef’s knife, cutting board, small mixing bowl, spoon

Ingredients

  • Bone-in, skin-on chicken pieces (mix of thighs + drumsticks): 4.5 lb total (about 8 pieces)
  • Olive oil: 3 tablespoons
  • Fresh lemon: 2 whole lemons (one zested and juiced, one sliced into 6 rounds)
  • Garlic: 4 cloves, minced
  • Fresh rosemary: 2 tablespoons chopped (about 2 medium sprigs)
  • Fresh thyme: 2 tablespoons leaves
  • Fresh parsley: 1 tablespoon chopped
  • Kosher salt: 2 teaspoons
  • Black pepper: 1 teaspoon
  • Unsalted butter: 2 tablespoons

Practical substitutions:

  • If fresh herbs are unavailable, use dried: 2 teaspoons dried rosemary + 2 teaspoons dried thyme + 1 teaspoon dried parsley (use half the fresh-herb volume).
  • If only chicken breasts available, increase oven temp to 425°F and reduce roast time; follow internal temp guidance below.

Cooking / Baking

  • Oven temperature: 425°F
  • Roast time: 40–45 minutes
  • Target internal temperature: 165°F at the thickest part of the largest piece
  • Total cook time (including short rest): 55 minutes

Instructions

  1. Preheat oven to 425°F.
  2. Pat chicken pieces dry with paper towels. Arrange on wire rack set over the rimmed sheet pan (if no rack, arrange directly on pan, skin side up).
  3. In a small bowl combine olive oil (3 tbsp), minced garlic (4 cloves), lemon zest + juice from 1 lemon, chopped rosemary, thyme, parsley, kosher salt (2 tsp) and black pepper (1 tsp). Stir to a loose paste.
  4. Rub the herb‑lemon mixture evenly under and over the skin of each chicken piece. Tuck lemon slices between pieces and around the chicken on the tray.
  5. Dot chicken with 2 tablespoons unsalted butter (divide over pieces).
  6. Roast at 425°F for 40–45 minutes, rotating the pan once halfway if your oven is uneven, until an instant‑read thermometer reads 165°F at the thickest point (avoid touching bone).
  7. Remove from oven, tent loosely with foil and rest 10 minutes before carving and serving. Reserve pan juices for spooning over the chicken at service.

Tagliatelle al Limone with Sautéed Mushrooms (finish-to-order)

  • Large pot (for boiling pasta), 6–8 quart
  • Large skillet, 12-inch stainless steel or nonstick
  • Pasta strainer, ladle, tongs
  • Microplane/zester, wooden spoon

Ingredients

  • Dried tagliatelle or pappardelle: 1.25 lb (20 oz)
  • Cremini mushrooms: 12 oz, trimmed and sliced 1/4-inch
  • Olive oil: 2 tablespoons
  • Unsalted butter: 6 tablespoons
  • Garlic: 2 cloves, minced
  • Fresh lemon: zest and juice of 2 lemons (zest reserved separately)
  • Parmesan, finely grated: 1 1/4 cups (about 4 oz)
  • Kosher salt: 2 teaspoons (for pasta water and final seasoning; see steps)
  • Black pepper: 1/2 teaspoon
  • Fresh parsley: 1 tablespoon chopped (for finishing)

Cooking / Baking

  • Active finish-to-order cook time at stove: 8–12 minutes (start so final toss completes at 5:00 PM)
  • No oven temperature required

Instructions

  1. Bring a 6–8 quart pot of water to a rolling boil; add 2 teaspoons kosher salt when boiling.
  2. In a large skillet over medium heat, add 2 tablespoons olive oil. Add sliced mushrooms and sauté 4–5 minutes until they release liquid and begin to brown. Add minced garlic (2 cloves) and sauté 30 seconds more. Remove skillet from heat and set near stove.
  3. When the water is at a rolling boil and at the timeline cue, add the pasta and cook, stirring, for the package’s al dente time minus 1 minute.
  4. Reserve 1 cup pasta cooking water, then drain pasta quickly.
  5. Over medium heat, return the mushroom skillet to the burner; add 6 tablespoons butter and the drained pasta. Add lemon zest + juice of 2 lemons, 1 cup reserved pasta water, and 1 1/4 cups grated Parmesan. Toss vigorously with tongs, adding more pasta water in tablespoonfuls if needed to create a glossy sauce that coats the pasta (should be saucy, not dry).
  6. Adjust seasoning with up to 1/4 teaspoon additional kosher salt if needed and 1/2 teaspoon black pepper. Stir in 1 tablespoon chopped parsley.
  7. Plate and serve immediately — this dish must be finished within minutes of service.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper flakes and extra grated Pecorino Romano for those who want to add heat or more cheese; keep at the table for adults only.
  • Global substitutions: If you require a vegetarian main, substitute a whole roasted cauliflower (about 3 lb) prepared and timed like the chicken; this plan assumes chicken as main.
  • Child-safety notes: Keep children away from the oven when removing trays at 4:45 PM and from the pasta pot at 4:50–5:00 PM. Hot liquids and oven racks present burn risks.
  • Explicit timeline risk(s): The tightest execution window is 4:45–5:00 PM when you are removing roast and potatoes, carving the chicken, finishing the pasta, and warming the bread. That 15-minute window packs multiple simultaneous tasks and is the single highest‑risk section of the plan.
  • Practical mitigation mindset: Do mise en place fully before placing items in the oven — have herbs chopped, garlic minced, pasta water pot ready, parchment and pans laid out. Use the oven’s racks to roast both chicken and potatoes simultaneously. When the pasta water is boiling, rely on timers and reserve the pasta water before draining; while finishing sauce, have the carving fork and serving platter ready so carving is a 2‑minute task. Delegate a simple holding/serving task (setting plates, pouring kid spritz) to another adult if available during the 4:58–5:00 push.
  • Latest safe start time: You can start as late as 3:50 PM for a 5:00 PM serve.
