Moules Marinière Sunday Supper

A classic Normandy-inspired supper of steamed mussels brightened with shallot, white wine and parsley, matched with crisp pommes frites and a lightly dressed green salad — straightforward technique, high impact flavors, and one short finishing sprint to the table.

  • Name of the meal: Moules Marinière Sunday Supper
  • Cuisine type: French
  • Serve time: 5:00 PM

This menu is worth sitting down for because it puts a single, fresh ingredient — mussels — through an elegant, speedy French treatment (white wine, shallot, parsley) that elevates a weeknight rhythm into a convivial restaurant-style experience; the pommes frites supply the satisfying crunch that children and adults love, and a simple Dijon vinaigrette salad keeps the plate bright. Execution focuses on perfect timing so the shellfish and fries finish within minutes of service.

  • Moules Marinière
  • Pommes Frites (hand-cut, double-roast)
  • Mixed Green Salad with Dijon-Shallot Vinaigrette
  • Sparkling Apple-Citrus Spritz (kid-friendly drink)
  • Muscadet Sèvre-et-Maine (adult beverage — white wine, 1 bottle)

2. FULLY EXECUTABLE RECIPES

Moules Marinière

Equipment

  • 6-quart lidded heavy pot or Dutch oven (10–12 inch diameter, with tight-fitting lid)
  • 1 medium chef's knife (8 inch)
  • 1 cutting board
  • 1 measuring cup
  • 1 tablespoon measure
  • 1 small bowl
  • 1 wooden spoon
  • Fine-mesh colander or large bowl for rinsing mussels
  • Kitchen towel

Ingredients

  • Fresh live mussels — 3 lb (cleaned; see Instructions) (Meat / Seafood)
  • Unsalted butter — 2 tbsp (1 oz) (Dairy)
  • Dry white wine (Muscadet or Sauvignon Blanc) — 1 cup (8 fl oz) ⁺ (Drinks)
  • Shallot — 1 medium (about 1.5 oz), minced (Produce)
  • Fresh flat-leaf parsley — 2 tbsp chopped (about 1/8 cup) ⁺ (Produce)
  • Bay leaf — 1 whole (Dry Goods / Pantry)
  • Kosher salt — 1/2 tsp ⁺ (Dry Goods / Pantry)
  • Freshly ground black pepper — 1/8 tsp ⁺ (Dry Goods / Pantry)
  • Lemon — 1/2 lemon, cut into two wedges for serving (Produce) ⁺

Practical substitutions:

  • If Muscadet is unavailable, use a dry Sauvignon Blanc or an unoaked Chardonnay. If fresh mussels are not available, do not substitute clams in this recipe without adjusting cook time (clams take longer and require different cleaning).

Cooking / Baking

  • Total cook time (active steaming): 8 minutes.
  • Total recipe time including prep: 18 minutes (does not include mussel cleaning time — see Instructions).

Instructions

  1. (Prep — cleaning) Rinse and clean mussels no earlier than 90 minutes before cooking: place mussels in a colander under cold running water; discard any mussels that are open and do not close when tapped (dead). Remove beards by pulling toward the hinge. Return cleaned mussels to the refrigerator on ice or cold until ready to cook.
  2. (Start) Set the 6-quart pot over medium heat. Add 2 tbsp unsalted butter.
  3. When butter melts and foams (about 30 seconds), add minced shallot and bay leaf and sauté, stirring, for 1 minute — do not brown.
  4. Add 1 cup dry white wine and bring to a brisk simmer over medium-high heat (about 90 seconds).
  5. Add the cleaned mussels to the pot, put the lid on, and steam for 5–7 minutes, shaking the pot once at 2½ minutes to redistribute mussels. Steam until most mussels are open.
  6. Remove pot from heat. Using tongs or a slotted spoon, transfer opened mussels to a warmed serving bowl; leave cooking liquid in pot.
  7. Return pot with cooking liquid to very low heat for 30 seconds; whisk in 1 tbsp of the butter (optional) to gloss the broth, then stir in chopped parsley, 1/2 tsp kosher salt and 1/8 tsp freshly ground black pepper. Taste and adjust only if needed.
  8. Pour the broth over the mussels in the serving bowl. Serve with lemon wedges at the table.

Notes: Discard any mussels that remain firmly closed after cooking.

Pommes Frites (hand-cut, double-roast)

Not low-carb: potatoes.

Equipment

  • 4-quart saucepan or pot (for parboil)
  • 12 x 16 inch rimmed baking sheet (half-sheet) — heavy or lined with parchment
  • Wire rack (optional) to cool potatoes after parboil
  • Chef's knife and cutting board
  • Large bowl for soaking and tossing
  • Kitchen towel
  • Instant-read thermometer (optional)

Ingredients

  • Russet or Yukon Gold potatoes — 1.5 lb (about 3 medium potatoes) (Produce)
  • Vegetable oil (neutral, e.g., canola or sunflower) — 3 tbsp (Dry Goods / Pantry)
  • Kosher salt — 1 tsp (Dry Goods / Pantry) ⁺
  • Freshly ground black pepper — 1/4 tsp (Dry Goods / Pantry) ⁺

Practical substitutions:

  • If you prefer a slightly richer fry, replace 1 tbsp vegetable oil with 1 tbsp light olive oil. For sweet potato fries, increase parboil time by 2–3 minutes and reduce final roast by 2–3 minutes.

Cooking / Baking

  • Parboil: 8 minutes. First roast: 25 minutes at 375°F. Final high-temperature roast: 8–10 minutes at 450°F. Total hands-on cook time ~45 minutes (plus peel/cut 15 minutes).

Instructions

  1. Preheat oven to 375°F.
  2. Peel potatoes. Cut into 1/4 inch thick sticks: halve potato lengthwise, then slice into 1/4 inch planks, then 1/4 inch sticks. Aim for uniform size.
  3. Place cut fries in a large bowl of cold water and swish to remove surface starch. Let sit 8–10 minutes (you may continue other tasks during soak).
  4. Meanwhile, bring 3 quarts of salted water to a boil in the 4-quart saucepan (salt the water with 1 Tbsp kosher salt if you want juicier interior; the recipe's salt totals count elsewhere).
  5. Drain the soaking potatoes and add to the boiling water; parboil 8 minutes — potatoes should be fork-tender but not falling apart.
  6. Drain well in a colander and spread on a clean kitchen towel or wire rack to dry for 6–8 minutes (dryness is key to crisping).
  7. Toss dried potato sticks in a large bowl with 3 tbsp vegetable oil and 1/2 tsp kosher salt and 1/8 tsp pepper. Arrange in a single layer on the rimmed baking sheet; do not overcrowd (use two sheets if needed).
  8. Roast at 375°F for 25 minutes, flipping once halfway (about 12–13 minutes).
  9. At 4:50 PM (see timeline), increase oven temperature to 450°F (keep fries on the sheet). Roast 8–10 minutes at 450°F until bubbling and deeply golden at the edges. Remove, immediately sprinkle with remaining 1/2 tsp kosher salt and remaining black pepper, toss gently and serve hot.

Mixed Green Salad with Dijon-Shallot Vinaigrette

Equipment

  • Small mixing bowl
  • Whisk
  • Salad bowl
  • Measuring spoons

Ingredients

  • Mixed salad greens (mesclun or mixed lettuces) — 4 oz (about 4 cups loosely) (Produce)
  • Fresh flat-leaf parsley — 2 tbsp chopped (to combine total parsley usage, this is part of the parsley entry marked ⁺) (Produce) ⁺
  • Extra-virgin olive oil — 1 tbsp (Dry Goods / Pantry)
  • Fresh lemon — 1/2 lemon, juiced (about 1 tbsp juice) ⁺ (Produce)
  • Dijon mustard — 1 tsp (Dry Goods / Pantry)
  • Shallot — 1 tbsp minced (use remaining from shallot in mussels, total 1 shallot split between components) (Produce)
  • Kosher salt — 1/4 tsp (Dry Goods / Pantry) ⁺
  • Freshly ground black pepper — a pinch (about 1/8 tsp) (Dry Goods / Pantry) ⁺

Practical substitutions:

  • Use white wine vinegar (1 tsp) if you want a more classic vinaigrette instead of lemon.

Cooking / Baking

  • Total time: 6 minutes. Dress salad at the very end (finish-to-order).

Instructions

  1. Whisk together 1 tbsp olive oil, 1 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tbsp minced shallot, 1/4 tsp kosher salt and 1/8 tsp black pepper in a small bowl until emulsified.
  2. Keep vinaigrette at room temperature. Right before serving (within ~2 minutes of plating), place greens in a salad bowl, pour vinaigrette over greens (about half or all, depending on preference), toss gently, and sprinkle with 2 tbsp chopped parsley.

Ingredients (per serving; total for 2 servings listed in shopping)

  • Pure apple juice — 8 fl oz (1 cup) (Drinks)
  • Club soda (chilled) — 3 fl oz (3/8 cup) (Drinks)
  • Fresh lemon — 1 wedge (for squeeze) (Produce) ⁺
  • Ice — enough to fill glass (~6–8 cubes) (Dry Goods / Pantry; optional if household uses fridge ice)

Cooking / Baking

  • Total time: 2 minutes (no cooking).

Instructions

  1. Fill glass with ice. Pour 8 fl oz apple juice over ice, squeeze one lemon wedge into the glass, top with 3 fl oz club soda, stir once and serve cold.

4. CONSOLIDATED SHOPPING LIST

Produce

  • Potatoes (Russet or Yukon Gold) — 1.5 lb
  • Shallot — 1 medium (total used across recipes)
  • Mixed salad greens — 4 oz (about 4 cups loosely)
  • Flat-leaf parsley — 1/4 cup chopped (roughly 1 small bunch) ⁺
  • Lemon — 1 (use 1/2 for salad, remaining for drinks) ⁺

Meat / Seafood

  • Fresh live mussels — 3 lb

Dairy

  • Unsalted butter — 2 tbsp (1 oz)

Dry Goods / Pantry

  • Vegetable oil (neutral, e.g., canola) — 3 tbsp
  • Extra-virgin olive oil — 1 tbsp
  • Dijon mustard — 1 tsp
  • Bay leaf — 1 whole
  • Kosher salt — 4.5 tsp total (all dishes combined) ⁺
  • Freshly ground black pepper — 1/2 tsp total (all dishes combined) ⁺

Drinks

  • Muscadet Sèvre-et-Maine (or similar dry white wine) — 1 bottle (750 ml) ⁺ (used for cooking and drinking)
  • Pure apple juice — 16 fl oz (2 cups) (kid drink)
  • Club soda — 8 fl oz (1 cup) chilled (kid drink)
  • Ice — (house supply or bagged ice if needed)

5. NOTES & ASSUMPTIONS

  • Optional table-side items: coarse (sea) salt and extra lemon wedges. These are optional and not included above.
  • Global substitutions: If Muscadet is unavailable, dry Sauvignon Blanc is the closest substitute for both cooking and pairing. If fresh mussels are unavailable, do not substitute another shellfish without adjusting cooking time.
  • Child-safety notes: Hot oil and oven temperatures are used for the pommes frites; keep children away from the oven and stove during the 4:20–5:00 PM window, and use oven mitts and long utensils when removing hot trays.
  • Timeline risk(s): The tightest execution window is 4:45–5:00 PM when the mussels are steamed and the fries receive their final high-temperature roast simultaneously. Both are finish-to-order and require attention within a 10–15 minute span; mis-timing will leave fries soggy or mussels overcooked.
  • Mitigation mindset: Work the timeline in strict sequence, have all mise en place (potatoes peeled and rinsed, mussels cleaned and chilled, salad greens washed and vinaigrette ready) before 4:20 PM. Use the oven to finish the fries (450°F) so the single cook can manage stove-top steaming of mussels concurrently without deep-frying. Keep a timer visible for the mussels and for the oven.
  • Latest safe start time: You can start as late as 3:40 PM for a 5:00 PM serve.
