Andean Sunday Supper

A bright Latin American family supper centered on pan-seared garlic-lime shrimp with cilantro-lime butter, supported by coconut-lime rice, stewed black beans, fried sweet plantains, a crisp jicama–orange salad and warm corn tortillas. Focused technique and tight timing deliver fresh textures at the plate and simple, kid-friendly flavors with planned leftovers.

  • Name of the meal: Andean Sunday Supper
  • Cuisine: Latin American
  • Serve time: 5:00 PM

This meal pairs a quick, fragrant pan-seared shrimp as the centerpiece with coconut-lime rice and seasoned black beans that hold while you finish fragile elements. Sweet plantains are fried to golden softness and a crisp jicama–orange salad is dressed at the last minute for contrast. The composition balances bright citrus, cilantro, gentle garlic and a touch of smoky paprika so everyone (including children) can eat the shared base; adults add heat at the table.

  • Small bowl
  • Tongs
  • Instant-read thermometer (optional)
  • Measuring spoons

Ingredients (serves 4; makes leftovers)

  • 2 lb peeled, deveined medium-large raw shrimp (about 20–24 count), chilled
  • 2 tablespoons olive oil⁺
  • 4 tablespoons (1/4 cup) unsalted butter⁺
  • 4 cloves garlic, minced⁺ (about 1 1/2 tablespoons)
  • 1 teaspoon ground cumin⁺
  • 1 teaspoon smoked paprika (or regular paprika)
  • 2 teaspoons kosher salt⁺
  • 1 teaspoon freshly ground black pepper⁺
  • Juice of 2 limes (about 4 tablespoons)⁺
  • 1/2 cup cilantro, finely chopped⁺
  • Lime wedges for serving (from the limes above)⁺

Practical substitutions

  • If peeled shrimp are unavailable, buy 2.5 lb shrimp with shells and peel them; add 10 minutes. For smoked paprika substitute 1 tsp regular paprika + 1/8 tsp chipotle powder (optional, for adult at-table heat only).

Cooking / Baking

  • Total cook time: 12 minutes active (plus 10 minutes mise en place)

Instructions

  1. Remove shrimp from fridge and pat dry on paper towels (2 minutes).
  2. In a small bowl, mix minced garlic, cumin, smoked paprika, 1 teaspoon salt and 1/2 teaspoon black pepper. Toss shrimp with this mixture and the olive oil; set bowl next to stove (2 minutes).
  3. Heat the 12" skillet over medium-high until hot (1–2 minutes). Add 2 tablespoons unsalted butter; when foaming, add half the shrimp in a single layer. Sear 1.5–2 minutes per side until pink and opaque and internal temp ~125–135°F (carryover to 140°F) depending on size. Remove to a warm plate. Repeat with remaining shrimp, wiping pan if needed and adding remaining 2 tablespoons butter for second batch (6–8 minutes total cooking time).
  4. Return all shrimp to skillet off heat, squeeze lime juice over, add chopped cilantro, toss for 15–20 seconds to coat. Adjust seasoning: add remaining 1 teaspoon salt and 1/2 teaspoon pepper if desired. Transfer to serving platter (1–2 minutes).
  5. Serve immediately; this dish is finish-to-order and should hit the table within a few minutes of serving.

Coconut-Lime Rice

Not low-carb: rice.

Equipment

  • Medium saucepan with tight-fitting lid (2–3 quart)
  • Fine-mesh strainer
  • Measuring cup and spoons
  • Spoon

Ingredients

  • 2 cups long-grain white rice (rinsed)
  • 1 (13.5 oz) can full-fat coconut milk
  • 2 1/3 cups water
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 1 tablespoon unsalted butter⁺
  • Zest of 1 lime (about 1 teaspoon)⁺
  • 1 tablespoon fresh lime juice (about 1/2 lime)⁺
  • 1/4 cup cilantro, chopped, stirred in at finish⁺

Substitutions

  • If coconut milk cans are inconsistent at your store, substitute 1 3/4 cups unsweetened coconut milk beverage + 3/4 cup whole milk.

Cooking / Baking

  • Total cook time: 30 minutes (5 min prep, 20 min simmer, 5 min rest)

Instructions

  1. Rinse rice under cold water in a fine-mesh strainer until water runs mostly clear (1–2 minutes).
  2. In saucepan combine rinsed rice, can of coconut milk, 2 1/3 cups water, sugar and salt. Stir to combine (1 minute).
  3. Bring to a boil over medium-high heat, uncovered (about 4 minutes). When it reaches a steady boil, reduce heat to low, cover tightly, and simmer 18–20 minutes without lifting the lid.
  4. Remove from heat, keep covered and let rest 5 minutes. Fluff with fork, stir in butter, lime zest, lime juice and chopped cilantro. Hold covered until service (2 minutes).

Quick Seasoned Black Beans (Canned)

Not pescatarian: chicken.

Not low-carb: beans.

Ingredients

  • 1 tablespoon olive oil⁺
  • 1 medium yellow onion, finely chopped (about 1 cup)
  • 3 cloves garlic, minced⁺
  • 1 1/2 teaspoons ground cumin⁺
  • 1 bay leaf
  • 1/2 cup low-sodium chicken or vegetable broth (or water)⁺
  • 1 1/2 teaspoons kosher salt⁺
  • 1 tablespoon fresh lime juice (from limes above)⁺
  • 2 tablespoons chopped cilantro, for garnish⁺

Substitutions

  • If low-sodium broth is unavailable, use water and add 1/2 teaspoon more salt.

Cooking / Baking

  • Total cook time: 25 minutes

Instructions

  1. Heat saucepan over medium heat and add 1 tablespoon olive oil. Add chopped onion and sauté 4–5 minutes until soft and translucent.
  2. Add minced garlic and cumin; cook 30 seconds until fragrant.
  3. Add drained beans, bay leaf and 1/2 cup broth. Bring to a gentle simmer, cover partially, and simmer 12–15 minutes, stirring occasionally. Mash about 1 cup of the beans against the pan with the back of a spoon to thicken the sauce slightly.

  • 6 tablespoons vegetable oil (canola or neutral oil)

Substitutions

  • If plantains are very underripe, choose ones with more black spots; underripe plantains will be starchy rather than sweet.

Cooking / Baking

  • Total cook time: 17 minutes (5 min prep, 12 min cook)

  3. Add plantain slices in a single layer (do two batches if needed). Fry 3–4 minutes per side until deep golden and caramelized. Use tongs to flip. Total frying per batch ~8 minutes.
  4. Transfer to paper towels; immediately add butter (if using) and sprinkle 1/2 teaspoon salt over the warm plantains; toss gently to coat. Serve hot — these are best finished near service.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: hot sauce or sliced fresh chiles for adults only; extra lime wedges.
  • Global substitutions: if jicama is unavailable, cucumber works in the salad; if fresh pineapple is unavailable, use one 20 oz can pineapple chunks (drain and use 2 1/2 cups).
  • Child-safety notes: supervise children away from the frying pan (plantains) and the hot skillet used for shrimp; remove any small shrimp shell fragments when peeling/buying whole shrimp.
  • Timeline risk(s): the tightest execution window is the simultaneous finish of shrimp (pan-seared), fried plantains and the salad (all finish-to-order). This requires juggling two hot pans and last-minute salad assembly in the last 10 minutes.
  • Mitigation mindset: have both skillets pre-heated and all ingredients mise en place before 4:20 PM; pre-measure spices and liquids, keep a clean serving area, and use the rice and beans holding time to prepare and stage plating items. If you feel rushed, complete the plantains one batch earlier and reheat briefly (only if necessary).
  • The latest safe start time: You can start as late as 4:20 PM for a 5:00 PM serve.
