  • 4:20 PM: Coconut Rice — Rinse 1 cup rice in sieve until water runs clear; combine rinsed rice, 1 cup unsweetened canned coconut milk, 1 cup water, 1 tbsp butter, 1/2 tsp kosher salt and 1 tsp sugar in 2-qt saucepan; bring to a gentle boil uncovered.
  • 4:22 PM: Coconut Rice — Reduce heat to low, cover, and simmer undisturbed 18 minutes.

  • 4:39 PM: Black Beans — Add 1 minced garlic clove and 1/2 tsp ground cumin; cook 30 seconds. Add drained 15 oz can black beans and 1/4 cup broth; bring to a simmer and cook uncovered 6–8 minutes until warmed and slightly reduced.
