Andean Sunday Supper

A family-ready Latin American spread built around a simply roasted pork tenderloin brightened with herbaceous chimichurri, with staples—cilantro-lime rice, seasoned black beans, roasted sweet potatoes, a fresh avocado-lime salad—and warm corn tortillas. The menu balances hands-off oven time and quick finish-to-order elements so one cook can deliver seven plated servings on schedule.

  • Name of the meal: Andean Sunday Supper
  • Cuisine type: Latin American
  • Serve time: 5:00 PM

One paragraph rationale: A family-friendly Latin American Sunday supper that layers bright, acidic chimichurri over simply roasted pork for a crowd-pleasing centerpiece; the plate is completed by fragrant cilantro-lime rice, gently seasoned black beans, sweet roasted tubers and a crisp avocado-lime salad. Everything is chosen to scale easily for seven, minimize continuous attention, and concentrate the last-minute work on just a few quick finish-to-order items so the cook can serve everything hot and fresh.

  • Roasted Pork Tenderloin with Chimichurri (Lomo de Cerdo al Chimichurri)
  • Cilantro-Lime Rice
  • Quick Seasoned Black Beans (from canned)
  • Oven-Roasted Sweet Potatoes with Smoked Paprika
  • Avocado-Lime Green Salad (finish-to-order)
  • Warm Corn Tortillas (finish-to-order)

Roasted Pork Tenderloin with Chimichurri (Lomo de Cerdo al Chimichurri)

Equipment

  • 12-inch heavy skillet (cast-iron preferred)
  • Instant-read thermometer
  • Rimmed sheet pan (half sheet, 18×13 in) or 10×15-inch baking sheet (use one)
  • Cutting board, chef’s knife
  • Tongs, aluminum foil
  • Small bowl for resting/chopping board for trimming

Ingredients (serves 7)

  • 3.0 lb pork tenderloin (two pieces totaling ~3.0 lb)
  • 2 tablespoons olive oil (for searing) ⁺
  • 2 teaspoons kosher salt ⁺
  • 1 teaspoon ground black pepper ⁺
  • 1 teaspoon ground cumin ⁺
  • 3 cloves garlic, minced (≈1 tablespoon) ⁺

Practical substitutions:

  • If pork tenderloin is sold as one large 2–3 lb piece, use it; if only pork loin is available, choose a center-cut pork loin roast no larger than 3 lb and increase oven time to reach 145°F internal temp (see internal temp guidance in cooking steps).

Cooking / Baking

  • Oven temperature for roasting: 400°F.
  • Target internal temperature: 145°F (then rest 10 minutes; carryover to 150°F).
  • Total cook time: active 28 minutes (8 min sear + 18 min roast) + 10 min resting = 38 minutes total from stove-on to ready-to-serve (rest finishes at serve time).

Instructions

  1. (Prep) Pat pork dry with paper towels. Mix 2 tsp kosher salt, 1 tsp black pepper, 1 tsp ground cumin and rub evenly over all sides of the pork. Press minced garlic onto surface. Let sit at room temperature while you prep other items (up to 30 minutes).
  2. (Preheat) Preheat oven to 400°F. Put a rimmed baking sheet or small roasting pan in the oven to preheat for the roast if desired; otherwise you will transfer seared pork to the sheet pan directly.
  3. (Sear) Heat a 12-inch heavy skillet over medium-high heat until hot (about 3 minutes). Add 2 tbsp olive oil, swirl to coat. When oil shimmers, add pork and sear, turning every 2 minutes to brown all sides evenly, total ≈8 minutes (sear time may vary; do not leave unattended).
  4. (Roast) Transfer seared pork to the preheated rimmed sheet pan. Roast in the oven at 400°F for 18 minutes or until an instant-read thermometer in the thickest part reads 145°F.
  5. (Rest) Remove pork, tent loosely with foil and rest 10 minutes. Slice into 1/2-inch medallions and serve with chimichurri spooned over or on the side.

Total cook time: 28 minutes active + 10 minutes resting = 38 minutes.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: extra chimichurri in a small bowl, lime wedges, sliced hot peppers or hot sauce for adults who want extra heat (do not spice base).
  • Global substitutions: vegetable broth may replace chicken broth for a vegetarian pantry; cilantro can be reduced if disliked (increase parsley and add shallot).
  • Child-safety notes: keep hot pans, skillet edges and oven door away from children's reach; handle searing and oven transfers while children are seated away from cooking area.
  • Timeline risk(s): the tightest execution window is 4:20–4:50 PM where stove-top tasks (bringing rice to boil, searing pork) overlap with starting beans and oven roast. The cook must be comfortable multitasking: bringing liquids to boil, searing, and transferring to oven in quick succession. If the cook is less confident, shift the start earlier by up to 10–15 minutes for breathing room.
  • Practical mitigation mindset: have all mise en place completed before 4:15 (rice rinsed and measured, beans drained, pork trimmed and seasoned, pans at hand). Keep timers visible and use the oven mitt to transfer pork immediately after sear. If needed, one short boil on rice can be reduced by carrying a tiny extra minute in the simmer step — rice tolerates a minute’s variance.
  • Leftovers: quantities scale to produce planned leftovers for 7. Store pork slices, beans and rice in airtight containers in refrigerator within 2 hours.
  • The latest safe start time: You can start as late as 3:50 PM for a 5:00 PM serve. Starting later reduces wiggle room in the multitask window and increases risk.
