Aegean Sunday Briam Supper

A bright, vegetable-forward Greek supper built around slow-roasted briam — caramelized potatoes, eggplant and zucchini – finished tableside with quickly seared halloumi. Complemented by lemony orzo, cool tzatziki, a fresh Greek salad, warm pita and a sparkling lemon-mint drink for kids with a bottle of Assyrtiko for adults.

  • Cuisine: Greek
  • Serve time: 5:00 PM
  • Rationale: This meal centers on a classic Greek briam — layered, herb-scented roasted vegetables — that showcases the islands' olive oil and summer produce; seared halloumi adds a savory, squeaky counterpoint served hot at the table, while lemon-orzo and tzatziki balance richness with brightness. The menu is family-friendly, straightforward to execute solo within the cooking window, and leaves planned leftovers for easy reheating.
  • Briam with Crispy Halloumi
  • Lemon Orzo (kritharaki)
  • Tzatziki (yoghurt-cucumber sauce)
  • Greek Salad (undressed; dress at service)
  • Warm store-bought pita
  • Greek Lemon-Mint Sparkler (kid drink)
  • Assyrtiko white wine (adult beverage)
  • Honey Yogurt with Walnuts (optional)

2. FULLY EXECUTABLE RECIPES

Briam with Crispy Halloumi

Equipment

  • 1 (9" x 13") rimmed roasting pan (or 12" x 9" baker)
  • Sheet tray lined with foil or parchment (for holding finished briam)
  • Chef’s knife, cutting board
  • Measuring cups and spoons
  • Aluminum foil
  • 10" nonstick or stainless skillet (for halloumi)
  • Tongs and spatula
  • Small bowl + whisk

Ingredients

  • Potatoes, peeled and cut into 1/3" rounds — 1.5 lb
  • Eggplant, cut into 1/2" rounds or 1/2" cubes — 1 lb
  • Zucchini, cut into 1/3" rounds — 1 lb
  • Fresh tomatoes, medium, cored and coarsely chopped — 1 lb (about 3 medium) ⁺
    • Substitution: 14 oz can crushed tomatoes if fresh not available; use the can and skip the fresh-chopping step.
  • Yellow onion, thinly sliced — 1 large
  • Garlic, minced — 4 cloves (from 1 bulb) ⁺
  • Extra-virgin olive oil — 6 tbsp ⁺
  • Fresh oregano, chopped — 2 tbsp (or 2 tsp dried oregano)
  • Fresh parsley, chopped — 2 tbsp ⁺
  • Fresh lemon juice — 1 tbsp (from 1 lemon) ⁺
  • Kosher salt — 1.5 tsp ⁺
  • Black pepper, ground — 1/2 tsp ⁺
  • Optional garnish: thin lemon slices — 1/2 lemon

(Part of this dish finishes at service: halloumi — see its own instructions below. The roasted vegetables are the main roast.)

Practical substitutions

  • If fresh oregano is unavailable, use 2 tsp dried oregano.
  • If you use canned tomatoes, drain lightly or use them as-is; reduce added lemon to 1/2 tbsp.

Cooking / Baking

  • Oven: 400°F
  • Roast time (vegetables): 55 minutes
  • Internal or doneness guideline: Vegetables are done when potatoes are tender through (test with a paring knife) and edges are golden-brown.

Total cook time

  • 1 hour 15 minutes (20 minutes active prep + 55 minutes roast). Halloumi sear appended as a last-minute 6-minute active step (see Halloumi below).

Instructions

  1. Preheat oven to 400°F. Place the roasting pan on the counter.
  2. Prepare vegetables: peel and slice potatoes 1/3", slice eggplant and zucchini 1/3–1/2", thinly slice onion, chop tomatoes, mince garlic, chop oregano/parsley.
  3. In the roasting pan, layer/toss vegetables: spread potatoes in a single layer, scatter onion, eggplant and zucchini evenly. Add chopped tomatoes and minced garlic over the top.
  4. Drizzle 6 tbsp extra-virgin olive oil evenly over vegetables. Sprinkle 1.5 tsp kosher salt, 1/2 tsp black pepper, 2 tbsp chopped oregano and 2 tbsp chopped parsley. Squeeze 1 tbsp lemon juice evenly. Toss gently with tongs (or use hands) to coat without mashing; arrange in an even, single-ish layer so vegetables roast rather than steam.
  5. Cover loosely with aluminum foil and put into the preheated oven. Roast uncovered at 400°F for 55 minutes, checking once at ~35 minutes to stir gently so edges brown evenly.
  6. At 50–55 minutes, remove foil and roast uncovered the last 10 minutes to brown; verify potatoes are tender by piercing. If tender and edges crisped, remove from oven at roughly 55 minutes.
  7. Transfer pan to a heat-safe place; sprinkle remaining 1 tbsp chopped parsley and the optional lemon slices. Tent loosely with foil and hold; briam may rest up to 15 minutes before serving (it is a room-temperature/holding-style vegetable roast).

Notes: Do NOT cook the halloumi now — halloumi must be seared at service time (last step) so it is hot and squeaky; see Halloumi recipe below and time it to finish within ~5 minutes of serving.

Halloumi — Crispy Seared

Equipment

  • 10" nonstick or stainless skillet
  • Tongs or spatula
  • Paper towels
  • Chef’s knife

Ingredients

  • Halloumi cheese, sliced 1/3" thick — 12 oz (2 blocks) ⁺
  • Extra-virgin olive oil — 2 tbsp ⁺
  • Lemon wedges for squeezing (optional) — from 1/2 lemon ⁺

Practical substitutions

  • If halloumi is unavailable, use kasseri or kefalotyri if stocked locally; note texture will differ.

Cooking / Baking

  • Pan: medium-high heat on stovetop
  • Cook time: 6 minutes total (two quick batches)

Total cook time

  • 6 minutes active (finish-to-order)

Instructions

  1. Shortly before service (start searing so the last batch completes within ~5 minutes of the 5:00 PM serve), heat a 10" skillet over medium-high heat for 2 minutes until hot.
  2. Pat halloumi slices dry on paper towels to remove excess moisture.
  3. Add 1 tbsp olive oil to skillet. When oil shimmers, place as many slices as fit without crowding (about half the batch). Sear 2.5–3 minutes until golden-brown on the first side.
  4. Flip slices and sear the second side 1.5–2 minutes until golden and crisp. Transfer to a warm plate and tent with foil.
  5. Add remaining 1 tbsp oil and repeat with remaining slices (2.5–3 min then flip). Total active pan time ≈ 6 minutes.
  6. Squeeze lemon wedge over seared halloumi if desired and serve immediately, plated beside briam so each diner gets warm halloumi.

Lemon Orzo (Kritharaki)

Not gluten-free: orzo.

Equipment

  • 3-qt saucepan with lid
  • Measuring cups and spoons
  • Wooden spoon
  • Zester and citrus juicer

  • Black pepper — 1/2 tsp ⁺
  • Fresh lemon zest — 1 tsp (from 1 lemon) ⁺
  • Fresh lemon juice — 2 tbsp (from 1 lemon) ⁺
  • Fresh parsley, chopped — 1/4 cup ⁺
  • Optional butter for sheen — 1 tbsp (omit for dairy-free)

Practical substitutions

  • If kritharaki (orzo) is unavailable, use small rice-shaped pasta; cook time similar.

Cooking / Baking

  • Stove: medium-high to medium
  • Cook time: 17 minutes total (5 min prep + 12 min simmer)

Total cook time

  • 17 minutes

Instructions

  1. Bring 5 cups vegetable broth to a simmer in a 3-qt saucepan.
  2. Heat 2 tbsp olive oil in the saucepan over medium heat; add 2.5 cups orzo and toast, stirring, 1–2 minutes until glossy and slightly nutty.
  3. Carefully add the simmering broth, stir, bring back to a simmer, reduce heat to medium-low and cover. Simmer 10–12 minutes, stirring once halfway, until orzo is al dente and most liquid absorbed.
  4. Remove from heat, stir in 1 tsp lemon zest, 2 tbsp lemon juice, 1/4 cup chopped parsley, 1.5 tsp kosher salt and 1/2 tsp black pepper. Cover and let rest 2 minutes, then fluff with a fork. Keep covered and warm; finish no earlier than ~13 minutes before serve to avoid sitting too long.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: crushed red pepper flakes or chili oil on the table for adults who want heat (do not add to shared base).
  • Global practical substitution: If Assyrtiko is not stocked, buy a dry, unoaked Sauvignon Blanc or Vermentino.
  • Child-safety notes: Keep the hot skillet and serving platter away from the table edge when searing halloumi; supervise kids while halloumi is being seared and when serving hot pita.
  • Timeline risk(s): The tightest execution window is the final 12 minutes (4:50–5:00 PM) when you must remove briam, warm pita, sear two batches of halloumi and dress salad. If any single step runs long (oven took longer to finish briam or halloumi batches take longer), the hot components will be late.
  • Practical mitigation mindset: Work in exact sequence — remove briam promptly at doneness, immediately place pita in oven, then sear halloumi in quick back-to-back batches using the highest safe heat (preheat pan thoroughly) and a wide skillet to fit more slices. Have plating dishes and utensils ready before 4:45; clear space for hot pans. If halloumi batch count threatens timing, slice halloumi slightly thinner (1/4") to reduce searing time per batch.
  • Latest safe start time: You can start as late as 3:35 PM for a 5:00 PM serve.
