Zen Weeknight Sunday Supper

A composed home-style Japanese dinner centered on savory pan-seared miso-marinated tofu, balanced with glossy steamed short-grain rice, warming miso soup, nutty sesame spinach (goma-ae), and crisp cucumber sunomono — straightforward techniques, bold umami, and finish-to-order items timed to land at the table for best texture.

  • Name of the meal: Zen Weeknight Sunday Supper
  • Cuisine type: Japanese
  • Serve time: 5:00 PM

This Sunday supper is an approachable, authentic Japanese home-cooking menu that balances a caramelized miso-marinated tofu centerpiece with essential Japanese accompaniments: glossy steamed short-grain rice, warming miso soup, nutty sesame-dressed spinach (goma-ae), and a crisp, bright cucumber sunomono. The plan staggers holding-friendly items so a single cook can finish texture-sensitive components last; flavors are umami-forward and mild with table-side options for heat.

  • Pan-Seared Miso-Marinated Tofu
  • Steamed Japanese short-grain rice
  • Miso soup with silken tofu and wakame
  • Spinach goma-ae (sesame-dressed spinach)
  • Cucumber sunomono (quick pickles) — finish-to-order
  • Yuzu Lemonade (kid-friendly)
  • Junmai sake, chilled (adult beverage)
  • Shichimi togarashi (optional) (optional)

2. FULLY EXECUTABLE RECIPES

Pan-Seared Miso-Marinated Tofu

Equipment

  • 10" heavy skillet (nonstick or cast-iron preferred)
  • Baking sheet or plate for pressing tofu
  • Cutting board and chef's knife
  • Large heavy weight (2–4 lb can or skillet) for pressing
  • Mixing bowl and small whisk or fork
  • Rubber spatula
  • Tongs or wide spatula for turning tofu
  • Instant-read thermometer (optional)

Ingredients

  • Extra-firm tofu — 4 blocks (14 oz each) — total 56 oz
  • White miso (shiro miso) — 1 cup (16 tbsp)
  • Mirin — 1/2 cup (8 tbsp)
  • Cooking sake — 1/4 cup (4 tbsp)
  • Granulated sugar — 4 tbsp
  • Soy sauce — 3 tbsp
  • Neutral oil (vegetable or canola) — 3 tbsp
  • Toasted sesame oil — 2 tbsp
  • Scallions (green onions) — 4 stalks (thinly sliced for garnish)
  • Toasted sesame seeds — 2 tbsp (for garnish)
  • Black pepper — 1 tsp

Practical substitutions:

  • White miso → mellow yellow (awase) miso 1:1 if needed.
  • Cooking sake → dry white wine 1:1; if mirin is omitted add 1 tbsp sugar.

Cooking / Baking

  • Total cook time (including pressing and brief marinate): 1 hour 8 minutes elapsed (30 min pressing passive + 15 min marinade passive + ~18 minutes active searing + prep)
  • Active hands-on time: ~30 minutes

Instructions

  1. (3:20 PM timeline start) Place each tofu block on folded clean kitchen towels or layers of paper towel on a baking sheet or plate. Top with another towel and a heavy weight (2–4 lb). Press 30 minutes to remove excess water.
  2. While pressing, whisk the marinade: 1 cup white miso, 1/2 cup mirin, 1/4 cup cooking sake, 4 tbsp granulated sugar, 3 tbsp soy sauce, and 1 tsp black pepper until smooth.
  3. After 30 minutes pressing, remove weights, unwrap tofu. Slice each 14‑oz block horizontally into two thick slabs (2 per block) to yield 8 slabs total. Pat slabs dry with paper towel.
  4. Spread about 1–1.5 tbsp marinade on each face of every slab so both sides are lightly coated. Arrange slabs on a plate marinade-side up and let sit 15 minutes at room temperature.
  5. Heat a 10" skillet over medium-high until hot (2–3 minutes). Add 1.5 tbsp neutral oil and swirl.
  6. Place 3 tofu slabs in the skillet (do not overcrowd), marinade-side down first. Sear without moving 4–5 minutes until the marinade caramelizes and a deep golden crust forms. Flip and sear the other side 3–4 minutes. Transfer to a warm plate and tent lightly.
  7. Wipe pan if burned residue develops, add remaining 1.5 tbsp oil and repeat with remaining slabs in batches (approximately 18 minutes searing total). If you have a second skillet, preheat it and run a second batch simultaneously.
  8. After the last slabs are seared, brush all slabs lightly with the 2 tbsp toasted sesame oil divided across them, sprinkle 2 tbsp toasted sesame seeds and sliced scallions, and serve immediately.

Steamed Japanese Short-Grain Rice

Equipment

  • Medium Dutch oven or heavy 3–4 qt pot with tight-fitting lid (or rice cooker)
  • Fine mesh sieve
  • Rice paddle or spatula

Ingredients

  • Japanese short-grain rice — 4 cups (uncooked)
  • Water — 4 1/2 cups
  • Salt — 1 tsp

Practical substitutions:

  • If Japanese short-grain is unavailable, use medium-grain rice; texture will differ.

Cooking / Baking

  • Total cook time: 36 minutes (bring to boil ~6–8 min, simmer 18–20 min, rest 8–10 min)
  • Active hands-on time: 10–12 minutes

Instructions

  1. Rinse 4 cups rice: place rice in a bowl, cover with cold water, swirl and pour off cloudy water; repeat 3–4 times until water is mostly clear. Drain in fine mesh for 2 minutes.
  2. Return rice to pot. Add 4 1/2 cups cold water and 1 tsp salt. Cover pot and bring to a rolling boil over high heat (lid slightly venting) — about 6–8 minutes.
  3. Immediately reduce heat to low so lid sits snug and simmer gently for 18–20 minutes (do not lift lid).
  4. Turn off heat and rest, covered, for 8–10 minutes. Fluff with paddle and serve warm.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: shichimi togarashi for adult heat; pickled ginger for sunomono garnish.
  • Global substitutions: yuzu concentrate may be substituted by orange juice + extra lemon; white miso may be swapped for mellow yellow (awase) miso 1:1.
  • Child-safety notes: High-heat searing (4:34–4:47 PM) involves hot oil and splatter — keep children away from stove during that window and use long spatula/tongs.
  • Timeline risk(s): The tightest execution window is the final tofu searing and simultaneous finishing of miso soup, rice rest, and dressing the sunomono (approx. 4:34–4:50 PM). Multiple short searing batches must be completed without overcooking or letting slabs sit long.
  • Mitigation mindset: Preheat two skillets if available and have pans/oil ready; wipe excess marinade off the pan between batches to prevent burning; keep mise en place fully staged so finishing tasks (miso slurry, salad dressing, rice fluff) are one-motion actions.
  • The latest safe start time in plain language: You can start as late as 3:20 PM for a 5:00 PM serve.
