  • 300 g ripe tomatoes (2 medium), roughly chopped ⁺
  • 6 cloves garlic (about 24 g), peeled ⁺
  • 25 g fresh ginger (about 1½ tbsp), peeled and chopped ⁺
  • 4 dried red chilies (mild–medium; remove seeds for less heat)
  • 2 tbsp coriander seeds (about 12 g)
  • 1 tsp cumin seeds (about 2 g)
  • ½ tsp black peppercorns (about 1 g)
  • 3 whole cloves
  • 1 small cinnamon stick (3 cm)
  • 1 tsp ground turmeric (3 g)
  • 2 tbsp white vinegar (30 ml) ⁺
  • 400 ml canned coconut milk ⁺
  • 30 ml neutral vegetable oil (2 tbsp) ⁺

Practical substitutions

  • Kokum is traditional for sourness; if unavailable, use the 2 tbsp white vinegar listed. If vinegar unavailable, use 1 tbsp tamarind paste diluted in 2 tbsp water.
  • If you cannot find desiccated coconut, substitute 40 g finely shredded fresh coconut (toasted) or omit and increase coconut milk to 450 ml (taste and adjust salt).

Cooking / Baking

  • Total cook time: 30 minutes (masala/paste + simmer + finish prawns)

Instructions

  1. Prepare spices: heat a dry 20–25 cm skillet over medium heat. Add coriander seeds, cumin seeds, black peppercorns, cloves and cinnamon stick. Toast, shaking the pan, for 1.5–2 minutes until aromatic but not browned. Add the desiccated coconut and toast another 45–60 seconds until golden. Remove to a plate to cool.
  2. Rough-chop onion, tomatoes, garlic and ginger. Place cooled toasted spices + coconut into blender with the chopped onion, tomatoes, garlic, ginger, 4 dried chilies, turmeric, 2 tbsp vinegar and 100 ml water. Blend to a smooth paste (±60 seconds). Pour paste into a bowl; scrape out blender with spatula.
  3. In the 2‑liter saucepan, heat 30 ml oil over medium heat until shimmering. Add the blended paste, reduce heat to medium-low and sauté, stirring frequently, for 6–8 minutes until it thickens and the raw smell is gone and the oil begins to separate slightly around the edges.
  4. Add 400 ml coconut milk, 1.5 tsp salt and 1 tsp sugar. Raise heat to medium and bring to a gentle simmer. Simmer uncovered for 5 minutes to meld flavors (do not boil hard). Adjust salt if needed.
  5. At about 16:55 in the timeline, add the prawns (600 g) to the simmering coconut curry in a single layer. Simmer gently for 4–5 minutes until prawns turn pink and opaque and are just cooked through (internal temp ~60–63 °C if using a probe). Do not overcook.
  6. Turn off heat. Taste; add a tiny splash (½ tsp) of vinegar if you want more bite. Stir in chopped coriander (10 g) and serve immediately into warmed bowls.

Coconut Rice

Equipment

  • 2‑liter saucepan with tight-fitting lid
  • Fine-mesh sieve for washing rice

Ingredients

  • 300 g basmati rice (1.5 cups), rinsed until water runs clear
  • 200 ml canned coconut milk ⁺
  • 340 ml water

Instructions

  1. Rinse 300 g basmati rice in a sieve under cold water until the runoff is nearly clear. Drain for 1 minute.
  2. In a 2‑liter saucepan, combine rinsed rice, 200 ml coconut milk, 340 ml water, 15 ml oil and 1 tsp salt. Stir once to distribute.
  3. Bring to a boil over medium-high heat uncovered. As soon as it reaches a full boil, reduce heat to low, cover and simmer gently for 18 minutes undisturbed.
  4. After 18 minutes, turn off the heat and leave covered for 5 minutes. Fluff gently with a fork and keep covered until serving (rice should finish no earlier than ~16:45; hold covered).

Sautéed Green Beans with Coconut & Mustard

Ingredients

  • 400 g green beans, trimmed and halved crosswise

  • 1 tsp mustard seeds (about 2 g)

3. LINEAR TIMELINE (16:15–17:00)

  • 16:15: Coconut Rice — Rinse 300 g basmati rice in a sieve and combine in a 2‑liter saucepan with 200 ml coconut milk, 340 ml water, 15 ml oil and 1 tsp salt; bring to boil.
  • 16:18: Coconut Rice — Reduce to low, cover and simmer gently for 18 minutes (undisturbed).
